1 1/3 pounds 93% lean ground turkey
1/2 medium yellow onion, finely grated & squeezed of excess moisture
2 cloves garlic, finely chopped or grated
2 tablespoons mayonnaise (see Recipe Notes)
2 teaspoons Worcestershire sauce
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
oil, for the grill grates
for serving, as desired: burger buns, cheese of choice, toppings of choice (e.g. lettuce, tomatoes, thinly sliced onion, pickles, etc.), condiments of choice (e.g. mustard, ketchup, et.c)

Steps:

  • or large plate with parchment paper, wax paper, or aluminum foil. Set aside.
  • Arrange a few paper towels out on a cutting board, set a box mixer on top. Run the onion along the sides of the box mixer to grate it into fine, shredded pieces. Once grated, use the paper towel to soak up excess moisture from the onion. Too much moisture will make the turkey burger mixture very difficult to handle, so do not skip the extra 30 seconds it takes to blot the moisture from the grated onion. If your onion seems very wet, you can also wrap it in paper towels & wring out the moisture over the sink.
  • Add the ground turkey, grated onion, garlic, mayonnaise, Worcestershire sauce, kosher salt & ground black pepper to a large bowl. Using your hands, mix until just combined. Overworking the turkey burger mixture will lead to tough burgers; take care not to overmix.
  • Divide the turkey burger mixture into 4 even portions, about 1/3 pound (5.3 ounces) each. Lightly coat your hands in oil (or mist with nonstick cooking spray) & form each portion into a 1-inch thick patty. The mixture will be very wet at this point, so there's no need to fuss over making your burgers look perfect - just aim for forming them into the general shape & size you're after. Set them on the prepared baking sheet.
  • the turkey burgers: Transfer the baking sheet with the turkey burger patties to the freezer. Chill for at least 20 minutes.
  • Meanwhile, as the turkey burgers chill, preheat the grill for medium-high direct heat grilling, about 450 degrees F. Just before placing the burgers on the grill, generously oil a wad of paper towel. Use grilling tongs to run the oiled paper towel over the grill grates, generously oiling the grates.
  • Remove the turkey burgers from the freezer. At this point they should be quite a bit easier to handle; finish forming them into 1-inch thick patties, using your thumb to create an indent in the center of each patty. Firmly press each turkey burger patty down onto the prepared grill grates. Grill the turkey burgers for 6 minutes per side, or until a thermometer inserted in the center of the turkey burgers registers 160 degrees F. 1 tablespoon Worcestershire sauce

  • In a mixing bowl, gently knead together turkey, olive oil, Worcestershire sauce, salt, and pepper. Don't overwork the meat.
  • Form into patties about 1/4 to 1/2 inch thick. Press your thumb down on the middle to give it a slight indent.

The addition of shredded carrots is the secret ingredient to the most juicy moist turkey burgers so please don't omit them! these are delicious done on the grill I make these quite often and my family loves them and they are low fat too --- they may be broiled or pan-fried but they are much better if prepared on the grill or even an indoor grill would be great! This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time.

1 1/2 tablespoons fresh lemongrass, chopped up
2 garlic cloves
1 tablespoon fresh ginger, chopped
1/3 cup green onion, roughly chopped
1/2 cup fresh cilantro, roughly chopped
1/2 teaspoon red chili pepper flakes
1 lime, zest of, only
2 tablespoons water
1 lb lean ground turkey
1 egg white

Steps:

  • Put the lemongrass, garlic, ginger, green onions, cilantro, chili flakes and lime zest into a food processor or chopper along with the water and blitz them until they are finely chopped and combined.
  • Add the mixture to the turkey and also put in the egg white.
  • Mix the turkey and the other ingredients together by hand until they are well combined.
  • Put into the fridge to chill for about 30 minutes for them to firm up a bit.
  • Take out of the fridge and shape into four equal sized burger patties.
  • Then either fry them off in a pan as you would normally do or do as I do and brush them very lightly with a bit of extra virgin olive oil and cook them on a Foreman type grill. It takes about 8 minutes or so for them to be fully cooked.
  • Serve.

Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

Neutral oil (such as canola), for greasing
1 medium yellow onion, peeled
1 pound ground turkey
1/4 cup store-bought or homemade barbecue sauce
2 tablespoons mayonnaise
Kosher salt (such as Diamond Crystal)
Black pepper
4 hamburger buns
Toppings (such as shredded iceberg, sliced onion, tomato and pickles) and condiments (mayonnaise, barbecue sauce or mustard), as desired

Steps:

  • Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
  • Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
  • When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
  • Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
  • Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.

I changed the recipe to make these delicious burgers for more people. I caramelized the onions to give it more depth of flavor. I also added Dijon mustard and real garlic instead of garlic powder. I also cut down on the amount of bread crumbs and made them out of whole wheat to make them a little healthier. I also omitted the soy sauce for the same reason. They came out great. The only thing I would do different next time is to give them just a little heat. Enjoy.

We all have our different tastes for burgers I like mine flavorful and juicy this recipe will give you the best of both! see the bottom of the recipe for tips on even more extra juicy burgers! --- making a indentation in the middle of the uncooked burger will prevent the burgers from puffing up into meatballs shapes while cooking and keeps them flat --- do not add any salt into the burger mixture as the dry onion soup already has a lot of salt content, you can sprinkle some on towards the end of cooking if needed, if desired you may add in 3-4 tablespoons of your favorite barbecue sauce to the ground beef mixture

Love these. Very high in protein, low in fat. This was originally a hamburger recipe but I changed it a bit to work for turkey breast. The onions make these burgers awesome so be sure and include them. These arn't really for grilling more for baking because they don't hold together well. Does work alright if they are frozen first.

2 large onions
1 (1 ounce) package ranch dressing mix
1 tablespoon pepper
2 tablespoons butter
4 egg whites

Steps:

  • Slice up onions and satuee them in butter until dark and carmalized.
  • Set aside and allow to cool for 3 minutes.
  • While onions are cooler remove turkey from wrapping and put in a large bowl.
  • Add either 2 whole eggs or 4 egg whites. Add ranch powder. Add Pepper.
  • Mix and then add in onions when cool and mix again.
  • Will be gooey, cook on foil then freeze or freeze them raw and cook later.
  • I cook these on foil at 425 in the oven until brown. Maybe 10 minutes or so max in a convection oven.

Here you will find easy step-by-step instructions that will result in the best juiciest turkey you will ever have! cooking the turkey breast-side down will create a tender juicy turkey without brining or using other methods --- if you are stuffing the turkey you will need approximately 8 cups of prepared stuffing for an 18-pound turkey --- the cooking time for this recipe is for an 18-pound stuffed turkey cooked at 325 degrees F but you have the option of stuffing or not --- my best advise for a beginner is to use a meat thermometer inserted in the breast area, this way you will be assured that your turkey is cooked to the proper temperature, you can cover the uncooked stuffed turkey with plastic wrap and refrigerate overnight and just pop it in the oven the following mid-morning or whenever you are ready to cook the turkey --- make certain that you have lots of chicken broth handy for this recipe as you will most likely need to keep adding more into the pan while cooking --- see cooking times on the bottom for whole turkeys --- see my recipe#145064

1 (18 lb) whole turkey
1/3 cup melted butter, cooled (can use margarine)
1/3 cup vegetable oil
1 tablespoon white salt (or use as much salt as desired)
fresh ground black pepper (lots of pepper!)
2 quarts chicken stock (might use less)
8 cups favorite prepared stuffing (optional)

Steps:

  • Set oven to 325 degrees F, convection oven heat set to 320 degrees F.
  • Set oven rack to lowest position.
  • Remove the giblets and neck from the cavity.
  • Rinse the turkey well with cold water inside and out then pat dry with a paper towel.
  • Place the turkey on a rack on a roasting pan.
  • In a small bowl mix together the melted butter with oil (I also like to add in 1 teaspoon garlic powder with the oil/butter mixture if you are a garlic-lover then use it).
  • Fill the inside cavity loosley with prepared stuffing (if you are not using stuffing then tie the legs together with cotton butchers twine).
  • Using clean hands rub the outside of the turkey with the oil/butter/garlic mixture.
  • Season the turkey all over with salt and lots fresh ground black pepper.
  • If you are NOT stuffing the bird place breast-side down on the rack, if stuffing leave breast-side up.
  • Place/tent a large piece of heavy foil over the turkey.
  • Place the pan in the oven, then pour about 4-5 cups chicken broth in the pan.
  • Keep basting the turkey about every 30-40 minutes with the pan juices on the bottom of the pan (removing the foil and re-tenting every time you baste).
  • If you see the juices starting to evaporate then add in more broth to the pan about 2 cups at a time.
  • After about 2-1/2 hours of cooking time remove the foil.
  • Keep roasting (325 degrees F) until the internal thermometer reads 180 degrees F (80 degrees C).
