4 tablespoons extra-virgin olive oil
1 large yellow onion, small dice
Kosher salt
5 cloves garlic, peeled and thinly sliced into rounds
1 tablespoon sugar
1 teaspoon crushed red pepper flakes
2 medium carrots, peeled and coarsely grated
One 28-ounce can whole peeled tomatoes
Leaves of 1 large basil sprig
12 ounces bucatini
2 cups panko, toasted
1 teaspoon garlic powder
3 large eggs
2 boneless, skinless chicken breasts (about 1 pound total)
Kosher salt
Canola oil, for frying
2 tablespoons unsalted butter
8 ounces firm whole-milk mozzarella, sliced 1/4 inch thick
Leaves of 1 large basil sprig
1 small wedge Parmesan, freshly grated (about 1 1/2 cups), plus more for serving

Steps:

  • For the sauce: Heat 2 tablespoons olive oil in a medium skillet over medium heat. Add the onion and a pinch of salt and cook for a few minutes until the onions are softened slightly but not brown. Stir in the garlic, sugar and red pepper flakes. (If the onions begin to brown, add a splash of water.)
  • Stir in the grated carrots and the remaining 2 tablespoons olive oil and continue to cook until the carrots soften, about 2 minutes. Add the canned tomatoes and use a wooden spoon to break up some of the whole tomatoes. Cook over medium heat, stirring from time to time, until the tomatoes are fairly broken down and the sauce has thickened, at least 30 minutes. Season to taste and add water as necessary. Stir in the basil leaves. Keep the sauce warm.
  • For the chicken: Lay a piece of chicken between two pieces of plastic wrap and use the smooth side of a meat mallet to pound into a 1/4-inch-thick cutlet. Repeat with remaining cutlet then slice both pieces in half.
  • Line a baking sheet with paper towels and set aside. Combine the breadcrumbs and garlic powder in a shallow dish. Crack the eggs in a second shallow dish and whisk to blend. Sprinkle the chicken pieces on both sides with salt and dip each thoroughly in the eggs; transfer to the breadcrumbs to thoroughly coat. Place the chicken on the paper towels.
  • For the pasta: Bring a large pot of water to a rolling boil. Add a generous amount of salt. (The pasta water should taste like seawater.) Add the pasta to the pot and stir so it doesn't stick. Cook the pasta according to the package directions until al dente (chewy but not hard or raw tasting). Drain well and set aside.
  • To finish the chicken: Fill a medium cast-iron skillet with about 1/3 to 1/2 cup canola oil (to come about 1/4 of the way up the sides) and heat over medium until the oil is just barely starting to smoke. Sprinkle the top of each cutlet with salt and gently place in the oil, salted-side down. Add the butter to the pan and as it begins to foam, shake the pan gently. Cook on the first side until golden brown, 3 to 4 minutes. Gently flip to the second side, sprinkle with salt and carefully spoon some of the hot oil mixture on top. Cook until golden brown and cooked through, an additional 2 to 3 minutes, then remove from the pan with a slotted spatula to clean paper towels to drain slightly.
  • Preheat the broiler with the rack in the highest position. Divide the sauce between 2 medium bowls, one for the pasta and one for the chicken Parmesan.
  • To assemble the chicken Parmesan, add some tomato sauce to a small cast-iron skillet or baking dish. Layer with a couple mozzarella slices and the basil. Put one of the fried chicken cutlets on top of the basil, followed by another spoonful of sauce, then a second layer of mozzarella. Place the second chicken cutlet next, followed by a third layer of sauce, more mozzarella and a large sprinkle of Parmesan. Repeat with the remaining pieces of chicken and other ingredients in a second small cast-iron skillet. Place the skillets on a sheet tray and broil until the cheese is melted and slightly browned, 4 to 5 minutes. Top with more freshly grated Parmesan.
  • Toss the pasta and sauce together in a large bowl and taste for seasoning. Top with grated Parmesan. Serve with the skillets of chicken parm.

3 tablespoons oil
6 boneless skinless chicken breasts
salt & freshly ground black pepper
1 (24 ounce) jar prepared marinara sauce
6 tablespoons fresh grated parmesan cheese, divided
1 1/2 cups shredded mozzarella cheese

Steps:

  • Season the chicken with salt and pepper.
  • Heat oil in a 12-inch skillet over medium-high heat.
  • Add in the chicken and brown well on both sides (about 10-12 minutes).

4 boneless skinless chicken breast halves
salt and pepper
1/2 cup flour
1/2 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese
1 egg
1/2 cup milk
1 tablespoon butter
2 tablespoons olive oil
more parmesan cheese, for sprinkling on top
4 ounces sliced mozzarella cheese (if you can get it, the soft fresh kind is best, it melts sooooo creamy)
your favorite marinara sauce or store bought spaghetti sauce

Steps:

  • Pound the chicken breasts between two slices of plastic wrap until about 1/4" thick.
  • Season with salt and pepper.
  • Dredge chicken in flour and shake off excess.
  • Dip in egg/milk mixture, then in breadcrumb/Parmesan mixture.
  • Heat the butter and olive oil in a large deep skillet.
  • Brown the chicken breasts over medium heat until golden on each side (about 2-3 min per side).
  • Remove to a plate and keep warm.
  • Add the marinara sauce to the skillet.
  • Heat to boiling and simmer 10 minutes.
  • Add the chicken breasts to the sauce and sprinkle Parmesan over them.
  • Place a slice of mozzarella on each piece of chicken.

There are plenty versions of this recipe, this is mine and can be on your table in less that an hour, my family loves this chicken! --- the ranch dressing is the secret it holds in all the flavor and moistness while the chicken is baking and also adds flavor, I find that Hidden Valley Ranch dressing works the best but Kraft or any other brand will do, I sometimes top the baked chicken with mozzarella cheese or cheddar, but that is optional --- although I have only made this using breasts I imagine that chicken pieces could be used although you would have to increase the breadcrumb mixture slightly, you can marinate the chicken breast in the ranch dressing for a few hours in the fridge, although you will need more than 1 cup of dressing if you are marinating .... *NOTE* to avoid a soggy bottom crust, place the chicken breasts onto a flat rack on top the baking sheet, also it is important not to bake the chicken in a small baking pan, if you do not have a rack bake on a large baking sheet so any juices in the pan will spread out and not accumulate under the chicken causing a soggy bottom --------------- FOR LOW-FAT OPTION: use low-fat Ranch dressing and omit the melted butter on top or use a healthy butter alternative such as Smart Balance 50/50 blend.

1 cup dry breadcrumbs (even better, use panko breadcrumbs)
1/4-1/3 cup parmesan cheese
1 teaspoon seasoning salt
1/2-1 teaspoon ground black pepper
1/2-1 teaspoon garlic powder
1 cup prepared ranch salad dressing (use bottled salad dressing, you might need a bit more dressing)
1/4 cup melted butter (no substitutes)

Steps:

  • Set oven to 400° degrees (set oven rack to lowest position).
  • In a shallow bowl mix together the dry breadcrumbs with Parmesan cheese, seasoned salt, black pepper and garlic powder.

If you are in a hurry and want a great marinade for chicken this is it! marinade for about 6-8 hours, no longer than 8 hours as the vinegar will start to "cook" the chicken.... I find that Kraft Italian is the best for this and by the sounds of it this marinade works on beef too so you might want to give that a try!

1 (475 ml) bottle kraft Italian salad dressing (not low-fat)
1 tablespoon Dijon mustard (optional but good to add in I always do)
1/4 cup vegetable oil or 1/4 cup olive oil
3 tablespoons fresh minced garlic (or to taste, the more the better I say!)
1/2 teaspoon black pepper

Steps:

  • In a large bowl mix all ingredients together until well blended.

This is a basic simple marinara but big on flavor, it can be ready in 1 hour or you can cook it longer and even tastes better the next day that is why I strongly suggest to make this sauce 1-3 days ahead and refrigerate as the flavors will blend and intensify ---this freezes well so make a double recipe and freeze a batch for the next meal, you may omit the wine but I strongly suggest to add it in, it really adds flavor to the sauce --- please make certain to purchase only good-quality canned Italian Roma (plum) tomatoes for this it will make a huge difference to the flavor of the sauce --- all ingredients may be adjusted to suit taste, this sauce can also be simmered for a longer time in a crockpot, throw in some fresh mushrooms also if desired --- also see my recipe#71273

3 -4 tablespoons olive oil (I use enough oil to lightly coat the bottom of my pot)
1 large onion, chopped
4 -6 garlic cloves, minced (or to taste, the more the better I use 6 extra large cloves)
1 tablespoon dried basil (rubbed between fingers to release flavor)
2 teaspoons dried oregano (rubbed between fingers to release flavor)
1/2 teaspoon crushed red pepper flakes (optional or adjust to taste)
1 (6 ounce) can tomato paste (can use two cans for a thicker richer sauce if desired)
1 (28 ounce) can whole roma tomatoes, undrained (break up with a fork before cooking, go ahead and use two cans if desired!)
1/3-1/2 cup dry red wine (you may omit if desired but good to add in, can use white wine)
2 teaspoons sugar (optional or to taste)
1 teaspoon salt (or to taste, a good tomato sauce needs lots so don't be shy with the salt)
fresh ground black pepper (to taste)

Steps:

  • In a heavy-bottomed stockpot or Dutch oven heat oil over medium-high heat.
  • Add in onions, garlic and dried red pepper flakes, basil and oregano; saute for about 3-4 minutes.
  • Add in the tomato paste and stir for 2-3 minutes.
  • Add in the Roma tomatoes with juice and wine; simmer uncovered over low heat for 1-2 hours (I usually cook it for at least a couple of hours) stirring occasionally.
  • Season with salt and pepper and add in sugar if desired.

2 1/2 cups low-fat marinara sauce (or meatless pasta sauce, can use a little more)
1/3 cup flour
1 large egg (might use two)
1 cup dry breadcrumbs
1/4-1/3 cup grated parmesan cheese
1 teaspoon garlic powder
2 teaspoons dried parsley
3/4 teaspoon dried Italian seasoning (rubbed between fingers to release the flavors)
1/4-1/2 teaspoon seasoning salt or 1/4-1/2 teaspoon white salt

1/4-1/3 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees F (oven rack set to lowest position).
  • Spray a 13 x 9-inch baking pan with non-stick cooking spray.
  • Place the breasts between two sheets of waxed paper, then using a mallet pound until almost half the thickness (do not pound to very thin).
  • In a shallow dish combine dry breadcrumbs with 1/2 cup grated parmesan cheese, garlic powder, parsley, Italian seasoning, seasoned salt and black pepper.
  • Place the flour in another shallow bowl or on a plate.
  • Place the egg in a bowl and lighty beat (you should have 3 separate bowls).
  • Firstly dredge the chicken in the flour, then dip into egg, lastly coat in the breadcrumb mixture pressing down with hands to adhear the mixture firmly to the chicken.
  • Spray a non-stick skillet with vegetable spray or lightly brush with a little olive oil.
  • Add in the breasts one or two at a time and lightly brown on both sides (about 3 minutes per side, do not cook through completely) transfer to prepared baking dish.
  • Drizzle the marinara sauce over the top and around each breast (there should be some sauce between each piece of chicken).
  • If you are using the mozzarella cheese sprinkle over the top and around all the chicken.
  • Top with about 1/4 to 1/3 cup Parmesan cheese.
  • Bake uncovered for about 25 minutes or until chicken is cooked through (cooking time should take no more than 30 minutes or the chicken will be dry).
  • TO SERVE; slide a wide spatula underneath the breast/s along with some sauce and cheese that is left in the baking dish.
