KITTENCAL'S SALMON CAKES/PATTIES
Plan ahead the salmon mixture needs to be chilled for 2 hours before shaping, this also work using cooked leftover fresh salmon --- for the very best flavor do not use all pink salmon use all red or half red and pink --- I have this yielding for 12 patties that amount is only a guideline it wil depend on the size you make the patties you may make them any size desired, if you have a large family to feed using one more can of salmon won't hurt --- these are just as delicious eaten cold in fact my family prefers them cold :)

SAUTEED SHRIMP WITH LEMON AND GARLIC
My favorite way to saute fresh shrimp. This is so quick and simple. Serve over rice or angel hair pasta (I usually saute a little more garlic in olive oil and toss it with the pasta before topping with the shrimp). Yum!

I made this often for my get togethers it is much fresher tasting than the store-bought, this needs to chill for a minumum of 4 hours, overnight is even better, I like to add in just a little fresh minced garlic to boost up the flavor, you may also add in some horseradish too --- all ingredients may be doubled :)

Tips:
- Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw them in the refrigerator overnight or under cold running water for 30 minutes.
- Clean the shrimp properly: Remove the heads, shells, and devein the shrimp. This will help to remove any grit or sand from the shrimp.
- Use a large skillet: This will help to prevent the shrimp from overcrowding and becoming tough.
- Cook the shrimp in batches: If you're cooking a large amount of shrimp, cook them in batches so that they don't overcrowd the skillet.
- Don't overcook the shrimp: Shrimp cook quickly, so it's important to not overcook them. Overcooked shrimp will become tough and rubbery.
- Season the shrimp well: Use a variety of seasonings to flavor the shrimp, such as salt, pepper, garlic powder, and lemon pepper.
- Serve the shrimp immediately: Shrimp are best served immediately after they're cooked. You can serve them over rice, pasta, or salad.
