The soy sauce has a slightly dominent flavor to this glaze so if you are not a lover of soy sauce then pass this by, or you may use 1/2 cup soy sauce and 1/4 cup water --- depending on how sweet you want this sauce you may adjust the honey or brown sugar to suit taste, start with stated amounts and add in more if desired ---you may also adjust the chili flakes to suit heat level, if you are in a hurry you could omit browning the chicken firstly --- serve with cooked rice.

1 (3 -3 1/2 lb) whole chickens, cut into pieces
black pepper (optional)
3 -4 tablespoons vegetable oil
1 medium onion, chopped
4 -6 garlic cloves, chopped
1/4-1/2 teaspoon crushed red pepper flakes (or adjust to suit heat level)
3/4 cup low sodium soy sauce (use only low-sodium)
2 tablespoons cornstarch (for an extra thick glaze add in 1 teaspoon more)
1 teaspoon ginger powder
1/2-1 teaspoon sesame oil (optional)
1/2 cup honey
1/2 cup light brown sugar, packed
1/4 cup ketchup
1/4 cup Heinz Chili Sauce

Steps:

  • Set oven to 400 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Using your hands gently squeeze out as much excess water from the chicken pieces as possible, then dry using a paper towel/s.
  • For glaze; in a bowl whisk the soy sauce with cornstarch, ginger and sesame oil (if using) until smooth. then add in honey, brown sugar, ketchup and chili sauce; whisk/mix until combined (taste the sauce if you prefer a slightly sweeter taste then add in more honey or brown sugar).
  • In a small saucepan heat oil over medium-high heat.
  • Add in onion and saute for about 3 minutes or until slightly softened, then add in the chopped garlic and chili flakes and cook for about 2 minutes.
  • Add in the soy sauce mixture; bring to a simmer mixing constantly, cook until bubbly and thickened (the mixture will be fairly thick) set aside.
  • Heat a small amount oil in a skillet over medium-high heat (you may lightly season the chicken with black pepper before browning if desired but do NOT salt).
  • Add in chicken and brown on both sides; remove to prepared baking dish.

5 tablespoons honey
⅓ cup soy sauce (such as Silver Swan®)
¼ cup Asian (toasted) sesame oil
3 tablespoons Asian chili garlic sauce
3 tablespoons minced garlic

8 skinless, boneless chicken thighs
1 tablespoon chopped green onion

Steps:

  • Whisk the vinegar, honey, soy sauce, toasted sesame oil, chili garlic sauce, garlic, and salt in a bowl until smooth. Pour half the marinade into a large plastic zipper bag; retain the other half of the sauce. Place the chicken thighs into the bag containing marinade, squeeze all the air out of the bag, and seal. Shake a few times to coat chicken; refrigerate for 1 hour, turning bag once or twice.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Pour the other half of the marinade into a saucepan over medium heat, bring to a boil, and cook for 3 to 5 minutes, stirring often, to thicken sauce. I developed this coating recipe years ago, it makes the most wonderful crispy moist oven-baked chicken you will ever have, I always serve this chicken with recipe #145064 on the side to drizzle over the chicken *SO* good! Make certain to purchase and use only the already crushed boxed cornflake crumbs for this, and use only Shake and Bake Southern Fried flavor, I have tried many other flavors and brands and they are just not as good! The chicken will cook even more after you remove it from the oven and let it sit, so I like to bake mine for only about 40 minutes, and leave it on top of the stove until ready to serve, I find that it is even moister this way!

3/4 cup chicken coating mix (use only Shake and Bake Southern Fried coating mix , 3/4 cup is exactly one package of mix)
1 1/2 cups corn flake crumbs (the ready-made boxed kind)
2 teaspoons seasoning salt (use only seasoning salt)
2 tablespoons garlic powder (use or less if desired)
1 tablespoon onion powder
1 1/2 teaspoons fresh ground black pepper
2 whole chickens, cut into pieces (about 3 1/2 pounds each)

Steps:

  • Wash chicken pieces in cold water (leave the chicken moist so the coating will hold on to it) set aside.
  • In the plastic mixing bag that comes with the coating mix, combine all ingredients (except the chicken pieces) and shake bag to combine thoroughly.
  • Set oven to 425°F.
  • Set oven rack to lowest-bottom position.
  • Line a large 15-inch baking sheet with foil, and spray with non-stick cooking spray.
  • Shake each piece of chicken in the bag to coat thoroughly with mixture and place on the baking sheet.

For ease I have listed bagged lettuce, all ingredient amounts may be adjusted, this recipe will yield four if you are serving more then double amounts, once the chicken is cooked and the dressing is made this takes little time to put together, I strongly suggest to use my dressing from recipe#116849 --- prep time does not include grilling the chicken ----your family and/or guests will be licking their plate clean!

4 uncooked boneless skinless chicken breasts
1.5 (10 ounce) bags chopped romaine lettuce
1/2 cup freshly grated parmesan cheese
1 cup halved red seedless grapes
4 green onions, chopped (optional)
1 cup garlic-flavored croutons
1/2 cup caesar salad dressing (see my Kittencal's Famous Caesar Salad)
fresh ground black pepper (optional)

Steps:

  • Season the chicken breasts as desired (I use a little seasoned salt and garlic powder) grill until thoroughly cooked (about 12-15 minutes) remove from heat and cool for 10 minutes.
  • Slice the breasts into about 1/2-inch slices.
  • In a large bowl toss the lettuce with Parmesan cheese, red grape halves, onions and croutons.
  • Add in the Caesar dressing and toss to coat (you may use more dressing to taste).
  • Season with fresh ground black pepper if desired.

KITTENCAL'S CHICKEN CRESCENT ROLL CASSEROLE

This will also work great with turkey; if you do not have chicken breasts, then use any leftover cooked chicken. If desired you can fill the crescents just with the filling mixture and omit the soup, just brush with butter before baking. They are wonderful just stuffed with the filling! A few members have experienced a soggy bottom, so you might want to consider just drizzling half (or even a little less) of the soup mixture on top and a little around the sides of the crescents, then save the rest of the soup mixture for another time (this will help prevent a soggy bottom). You may use the jumbo crescent rolls and stuff with more chicken mixture :)

1 (10 3/4 ounce) can cream of chicken soup, undiluted
3/4 cup grated cheddar cheese (or any cheese of choice) or 3/4 cup swiss cheese (or any cheese of choice)
1/2 cup 18% table cream (or use whipping cream)
4 ounces cream cheese (very soft)
4 tablespoons butter (very soft but not melted)
1/2-1 teaspoon garlic powder (optional)
1/3 cup onion, finely chopped (can use green onions)
2 large cooked chicken breasts, finely chopped (or use about 2 cups, can use cooked turkey)
1/2-3/4 cup finely grated cheddar cheese
1/2 teaspoon seasoning salt (or use 1/2 teaspoon white salt or to taste)
1/2 teaspoon ground black pepper (or to taste)
2 -4 tablespoons mayonnaise or 2 -4 tablespoons whipping cream
1 -2 cup grated cheddar cheese (for topping)

Steps:

  • Set oven to 350°F.
  • Butter a casserole dish (any size to hold crescent rolls).
  • In a saucepan, mix half and half cream, 3/4 cup grated cheese (can use more cheese if desired) and undiluted chicken soup (can season with black pepper if desired).
  • Heat just until the cheese melts (do not boil).
  • For the filling --- (make certain that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder (if using).
  • Add in the chopped chicken, onion and cheddar cheese; mix well until combined.
  • Add in 2 tablespoons whipping cream or mayonnaise; mix to combine (add in a little more if the mixture seems too dry).
  • Season with seasoned salt or white and black pepper to taste.

  • Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end.
  • Drizzle a small amount of soup mixture on the bottom of the dish.
  • Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.
  • Drizzle the remaining sauce on top (you don't have to use the full amount of cream sauce, just use as much as desired) and sprinkle with 1 cup (or more) grated cheese, or amount desired.

Really this is such an easy recipe I wasn't going to even bother posting it, I have been making this for years and when you can't barbecue outside this is the next best thing! --- Sweet Baby Ray's BBQ sauce works really well or use your own favorite, I most always use my recipe#232433 and prepare the sauce a day ahead --- I did not list the amounts for the seasoned salt and garlic powder as I never measure but probably use about 2 teaspoons each for all the chicken pieces, I usually use about 2 cups sauce but a little more or less is fine -- boneless, skinless chicken breasts work well also but cooking time will need to be reduced, you will *love* this!

Steps:

  • Set oven to 350 degrees F (set oven rack to bottom position).
  • Grease a jelly-roll pan (it is best to cook the chicken on a rack that fits in the jelly-roll pan, if you do not have a rack then just sit the chicken in the pan).
  • Pat chicken dry using paper towels, then place skin-side down on the jelly-roll pan.

This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken!   • Preheat oven to 350°F.

This is wonderful either scooped on a bed of lettuce, stuffed in between a pita or slices of whole wheat bread --- plan ahead the mixture needs to chill for 4 hours before serving, don't even bother tasting before that time, the grapes or chopped apple must be added in just before serving --- *note* see bottom of recipe for poaching chicken breasts, I also sometimes like to add in 1/2 teaspoon curry powder, but that is only optional, recipe may be doubled :)

3 large chicken breasts, cooked and finely chopped (or use 4 small breasts preferably poached)
1 stalk celery, finely diced
2 green onions, chopped
3/4-1 cup dried cranberries (you may chop in half or leave whole) or 3/4-1 cup raisins (you may chop in half or leave whole)
1/2 cup red seedless grapes, halved (measure 1/2 cup halved or use 1 small apple, chopped)
