1/2 cup/90g shortening, well chilled
2 TB/30g butter or margarine, well chilled
5 -6 TB cold water

Steps:

  • Put flour and salt into bowl. Attach bowl and flat beater. Turn to Stir Speed and mix about 15 seconds. Cut shortening and butter into pieces and add. Turn to Stir Speed and and mix 30 to 45 seconds, until particles are size of small peas. Continuing on Stir Speed, add water, a tablespoon at a time, until all particles are moistened and dough begins to hold together. Divide dough in half. Pat into smooth balls, flatten slightly and wrap in plastic wrap. Chill in refrigerator 15 minutes. Roll to 1/8 inch thickness between waxed paper. Fold pastry into quarters; ease into plate and unfold, pressing firmly against bottom and sides. Trim and crimp edges. Fill and bake as desired. Cool completely before filling.

Tips:

  • Use a food processor or pastry blender to cut the butter into the flour. This will create a more even distribution of butter and help to prevent the pastry from becoming tough.
  • Work quickly and keep the ingredients cold. This will help to prevent the butter from melting and the pastry from becoming greasy.
  • Chill the pastry dough for at least 30 minutes before rolling it out. This will help to make the pastry more pliable and easier to work with.
  • When rolling out the pastry dough, use a light touch and avoid overworking it. Overworking the dough can make it tough.
  • Use a fork to prick the bottom of the pie crust before baking. This will help to prevent the crust from bubbling up.
  • Bake the pie crust at a high temperature for the first 10-15 minutes. This will help to set the crust and prevent it from becoming soggy.
  • Let the pie crust cool completely before filling it. This will help to prevent the filling from making the crust soggy.
