This is a recipe I adapted from Penzey's. The original recipe also included chopped celery, bell pepper, green olives and black olives, but my family won't touch any of that, so I leave it out.

1/4 cup mayonnaise
1 tsp mustard powder
1/2 tsp whole celery seed
1-2 tsp salt (to taste)
1/2-1 tsp freshly ground pepper
1 tbsp minced dill pickle
1/2 cup minced red onion
4 green onions, sliced
3/4 cup chopped celery
1 cup chopped bell pepper (red, green or both)
2 hard-boiled eggs, chopped
1/3 cup chopped pimento-stuffed green olives
1/3 cup chopped black olives
1/2 cup pickle relish
4 slices bacon, cooked and crumbled

Steps:

  • Bring the chicken broth to a boil in a large pot. Add the potatoes and cook until just done, about 10 minutes. Drain and place in a large bowl. Tips:

  • Boil Potatoes Properly: Ensure potatoes are fully cooked before making the salad. Use a large pot with enough water to cover the potatoes and add a pinch of salt to enhance the flavor.
  • Choose Colorful Veggies: Opt for a variety of colorful veggies to add vibrancy and texture to your salad. Consider bell peppers, carrots, celery, radishes, and cucumbers.
  • Use Different Herbs: Experiment with fresh herbs like parsley, dill, chives, or basil to add a burst of flavor and aroma.
  • Quality Mayo Matters: Use a good-quality mayonnaise for a creamy and flavorful dressing. Homemade mayonnaise is a great option, but store-bought works well too.
  • Season Generously: Don't be shy with seasonings! Add salt and pepper to taste, and consider additional spices like garlic powder, onion powder, or paprika.
  • Chill Before Serving: Allow the salad to chill in the fridge for at least 30 minutes before serving. This helps meld the flavors and makes the salad more refreshing.
