2 lbs ground beef (85% or 90% lean)
1 med onion (finely chopped)
2 large eggs
3 garlic cloves (minced)
3 Tbsp ketchup
3 Tbsp fresh parsley (finely chopped)
3/4 cup Panko breadcrumbs
1/3 cup milk
1 ½ tsp salt (or to taste)
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika
3/4 cup ketchup
1 ½ tsp white vinegar
2 ½ Tbsp brown sugar
1 tsp garlic powder
½ tsp onion powder
¼ tsp ground black pepper
¼ tsp salt

Steps:

  • Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
  • In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
  • Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
  • In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

The turned-out-super-tasty "wing-it" meatloaf recipe! My 15 year old LOVED this, and I couldn't stop eating it either! It was very quick to assemble, using the food processor to slice, chop, grate, and crush. With the green pepper, pepper jack cheese and tortillas it seemed like it might come out a bit spicey, but it had a touch of sweetness that was delicious.

1/2 onion
1/2 green pepper
2 tablespoons butter
4 ounces monterey jack pepper cheese
2 cups scoops tortilla chips
1 1/2 lbs ground beef
2 eggs
2 teaspoons salt
1/2 teaspoon pepper
1/4 cup ketchup
1/8 cup barbecue sauce

Steps:

  • Set oven to 350°F.
  • Chop onion and green pepper, by hand or in food processor (slice).
  • Heat frying pan on medium, melt butter and add chopped the vegetables. Cook until translucent.
  • Grate the pepper jack cheese and set aside.

1 tablespoon butter
1 medium onion, minced (about 1 cup)
1 medium celery rib, minced (About 1/2 cup)
1 medium garlic clove, minced
2 teaspoons fresh thyme
1 teaspoon paprika
1/4 cup tomato juice
1/2 cup chicken broth
2 large eggs
1/2 teaspoon unflavored gelatin
1 tablespoon soy sauce
1 teaspoon Dijon mustard
2 tablespoons dried parsley
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
1 lb ground sirloin
1 lb ground chuck (Or use 85% Ground beef.)
21 saltines, crushed
1/2 cup ketchup
1 teaspoon Tabasco sauce
1/2 teaspoon ground coriander
1/4 cup cider vinegar
3 tablespoons light brown sugar, packed

Steps:

  • Preheat oven to 375 degrees F and place oven rack in center of oven.
  • Prepare your cooking pan by placing a cooling rack over a baking pan with sides, then cover with aluminum foil; poke small holes every half inch or so and spray with cooking spray.
  • Place the grated cheese on a plate and place in the freezer until ready to use.
  • Heat a skillet over medium high heat, add butter and cook until foamy; add onions and celery, cook, stirring occasionally, until they begin to caramelize, about 8 minutes.
  • Add in garlic, thyme, paprika; cook, stirring, about a minute.
  • Reduce heat to low and stir in tomato juice; transfer to a small bowl and let cool.
  • In a large bowl, whisk together eggs and broth; sprinkle with the gelatin and let sit 5 minutes.
  • Stir in soy sauce, mustard, saltines, parsley, salt, pepper, and the onion mixture; crumble frozen cheese over top.
  • Add ground beef and mix with hands until combined.
  • Transfer meat mixture to prepared foil lined pan and form into a 10 x 6 inch loaf (it should be about 2 inches high).
