KIR ROYALE SORBETS
Kir became a favorite drink of mine (cassis and wine), then Kir Royale quickly became a new favorite (cassis and champagne). So when we made this for a dinner party in Scotland, this combined my favorite drink with ice cream! This is well worth the time it takes to freeze multiple times!

KIR, AND KIR ROYALE
When we lived in Scotland, Kir, or Kir Royale were the drinks I enjoyed the most. Royale was a special occasion drink, like Christmas or New Year, and Kir was the typical standby for pretty much everything else.

Steps:
- 1. To make Kir: put a bit of cassis in the bottom of a wine glass, about the size that you see the stem through the bottom of the glass. Fill it with white wine, and stir gently.
- 2. To make Kir Royale: Put cassis in the bottom of a champagne flute, about the size of a dime. Then add cold champagne and gently stir so the bubbles stay bubbly!
Tips:
- Use chilled ingredients: Make sure your champagne, crème de cassis, and any garnishes are well-chilled before assembling the cocktail. This will help to keep the drink refreshing and bubbly.
- Add sugar syrup to taste: If you find the cocktail too tart, you can add a small amount of sugar syrup to taste. Start with a quarter ounce and add more as needed.
- Garnish with fresh fruit: A twist of lemon or orange peel, or a few fresh raspberries or blackberries, can add a pop of color and flavor to your Kir Royale.
- Serve immediately: The Kir Royale is best enjoyed immediately after it is made, while the champagne is still bubbly. If you need to make the cocktail ahead of time, store it in the refrigerator for up to 2 hours before serving.
Conclusion:
The Kir Royale is a classic French cocktail that is elegant, refreshing, and easy to make. With its beautiful pink color and bubbly texture, it is the perfect drink for any special occasion. Whether you are hosting a brunch, a baby shower, or a holiday party, the Kir Royale is sure to be a hit with your guests. So next time you are looking for a festive and delicious cocktail, give the Kir Royale a try.
