Welcome to the realm of flavors, where voodoo gumbo reigns supreme. This tantalizing dish, originating from the heart of Louisiana, is a symphony of bold spices, soulful ingredients, and a touch of mystique. Voodoo gumbo is not just a meal; it's an experience that captivates your senses and leaves you craving for more.

Our culinary journey begins with the trinity of Cajun cooking: bell peppers, onions, and celery, sautéed to perfection, releasing their aromatic essence into the air. Next, we introduce the Andouille sausage, its smoky and spicy notes adding a layer of complexity. Plump shrimp, succulent chicken, and tender okra join the party, each contributing their unique flavors and textures.

For the ultimate depth of flavor, we introduce the holy trinity of spices: paprika, cayenne, and black pepper. These spices dance together, creating a harmonious blend that awakens your taste buds. A splash of Worcestershire sauce adds a savory umami note, while a dash of hot sauce brings a touch of heat that lingers on your palate.

This magical concoction is then simmered in a rich chicken stock, infusing every ingredient with its golden goodness. As the gumbo simmers, the flavors meld and deepen, creating a symphony of tastes that will transport you to the heart of Louisiana.

But our culinary adventure doesn't end there. We also bring you a vegetarian voodoo gumbo, a testament to the versatility of this beloved dish. This meatless version is just as flavorful, with a hearty combination of vegetables, beans, and spices that will satisfy even the most ardent carnivore.

Whether you prefer the classic meat-based voodoo gumbo or its vegetarian counterpart, this article has you covered. Prepare to embark on a culinary journey that will leave you spellbound.

GOOD NEW ORLEANS CREOLE GUMBO

Good New Orleans Creole Gumbo image

I am going to give you my gumbo recipe. I learned to cook from my mother and grandmother who were born and raised in New Orleans and really knew how to cook. Most of the time, you could not get them to write down their recipes because they used a 'pinch' of this and 'just enough of that' and 'two fingers of water,' and so on. This recipe is a combination of both of their recipes which I have added to over the years. Serve over hot cooked rice. The gumbo can be frozen or refrigerated and many people like it better the next day. Bon appetit!

Time 3h40m

Yield 20

Number Of Ingredients 24

1 cup all-purpose flour
¾ cup bacon drippings
1 cup coarsely chopped celery
1 large onion, coarsely chopped
1 large green bell pepper, coarsely chopped
2 cloves garlic, minced
1 pound andouille sausage, sliced
3 quarts water
6 cubes beef bouillon
1 tablespoon white sugar
salt to taste
2 tablespoons hot pepper sauce (such as Tabasco®), or to taste
½ teaspoon Cajun seasoning blend (such as Tony Chachere's®), or to taste
4 bay leaves
½ teaspoon dried thyme leaves
1 (14.5 ounce) can stewed tomatoes
1 (6 ounce) can tomato sauce
4 teaspoons file powder, divided
2 tablespoons bacon drippings
2 (10 ounce) packages frozen cut okra, thawed
2 tablespoons distilled white vinegar
1 pound lump crabmeat
3 pounds uncooked medium shrimp, peeled and deveined
2 tablespoons Worcestershire sauce

Steps:

  • Make a roux by whisking the flour and 3/4 cup bacon drippings together in a large, heavy saucepan over medium-low heat to form a smooth mixture. Cook the roux, whisking constantly, until it turns a rich mahogany brown color. This can take 20 to 30 minutes; watch heat carefully and whisk constantly or roux will burn. Remove from heat; continue whisking until mixture stops cooking.
  • Place the celery, onion, green bell pepper, and garlic into the work bowl of a food processor, and pulse until the vegetables are very finely chopped. Stir the vegetables into the roux, and mix in the sausage. Bring the mixture to a simmer over medium-low heat, and cook until vegetables are tender, 10 to 15 minutes. Remove from heat, and set aside.
  • Bring the water and beef bouillon cubes to a boil in a large Dutch oven or soup pot. Stir until the bouillon cubes dissolve, and whisk the roux mixture into the boiling water. Reduce heat to a simmer, and mix in the sugar, salt, hot pepper sauce, Cajun seasoning, bay leaves, thyme, stewed tomatoes, and tomato sauce. Simmer the soup over low heat for 1 hour; mix in 2 teaspoons of file gumbo powder at the 45-minute mark.
  • Meanwhile, melt 2 tablespoons of bacon drippings in a skillet, and cook the okra with vinegar over medium heat for 15 minutes; remove okra with slotted spoon, and stir into the simmering gumbo. Mix in crabmeat, shrimp, and Worcestershire sauce, and simmer until flavors have blended, 45 more minutes. Just before serving, stir in 2 more teaspoons of file gumbo powder.

Time 1h30m

Number Of Ingredients 15

½ cup high heat oil, such as canola, corn, or vegetable
½ cup all purpose flour
1 medium onion, diced
2 bell peppers (I used ½ of each red, green, yellow, orange - see note), diced
3 stalks celery, diced
6 cloves garlic, minced
3 bay leaves
8 ounces andouille sausage, sliced (I used Tofurky)
2 tablespoons EACH: cajun seasoning AND tabasco sauce (more or less to taste)
1 tablespoon cayenne (omit if you want it mild)
4 cups low sodium chicken broth
1 (14.5 ounce can) stewed tomatoes and juices, roughly diced
1 ½ pounds raw shrimp
2 teaspoons gumbo filé
sliced scallions + white rice or quinoa, for serving

Steps:

  • Heat the oil in a large dutch oven or a heavy bottom pot over medium-high heat. Whisk in the flour until combined and smooth. Switch to a wooden spoon and continuously stir for 15-22 minutes or until the roux darkens to just past a deep peanut butter color. Do not let the roux burn! (if you smell it burning, you will need to throw is out, clean the pot, and start over, unfortunately there's just no saving burnt roux!)
  • Once the roux reaches that deep rich brown color, stir in the onions, bell peppers, and celery and continue to cook, stirring as needed so the vegetables don't stick. About 8-10 minutes or until the veggies soften. Add the garlic, andouille sausage (if using tofurky, do not add yet), and bay leaves. Continue to cook for an additional 1-2 minutes until the garlic is nice and fragrant.
  • Add the cajun seasoning, tabasco sauce, and cayenne along with the chicken broth and stewed tomatoes and bring to a high simmer before lowering the heat to medium-low, covering and simmering for 15-20 minutes.
  • IF USING TOFURKY: Add a teaspoon of oil to a skillet over medium high heat. Add the slices and cook for a quick 90 seconds (turning half way) just to sear the outside before adding to the gumbo.
  • Add the shrimp and tofurky (if using) to the gumbo, give it a stir and allow to continue to simmer for an additional 10-15 minutes or until the shrimp is opaque and the veggies have softened. Taste and season with salt and pepper as desired. Add the gumbo filé and stir. Remove bay leaves before serving.
  • TO SERVE: Serve warm with white rice or quinoa with sliced scallions on top.

Time 1h50m

Yield 8 servings

Number Of Ingredients 16

1/2 cup plus 1 tablespoon vegetable oil
1/2 cup all-purpose flour
8 ounces andouille sausage, cut into 1/2-inch pieces
1 1/2 pounds boneless skinless chicken thighs, quartered
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
2 ribs celery, chopped (about 1 cup)
1 large onion, chopped (about 2 cups)
1 green bell pepper, chopped (about 1 1/2 cups)
1/4 teaspoon cayenne pepper
4 cloves garlic, finely chopped
4 cups chicken broth
2 tablespoons pickling spice
1 1/2 pounds medium shrimp (21 to 25 count), peeled and deveined, tails removed
1/2 teaspoon gumbo file
Hot cooked white rice, for serving

Steps:

  • Heat 1/2 cup of the vegetable oil in a cast-iron or other heavy-bottomed skillet over medium-high heat until very hot. Add the flour and whisk until combined and just beginning to brown. Reduce the heat to medium-low and continue to cook, whisking occasionally, until it is a deep peanut butter brown color, 15 minutes. Set the roux aside.
  • Meanwhile, heat the remaining 1 tablespoon oil in a Dutch oven or large pot over medium heat. Add the sausage and cook, stirring occasionally, until the fat has rendered and is lightly browned. Remove the sausage with a slotted spoon to a bowl. Sprinkle the chicken pieces with 1 teaspoon salt and 1/4 teaspoon pepper and brown over medium heat in the sausage drippings. Remove the chicken from the pot and place in the bowl with the sausage. Stir in the tomato paste until smooth and slightly darkened (be careful not to burn), about 1 minute. Add the celery, onions, peppers and cayenne to the pot and continue to cook until softened, 8 to 10 minutes. Add the garlic and cook until just aromatic, about 30 seconds. Add the chicken broth and 2 cups water and bring to a simmer. Slowly whisk in the warm roux a bit at a time until combined. Tie the pickling spice in a bit of cheesecloth and add to the pot along with the chicken and sausage. Simmer all together until thickened and the flavors have blended, about 45 minutes.
  • Add the shrimp and gumbo file and simmer until the shrimp are just cooked through and the gumbo has thickened, about 5 minutes. Remove and discard the pickling spice bundle. Taste and adjust the seasoning with additional salt and pepper. Serve the gumbo over rice.

VALERIE'S VERY BEST GUMBO

Valerie's Very Best Gumbo image

Provided by Valerie Bertinelli

Categories     main-dish

Time 1h45m

Yield 12 to 15 servings

Number Of Ingredients 19

1 cup plus 2 tablespoons canola oil
1 cup all-purpose flour
6 ribs celery, chopped
2 green bell peppers, chopped
1 large white onion, chopped
1 bunch scallions, 1/2 cup sliced for garnish and the remaining chopped
8 to 10 cloves garlic, chopped
2 quarts store-bought chicken stock
Two 15-ounce cans diced tomatoes
12 ounces andouille sausage, sliced into 1/2-inch pieces
12 ounces smoked sausage, sliced into 1/2-inch pieces
1 scant tablespoon cayenne, or more to taste (this much makes it medium spicy)
3 bay leaves
Kosher salt and freshly ground black pepper
One 10-ounce box frozen sliced okra, thawed
1 rotisserie chicken, meat shredded (about 4 cups)
15 cups cooked white rice, such as Minute Rice, for serving
Hot sauce, such as Crystal, for serving
File powder, for serving, optional

Steps:

  • Warm 1 cup oil over medium heat in a large Dutch oven until hot. Add the flour to the pot all at once, whisking until the consistency is uniform. Cook the roux, whisking occasionally, until it is the color of a tarnished penny, about 20 minutes. Do not let it darken any further. Carefully add the celery, bell peppers, onion, chopped scallions and garlic to the pot, working away from you as the hot roux may spatter. Stir with a wooden spoon until the onions begin to soften, about 5 minutes.
  • Add enough stock to just cover the vegetables, about 1 quart, and stir to combine. The roux may separate. Add the tomatoes with their juices, andouille and smoked sausages, cayenne, bay leaves, 1 1/2 tablespoons salt, 1 tablespoon black pepper and the remaining stock, about 1 more quart. Partially cover and bring to a boil, then reduce the heat and simmer 20 minutes.
  • Meanwhile, heat the remaining 2 tablespoons oil in a medium skillet over high heat. Add the okra and cook, stirring, until the gel dries out slightly, about 3 minutes. Add to the Dutch oven.
  • Taste the gumbo for seasoning and adjust as desired. Add the chicken, cook until warmed through and serve, or simmer up to 2 hours more to concentrate the flavors, adding the chicken 20 minutes before serving.
  • Sprinkle with the reserved sliced scallions and serve over rice. Serve with hot sauce and file powder if using.

Time 6h30m

Yield 12 serving(s)

Number Of Ingredients 30

1 cup all-purpose flour
1/2 cup vegetable oil
2 teaspoons garlic powder
2 teaspoons salt
2 teaspoons chili powder
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried thyme
1 teaspoon parsley flakes
1 teaspoon Old Bay Seasoning
1 pinch msg
1 sweet onion (julienned)
1 bell pepper (chopped)
3 stalks celery (bias-sliced)
1 1/2 cups chopped fresh okra (or 1 12oz can okra)
1 (15 ounce) can corn (or 1 1/2 cup fresh or frozen)
1 lb andouille sausage (bias-sliced)
2 tablespoons cajun seasoning
4 cups chicken stock
2 tablespoons Worcestershire sauce
2 tomatoes, peeled and chopped
2 (15 ounce) cans kidney beans
1 lb peeled and deveined shrimp
2 tablespoons hot sauce (Louisiana, Texas Pete, or similar)
1 1/2 cups roux
1 tablespoon sour cream (per serving)
1/2 cup cooked rice (per serving)
1/2 teaspoon gumbo file (per serving)
1 dash Angostura bitters (per serving)

Steps:

  • Roux: Place the vegetable oil and flour into a heavy oven-safe dish and whisk together to combine. Place on the middle shelf of the oven, uncovered, and bake for 90 minutes, whisking several times throughout the cooking process until roux is a red brick color and smells nutty.
  • Cajun seasoning: Mix all spices in a mortar or coffee grinder and grind together thoroughly.
  • Soup: Starting with chicken stock, add all ingredients (except shrimp) to a crock pot set to low. Cook for 4 hours on low stirring occasionally. Add shrimp and cook for about one additional hour until shrimp are pink and firm.

Tips:

  • To make the perfect roux, start with equal parts of fat and flour, and cook it over medium heat until it reaches a dark chocolate color. Don't rush this process, as it will take time to develop the full flavor of the roux.
  • The holy trinity is the foundation of many Cajun and Creole dishes, so make sure to use fresh, high-quality ingredients. Chop the vegetables into small pieces so that they will cook evenly.
  • Use a variety of meats and seafood in your gumbo. Andouille sausage, chicken, shrimp, and crab are all popular options. You can also add vegetables such as okra, corn, and bell peppers.
  • Season your gumbo generously with Creole seasoning, garlic, onion, and cayenne pepper. You can also add other spices, such as thyme, basil, and oregano, to taste.
  • Let your gumbo simmer for at least an hour, or even longer, to allow the flavors to meld together. Serve it over rice, with a side of hot sauce and Creole bread.

Conclusion:

Killer Voodoo Gumbo is a delicious and hearty dish that is perfect for a special occasion. It is a bit time-consuming to make, but it is well worth the effort. With its rich flavors and complex textures, this gumbo is sure to impress your friends and family.
