KILLER PANCAKES

Killer Pancakes image

My family really liked these pancakes even my picky 7 yr old niece and 6 yr old newphew. They gobbled these right down and ate them with there hands like cookies. When I made these I used Splenda for baking and no sugar added fruit cocktail that was in pear juice. I did need to add a bit of water to my batter. I got this recipe from Family Time Dish.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 egg whites
1 (16 ounce) can juice-packed fruit cocktail in juice, drained and juice reserved
maple syrup or chopped fresh strawberries, macerated with a little sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray 2 non-stick cookie sheets with vegetable oil and set aside.
  • Sift the dry ingredients together and set aside.
  • Beat the egg whites until frothy.
  • Beat in the juice.
  • Gradually add the dry mixture, stirring until well blended.
  • Fold in the fruit cocktail.
  • Using an 1/8 cup (2 tablespoons measure), scoop dollops of pancake batter onto the sprayed pans, leaving at least 2 inches between the pancakes.
  • Bake for 10 to 15 minutes or until puffed and golden.
  • Serve hot with maple syrup, fresh strawberries, peaches, or other fruit.

Tips:

  • Use buttermilk: Buttermilk adds a tangy flavor and helps make the pancakes light and fluffy. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Just mix until the ingredients are combined. Lumps are okay.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking allows the gluten to relax, which will make the pancakes more tender.
  • Use a hot griddle: A hot griddle is essential for getting perfectly cooked pancakes. If the griddle is not hot enough, the pancakes will stick and be undercooked.
  • Cook the pancakes over medium heat: Cooking the pancakes over medium heat will help them cook evenly without burning.
  • Flip the pancakes only once: Flipping the pancakes too often will make them tough. Flip them only once, when the edges are dry and bubbles start to form on the surface.
  • Serve the pancakes immediately: Pancakes are best served hot and fresh. If you need to keep them warm, place them in a preheated oven at 200°F.

Conclusion:

Making killer pancakes is easy if you follow these tips. With a little practice, you'll be able to whip up a batch of fluffy, delicious pancakes that will impress your family and friends. So what are you waiting for? Get cooking!
