KIELBASA WITH BRUSSELS SPROUTS IN MUSTARD CREAM SAUCE

Kielbasa with Brussels Sprouts in Mustard Cream Sauce image

Any German can tell you that wurst and cabbage go hand in hand. Any Spaniard will say the same of chorizo and beans. But it takes a special, international inclination to make the case for kielbasa with Brussels sprouts, white beans, and mustard. I'll tell you that it works wonderfully! The saltiness of the pork combined with the bitter, gentle crunch of the Brussels sprouts and mildness of the beans is well-balanced perfection. Plus, it's cheap, easy, and looks good on a plate!

Time 55m

Yield 4

Number Of Ingredients 12

1 shallot, peeled and quartered
4 large garlic cloves
2 tablespoons extra-virgin olive oil
kosher salt to taste
1 ½ pounds Brussels sprouts, halved
2 tablespoons coarse Dijon mustard
1 teaspoon olive oil
1 pound kielbasa sausage, cut on the bias into 1/4-inch slices
1 tablespoon olive oil
¼ cup heavy cream
1 cup white kidney beans, drained and rinsed
ground black pepper to taste

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place shallot and garlic cloves over two layers of aluminum foil. Coat with 2 tablespoons of extra-virgin olive oil and season with salt. Wrap the shallot and garlic with the foil, creating a pouch. Bake in the preheated oven until the garlic is tender, about 30 minutes. Place shallot and garlic in a bowl and mash using a fork. Set aside.
  • Meanwhile, place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil. Add the Brussels sprouts, cover, and steam until just tender, 2 to 6 minutes depending on thickness. Set aside.
  • Heat 1 teaspoon olive oil in a large, deep skillet over medium-high heat. Lay the kielbasa into the hot skillet and cook, turning occasionally, until evenly browned and crispy, about 3 minutes on each side. Remove the kielbasa from the skillet with a slotted spoon to retain the grease in the skillet; drain the sausage slices on a paper towel-lined plate.
  • Add 1 tablespoon of olive oil to the skillet. Cook the mashed shallot and garlic in the hot oil for 1 minute. Stir in the mustard and cream. Reduce the heat to medium-low and add the Brussels sprouts and beans. Toss to coat and season with salt and pepper. Continue cooking until heated through. Serve the kielbasa over the Brussels sprouts and beans.

SHEET-PAN SAUSAGES AND BRUSSELS SPROUTS WITH HONEY MUSTARD

Sheet-Pan Sausages and Brussels Sprouts With Honey Mustard image

This hearty pan of sticky, honey mustard-glazed sausages, brussels sprouts and potatoes only adds to the argument that sheet-pan dinners make the best weeknight meals. As the sausages roast, they yield a delicious fat that coats and seasons the caramelized vegetables. Use any fresh sausage you like, as long as it pairs well with the honey mustard. Feel free to substitute or add other vegetables like squash, cherry tomatoes, broccoli, carrots or cabbage. The mustard seeds and nuts provide texture and crunch, but leave them out if you prefer.

Time 30m

Yield 4 servings

Number Of Ingredients 9

1 pound fresh sausage, such as sweet or hot Italian, or bratwurst
1 pound brussels sprouts, trimmed and halved lengthwise
1 pound small potatoes, like baby Yukon gold or red potatoes, halved
2 tablespoons extra-virgin olive oil, plus more as needed
Kosher salt and black pepper
4 teaspoons honey
1 tablespoon Dijon mustard
1 tablespoon yellow mustard seeds (optional)
1/4 cup almonds or walnuts, chopped (optional)

Steps:

  • Heat oven to 450 degrees, and place a sheet pan in the oven. Score the sausages in a few places on both sides, making sure not to cut all the way through. Transfer to a large bowl with the brussels sprouts, potatoes and 2 tablespoons olive oil, and stir until coated. (If the mixture seems dry, add a little more oil.) Season with salt and pepper.
  • Spread the mixture in an even layer on the heated baking sheet, and arrange the vegetables cut-sides down. Roast 15 minutes, until the brussels sprouts and potatoes start to soften. (The sausages will not be cooked through yet.)
  • Meanwhile, in a small bowl, stir together the honey, mustard and mustard seeds, if using.
  • Drizzle the honey mustard over the sausages and vegetables, and toss or shake to coat. Flip the sausages. Sprinkle with almonds, if using. Roast until the sausages are cooked through and the vegetables are golden and tender, another 10 minutes or so. Season to taste with salt and pepper.

ROASTED BRUSSELS SPROUTS WITH KIELBASA

Roasted Brussels Sprouts With Kielbasa image

I had this wonderful dish at a church potluck and just had to have the recipe. My family also loves this and I now have to at least double it when I make it for them. Hope you enjoy it as much as we do. It is so easy to prepare.

Provided by juju94

Categories     Vegetable

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 lb Brussels sprout, cut in half lengthwise
1 -2 cup red onion, cut into wedges
8 ounces kielbasa, cut in 1/4 in pieces
2 tablespoons olive oil
salt and pepper
1 dash garlic powder

Steps:

  • Preheat oven to 450.
  • Mix the sprouts, onions and kielbasa in a large bowl with the oil, salt, pepper, and sprinkle of garlic powder.
  • Spread a single layer in a roasting pan and roast 20 to 30 minutes or until sprouts are tender. Stir every 10 minutes.

Tips:

  • Choose the right kielbasa: Look for a kielbasa that is made with high-quality meat and spices. You can find a variety of kielbasa at most grocery stores, but be sure to read the label carefully before you buy it.
  • Cook the kielbasa properly: Kielbasa can be cooked in a variety of ways, but the most popular methods are pan-frying, grilling, and baking. Be sure to cook the kielbasa until it is browned and cooked through.
  • Use fresh Brussels sprouts: Fresh Brussels sprouts are the best choice for this recipe. Avoid using frozen or canned Brussels sprouts, as they will not have the same flavor or texture.
  • Trim the Brussels sprouts properly: Before you cook the Brussels sprouts, be sure to trim the ends and remove any loose leaves. This will help the Brussels sprouts cook evenly.
  • Season the Brussels sprouts well: You can season the Brussels sprouts with a variety of herbs and spices, such as salt, pepper, garlic powder, and onion powder. You can also add a bit of olive oil or butter to help the Brussels sprouts brown.
  • Cook the Brussels sprouts until they are tender: Brussels sprouts should be cooked until they are tender, but still have a slight crunch. Overcooking the Brussels sprouts will make them mushy.

Conclusion:

Kielbasa and Brussels sprouts is a classic dish that is both delicious and easy to make. This recipe uses simple ingredients and can be prepared in just 30 minutes. The kielbasa provides a smoky, savory flavor, while the Brussels sprouts add a sweet, nutty flavor. This dish is perfect for a weeknight meal or a casual gathering.
