KIELBASA STIR FRY
For some reason, I was craving this one evening even though I had never had it before. I decided to try it and the family declared it a winner. I use Hillshire Farm's Turkey Polish Kielbasa, but I'm sure any kind will work.

Steps:
- Heat olive oil in large skillet over medium high heat. Add the onions and peppers and stir fry until tender.
- Add kielbasa and continue to stir fry until everything is golden and heated thoroughly, about 10-15 minutes.
- Serve over prepared long grain wild rice or couscous. (The garlic and/or Parmesan couscous varieties go especially well with it. My kids also like to add ketchup to theirs.).

KIELBASA STIR FRY BY MAGGIE
We love cabbage but we don't love boiled cabbage. We enjoy cabbage that has had a nice saute and so this "stir fry" came to be. For some reason Kielbasa or smoked sausages seem to go well with cabbage so we thought why not put them together. We really love this dish and often times it is our main dish and other times we serve...

Steps:
- 1. NOTE: * Use a mandolin to slice the vegies thinly .. run the carrot and the celery through on the lengthwise to get thin strips. Then cut those strips into 2 or 3 long narrow strips.
- 2. Prep all the vegies and the sausage before beginning to cook.
- 3. Put your oil into a 2 qt pot and heat over a high flame until it is about 300*
- 4. Add the carrots, celery, water chestnuts and mushrooms to the hot pan and stir. When the carrots are getting soft - after about a minute - add the bell pepper and onions. Stir constantly so they don't burn. Once they begin to lightly caramelize toss in the sausage and stir.
- 5. Then add your cabbage and mix everything together really well. Once the cabbage begins to soften - about 2 minutes - add your water (or chicken broth). Continue to cook on medium high heat, stirring frequently, until the cabbage has softened to the desired doneness.
- 6. Reduce the heat and add a dash or 2 of tamari sauce. Remove from heat and serve immediately.
Tips:
- Choose the Right Kielbasa: For the best flavor, select a high-quality kielbasa, such as a Polish or smoked variety.
- Slice Kielbasa Thinly: Thinly sliced kielbasa cooks more evenly and absorbs the flavors of the stir-fry sauce better.
- Use a Variety of Vegetables: To create a colorful and flavorful stir-fry, use a variety of vegetables, such as bell peppers, onions, carrots, broccoli, and snap peas.
- Marinate the Kielbasa (Optional): Marinating the kielbasa in a mixture of soy sauce, rice vinegar, and garlic powder for at least 30 minutes before cooking adds extra flavor.
- Cook Kielbasa First: Since kielbasa takes longer to cook than vegetables, cook it first before adding the vegetables to the stir-fry.
- Use a Well-Seasoned Wok or Skillet: A well-seasoned wok or skillet helps prevent the kielbasa and vegetables from sticking during cooking.
- Stir-Fry on High Heat: Stir-frying on high heat ensures that the kielbasa and vegetables are cooked quickly and evenly, while also developing a slightly charred flavor.
- Add Sauce Gradually: Add the stir-fry sauce gradually, starting with a small amount and adjusting to your desired taste.
- Serve Immediately: Stir-fries are best served immediately after cooking, while the kielbasa and vegetables are still hot and crispy.
Conclusion:
Kielbasa stir-fry is a quick, easy, and flavorful dish that's perfect for a weeknight meal. With its combination of savory kielbasa, colorful vegetables, and tangy sauce, this stir-fry is sure to be a hit with the whole family. So next time you're looking for a delicious and satisfying meal, give this kielbasa stir-fry a try!
