For some reason, I was craving this one evening even though I had never had it before. I decided to try it and the family declared it a winner. I use Hillshire Farm's Turkey Polish Kielbasa, but I'm sure any kind will work.

1 tablespoon olive oil
13 -16 ounces kielbasa, cut into bite size pieces
1 medium sweet vidalia onion, cut into slivers
16 ounces frozen mixed peppers, strips thawed (or fresh equivalent)
prepared long grain and wild rice blend or prepared couscous

Steps:

  • Heat olive oil in large skillet over medium high heat. Add the onions and peppers and stir fry until tender.
  • Add kielbasa and continue to stir fry until everything is golden and heated thoroughly, about 10-15 minutes.
  • Serve over prepared long grain wild rice or couscous. (The garlic and/or Parmesan couscous varieties go especially well with it. My kids also like to add ketchup to theirs.).

2 links kielbasa, cut into thin slices
1 1/2 lbs chicken breasts
3 -4 red potatoes
1 red pepper
1 green peppers or 1 yellow pepper
1 large onion, diced
salt
pepper
oregano

Steps:

  • Cut everything bite sized.
  • Wet skillet. Cook sausage until brown and crispy. Set aside (retain liquid in pan).
  • Add chicken into sausage fat. Saute until cooked through. Set aside.
  • Heat oil. Saute onions, peppers, and potatoes.
  • Lower heat.
  • Cover pot until potatoes are tender (about 20 minutes).
  • Add chicken and sausage. Add seasoning.
  • Simmer for a few minutes, and serve.

I got this recipe from my sister. Omit the kielbasa and you've got a yummy vegetarian dish. Just add vegetables of your choice to the skillet in order of how long it takes them to cook.

2 carrots, sliced
1 stalk celery, diced
1 bunch broccoli floret
1/2 red pepper, sliced
1/2 onion, sliced
1 cup snow peas
1 lb kielbasa, sliced
2 cloves garlic, minced
3 tablespoons butter
1 tablespoon oil
1 1/2 lbs bow tie pasta
parmesan cheese

Steps:

  • In skillet (over medium to medium-high heat), sautee in butter and oil the kielbasa, garlic, carrots, celery, and broccoli for 5 min.
  • Meanwhile, cook bowtie pasta.
  • Add peppers and onions to skillet.
  • Cook for another 5 min.
  • Add snow peas last since they cook the fastest.
  • Cook for approximately 3 more min.
  • Drain pasta and place on plate.
  • Spoon kielbasa-vegetable mixture over pasta.
  • Pass the parmesan.

For some reason Kielbasa or smoked sausages seem to go well with cabbage so we thought why not put them together. We really love this dish and often times it is our main dish and other times we serve...

1 medium carrot - thinly sliced lengthwise * see note
1 stalk celery - sliced thin lengthwise * see note
1 can (8 oz) water chestnuts - sliced
1/2 c mushrooms thinly sliced
1/2 c mushrooms quartered
1/2 green bell pepper - thinly sliced
1/3 c thinly sliced yellow onion
1 c kielbasa or smoked sausage cut into bite size pieces
3 c thinly sliced (shaved) green cabbage
1 Tbsp canola or olive oil
tamari sauce
1/4 c water or chicken broth

Steps:

  • 1. NOTE: * Use a mandolin to slice the vegies thinly .. run the carrot and the celery through on the lengthwise to get thin strips. Then cut those strips into 2 or 3 long narrow strips.
  • 2. Prep all the vegies and the sausage before beginning to cook.
  • 3. Put your oil into a 2 qt pot and heat over a high flame until it is about 300*
  • 4. Add the carrots, celery, water chestnuts and mushrooms to the hot pan and stir. When the carrots are getting soft - after about a minute - add the bell pepper and onions. Stir constantly so they don't burn. Once they begin to lightly caramelize toss in the sausage and stir.
  • 5. Then add your cabbage and mix everything together really well. Once the cabbage begins to soften - about 2 minutes - add your water (or chicken broth). Continue to cook on medium high heat, stirring frequently, until the cabbage has softened to the desired doneness.
  • 6. Reduce the heat and add a dash or 2 of tamari sauce. Remove from heat and serve immediately.
