1 medium onion, chopped

  • In a Dutch oven or soup kettle, saute the cabbage, onion and garlic in oil for 5 minutes or until tender. 1 1/4 pounds (1 ring) kielbasa, 1-inch dice
1 pound (1 large or 2 medium) starchy potato, such as russet, peeled and chopped
1 tablespoon paprika, 1 scant palmful
1/2 tablespoon coriander, half a palmful
1/2 teaspoon ground allspice
2 carrots, chopped
2 ribs celery, chopped
2 cloves garlic, crushed
1 onion, chopped
Salt and freshly ground black pepper

1/2 head savoy cabbage, chopped
A few grates nutmeg
1 cup lager beer, room temp
4 cups chicken stock
2 cups tomato passata or puree
1/2 cup creme fraiche
3 tablespoons chopped fresh dill or 1 1/2 teaspoons dried
Handful fresh parsley leaves, chopped
1/2 lemon, juiced

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat, add the kielbasa and brown. Remove the kielbasa to a paper towel-lined plate. Add the potatoes, paprika, coriander, allspice, carrots, celery, garlic, onions and some salt and pepper. Cook, partially covered, 5 to 6 minutes. Then wilt in the cabbage and season with a little nutmeg. Deglaze the pan with the beer. Add the stock and passata, then slide the kielbasa back in the pot and simmer to combine flavors, 15 minutes. Cool and store for a make-ahead meal. Reheat over medium heat. Finish the soup with the creme fraiche, herbs and lemon juice; serve in shallow bowls.

6 ounces kielbasa, cut into 1/2-inch dice
3 tablespoons unsalted butter
2 carrots, finely diced
2 stalks celery, finely diced
1 small onion, finely diced
2 cloves garlic, minced
1/2 teaspoon dry mustard powder
Pinch cayenne pepper
4 small round boules (about 7 inches each)
3 tablespoons all-purpose flour
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2 cups chicken stock, warmed
1 bottle pale ale, pilsner or lager
3 cups sharp yellow Cheddar, shredded
5 ounces Gruyere, shredded
Kosher salt and freshly ground black pepper
3 tablespoons finely chopped fresh chives

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the kielbasa and cook until browned and crisp, 1 to 2 minutes. Transfer to a paper towel-lined plate and set aside.
  • Melt the butter in a large Dutch oven over medium-low heat. Add the carrots, celery, onion, garlic, mustard powder and cayenne. Cook the vegetables until tender and translucent, about 15 minutes.
  • Meanwhile, prepare the bread bowls. Using a sharp knife, slice the top off of each boule to use as a topper. Hollow out the middle with a fork or your fingers, leaving a thick bread shell. Save the removed bread for another use.
  • Sprinkle the flour over the vegetables and cook, stirring constantly, about 1 minute. Add the Dijon mustard and Worcestershire. Pour in the stock and beer and simmer until the alcohol cooks out, about 5 minutes.
  • Puree the soup with an immersion blender until smooth. Add the Cheddar and Gruyere and stir until the cheese is melted. Season with salt and pepper. Ladle into the bread bowls and serve immediately, topped with the kielbasa croutons and chives. Use the bread toppers for dipping, if desired.

2 c onions, sliced thinly
4 c green cabbage, shredded
1 Tbsp fresh garlic, minced
6 c vegetable stock
2 c potatoes, peeled and diced

  • 1. Saute kielbasa in a large soup potover medium heat for 5 minutes. Remove kielbasa and set aside. Add onion and cabbage and saute for 10 minutes, stirring occasionally. MY POLISH(EASTER) KIELBASA SOUP



My Polish(Easter) Kielbasa Soup image

This is the soup we referred to as borscht. It wasn't until I was full grown that I found out it isn't referred to as borscht by anybody else! LOL This, like all other soups, tastes better reheated. When storing this soup, keep broth and potatoes in one container, kielbasa in another, and hardboiled eggs separately from both. I couldn't put number of servings because it depends on your appetite! P.S. I finally found 2 others, here on Zaar, who also refers to this as borscht! Yeah!

1 (1 lb) kielbasa, link
3 1/2 quarts water
3 lbs potatoes, cubed
good quality vinegar, to taste (I use apple cider vinegar)
salt & pepper
1/4 cup flour
1/2 cup cold water
hard-boiled egg (one for each bowl of soup)

Steps:

  • Boil kielbasa link in 3 quarts of water, occasionally piercing it to release juices, for 30-45 minutes.
  • While kielbasa is cooking, peel and dice potatoes and boil eggs to hard-boiled stage.
  • Keep potatoes in cold water in bowl after rinsing them well.
  • Cool eggs in cold water before peeling.
  • Remove kielbasa from water.
  • Drain and add cut up potatoes to the water in which you cooked the kielbasa.
  • Add salt and cook.
  • When potatoes are done, add pepper and vinegar to taste.
  • *Don't use balsamic vinegar.
  • To thicken soup, add flour to cold water in a jar with lid or shaker.
  • Shake vigorously to combine.
  • Add to simmering soup through a fine strainer to remove any lumps.
  • Stir to incorporate.
  • Simmer a few minutes to slightly thicken soup.
  • Adjust seasonings at this point. More vinegar? More thickening?.
  • When ready to serve, slice kielbasa, approx 1/4-inch slices.
  • Add some to each soup bowl with one chopped egg.
  • Ladle in broth with potatoes.
  • Serve with a good thick-crusted bread like Polish sisel bread.
  • At Easter when there is baked ham we add pieces of chopped ham, and, of course, a dollop of horseradish(white)!

1 pkg kielbasa, smoked or polish sausage (if you want a healthier version, its fine to use turkey sausage-i do!)
1 medium onion, quartered and sliced thin
3 cans beans- any kind will do...a mix is even better (i like black eyed peas, small butter beans and either pinto or northern beans)
1 Tbsp brown or spicy mustard
1/2 to 1 Tbsp cider vinegar (to taste-to give it a little tang)
montreal steak seasoning...or salt,pepper and a little garlic powder

Steps:

  • 1. slice sausage links in half lengthwise then cut into 1/2 inch chunks
  • 2. slice onion as indicated in ingredient list
  • 3. spray either crockpot or medium to large saucepan or soup pot with cooking spray; add sausage and onion
  • 4. pour in the beans, liquid included; add vinegar and mustard- stir to combine (if this is too sour, you can add a tiny bit of sugar to take the edge off); stir in Montreal or other seasonings
  • 5. add just a bit of water to make more 'stew' like but not like a brothy soup- just enough to separate the ingredients a little bit- DO NOT cover the mixture with water
  • 6. turn crockpot on (low if you'll be gone all day, high if you need it in a couple hours) or cook on stove-once it gets to a boiling point, turn heat down and let simmer until flavors blend...re-season to taste
  • 7. ** if you prefer a thicker stock once its done cooking, add a bit of cornstarch/water or use Wondra/gravy flour to thicken....Enjoy!

2 tablespoons olive oil
12 ounces fully cooked smoked kielbasa sausage, thinly sliced
1 onion, chopped
1 cup chopped fresh fennel bulb
4 garlic cloves, minced
1 1/2 tablespoons chopped fresh thyme
1/2 teaspoon dried crushed red pepper
10 cups canned low-salt chicken broth
4 cups chopped kale (1/2 bunch)
1 15-ounce can cannellini (white kidney beans), rinsed, drained
1 9-ounce package cheese tortellini
1 cup grated Asiago cheese* or Parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add next 6 ingredients and sauté until vegetables are soft and kielbasa is brown, about 12 minutes. Add broth and bring to boil. Stir in kale and cannellini. Reduce heat to low and simmer until kale is wilted, about 4 minutes. (Can be made 1 day ahead. Cool slightly; cover and refrigerate. Bring to simmer before continuing.) Add tortellini to soup. Simmer until pasta is just tender but still firm to bite, about 5 minutes.
  • Ladle soup into bowls. Serve, passing cheese separately.

3 large red potatoes
Salt
2 medium onions, chopped
2 tablespoons rendered bacon fat, lard, or butter
3 large garlic cloves, finely chopped
3 1/2 cups beef stock or low-sodium broth
14 ounces smoked kielbasa, halved lengthwise and cut into 3/4" pieces
1 pound savoy cabbage (about 1/2 medium), chopped
3 medium carrots, halved lengthwise and cut into 1/2" pieces
2 celery stalks, halved lengthwise and cut into 1/2" pieces
Sour cream
Chopped dill

Steps:

  • Generously cover potatoes with water in a large saucepan and season well with salt. Bring to a boil, partially covered, then reduce heat and simmer until tender, 30-40 minutes. Drain and cool until warm, then peel. Keep warm, covered.
  • Cook onions in fat with 1/4 teaspoon salt in a heavy 5-6-quart pot over medium-low heat, covered, stirring occasionally, until beginning to brown. Add garlic and cook, stirring, 1 minute.
  • Add stock, 1 1/2 cups water, kielbasa, cabbage, carrots, and celery and simmer, partially covered, until vegetables are tender, 15-20 minutes.
  • Halve or quarter potatoes and put 1 or 2 pieces in each bowl. Ladle soup over potato and top with a dollop of sour cream and some dill.

6 ounces dry pinto beans, picked through
6 ounces dried split peas, picked through
16 ounces kielbasa, split in half and sliced
