1 pound Polish kielbasa sausage, cut into thin slices
4 medium red potatoes, cut into thin slices
4 stalks celery, chopped
1 green bell pepper, chopped
1 medium yellow onion, chopped
4 green onions, chopped
1 tablespoon dried parsley
1 teaspoon dried basil
½ teaspoon dried cilantro
½ teaspoon dried rosemary
½ teaspoon salt
½ cup butter, sliced into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix sausage, potatoes, celery, bell pepper, onion, green onions, parsley, basil, cilantro, rosemary, and salt together in a casserole dish. Distribute pats of butter evenly on top of mixture. Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour. Uncover and continue to bake for an additional 15 minutes.

i found this on all recipes.com. It was submittted by Geneva. I tweeked it a bit and everyone loves it. It's also an excellent dish to take to a potluck dinner. Some reviewers stated it was "soupy".I adjusted the milk to 1/2 cup. I just keep baking it until it get's thick. Sometimes I have to bake it 2 hours. It really does get thick. The last few times I made it I made it with 1 cup of milk. It seemed to get thicker quicker. I am going to change the amount of milk. One reviewer noted that the spices were too much. My family does not like all the garlic either. They said that there is enough in the kielbasa. I don't use it when making this recipe to please them not me. I sometimes top this bake with Frenches French Fried Onions (Cheddar Cheese or Original)

1 (10 3/4 ounce) can condensed cream of mushroom soup or 1 (10 3/4 ounce) can cheddar cheese soup, I use the cheddar cheese soup
1 large onion, sliced
1/2 cup milk
1 teaspoon minced garlic there is plenty of garlic in the kielbasa (My family doesn't care for the garlic and I don't use it.)
1 teaspoon salt
1/2 teaspoon ground black pepper
1 lb kielbasa, sliced thin
6 -8 large russet potatoes, peeled and cubed

Steps:

  • Preheat oven to 375 degrees.
  • In a large mixing bowl, mix together soup, onion, milk, garlic, salt and pepper.
  • Stir, in potatoes and kielbasa.
  • Spoon into a 7x11 inch casserole dish.
  • (if the potatoes are extra large, I use a 9x11 in casserole dish.) Place casserole on a baking sheet and bake in the preheated oven for 90 minutes or until potatoes are tender.

This is a recipe that my Dad has made for years. He usually cooks this in a large skillet, which you can do, but i like to use the oven sometimes because it can be easier. This is a very versatile dish so you can mix any different kinds of vegetables! I prefer potatoes, carrots, zucchini,and yellow squash. I will sometimes add broccoli if I have it on hand, so use your own imagination in choosing which vegetables that you prefer. You could also use any kind of kielbasa sausage. I personally don't care for too much spice, but the spicy sausage can be used also. The best thing about this dish is that the only time consuming part of making it is chopping the vegetables! If you cook it in a skillet, it should take about 30 minutes, in the oven about 45 minutes.

6 russet potatoes
2 large carrots or 2 cups baby carrots
2 -3 zucchini
2 yellow squash
4 scallions
1/2 lb kielbasa
1/4 cup olive oil or 1/4 cup sunflower oil
salt and pepper
1 tablespoon dried thyme
1 tablespoon dried parsley

Steps:

  • Turn oven onto 400 degrees. Start by preparing the different vegetables.
  • Peel and chop the Potatoes into thick slices. For the potatoes I like to cut in half, cut in half again, and then cut in half again. Peel and carrots and slice into good thick pieces. Chop the scallions, white and green parts.
  • Wash the zucchini and yellow squash well and slice. Try to keep the vegetables around the same size for even cooking.
  • Cut the sausage down the middle and then slice into good sized pieces.
  • Place all the vegetables in a large baking pan. Pour the olive oil well over all the vegtetables. Add the seasonings well, you may need adjust the seasonings to your taste.
  • Bake for about 40-50 minutes or until the potatoes are tender and browned.

1 large onion, chopped
1 large yellow bell pepper, chopped
8-10 large red potatoes, chopped into bite sized pieces
1 stick butter (1/2 cup oil if preferred)
2 Tbsp garlic powder
2 tsp black pepper
1 Tbsp paprika
3 Tbsp sea salt

Steps:

  • 1. Preheat oven to 400.
  • 2. Place potatoes, onion, bell pepper, garlic powder, black pepper, paprika, and salt into a roasting pan. Pour melted butter on top and stir well making sure that the spices are sticking to the veggies. Bake for 20 minutes.
  • 3. Take out of the oven, stir well, top with the kielbasa and put it back into the oven for 20 minutes.
  • 4. Take out of the oven, stir the veggies and the kielbasa well, put back into the oven for 20 more minutes.

3 medium potatoes, cut into small cubes
1 Tbsp Emeril essence
4 slice bacon
1-2 Tbsp jalapenos, nacho style, chopped
1 pkg kielbasa Polish sausage
1 small onion, chopped
1 green bell pepper, chopped
1 1/2 tsp cumin
1 tsp coriander
garlic salt and pepper
Provolone and mozzarella cheese
smoked paprika

Steps:

  • 1. In a large bowl add a teaspoon salt and sugar. Add water and swirl to dissolve. Add potatoes and more water to cover.
  • 2. Let sit while chopping the other ingredients. Strain and pat potatoes dry. Season with Emeril essence.
  • 3. In a skillet, cook bacon until crisp. Remove and set aside.
  • 4. Add potatoes and cook until brown and crisp on the outside.
  • 5. Place potatoes in a baking dish. Chop bacon and mix in with potatoes. Sprinkle the chopped jalapenos.
  • 6. In the same skillet, over med to med-high heat, cook onions, bell pepper, and kielbasa.

  • 9. Top with cheese and sprinkle smoked paprika on top. Bake at 350 F until cheese is melted.
