Kielbasa Cheesy Noodle Casserole image

I got this recipe from a friend whose kids would eat only Macaroni and Cheese. She started sneaking in meats and veggies to the Macaroni, and her kids loved it!

Categories     Pork

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 8

1 1/2-2 lbs of smoked kielbasa
1 bag small shell pasta or 1 bag elbow macaroni (any pasta shape can be used)
1 onion, diced (more or less to desired taste)
1 green peppers or 1 red pepper, diced (my family prefers green pepper)
1/2 package cubed Velveeta cheese (or 1 cup of your cheese of choice....we prefer Velveeta because it's creamier)
1/2 cup milk or 1/2 cup water
2 tablespoons butter or 2 tablespoons olive oil
salt and pepper

Steps:

  • Pre-heat oven to 350 degrees.
  • Cook the Pasta as directed on package.
  • Drain and pour into large Oven-Safe Casserole dish.
  • In a large skillet, saute the diced onion and pepper in 2 Tbsp of butter or Olive Oil.
  • Slice the smoked sausage links into small pieces and add to the skillet with the onion and pepper.
  • When the sausage is browned (most smoke sausages are precooked, so it shouldn't take more than a few minutes to brown).
  • add the contents of the skillet (sausage, pepper and onion) to the pasta in the Casserole Dish.
  • Mix well.
  • Add the cubed or shredded cheese.
  • Add the 1/2 cup milk or water to the mixture.
  • Salt and Pepper if desired.
  • Stir well.
  • Bake in a 350 degree oven for 30-40 minutes (or until it all melts together).
  • I usually serve with Boiled or Mashed potatoes, Saurkraut and Hot Rolls on the side.
  • YUMMY!
  • and believe it or not-- the kids LOVE IT!

Time 1h

Yield 9-10 serving(s)

Number Of Ingredients 14

2 tablespoons butter
6 green onions, chopped
1/2 cup fresh mushrooms, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon horseradish
1/8 cup fresh parsley, chopped
2 cups swiss cheese, shredded (8 oz)
8 ounces wide egg noodles, cooked and drained
1/2 cup milk
1 lb kielbasa or 1 lb smoked sausage, cut into bite size pieces
1 lb fresh broccoli, cleaned, cut into spears
3 large carrots, cleaned, peeled, cut into 1 1/2 inch pieces
6 medium red potatoes, quartered

Steps:

  • In frying pan, melt 1 tbsp butter and sauté onions and mushrooms until tender.
  • Add salt, pepper, horseradish and parsley.
  • In medium bowl, mix together onions, mushrooms, 1 1/2 cups cheese, noodles, and milk.
  • Spoon into a buttered 13x9-inch baking dish.
  • Sauté kielbasa in remaining tablespoon of butter for about 5 minutes.
  • Arrange kielbasa in center of noodles in baking pan.
  • Cook vegetables until just tender and arrange around the kielbasa.
  • Sprinkle remaining cheese over vegetables.
  • Bake at 375°F for 15 minutes or until cheese is melted and casserole is heated through.

Tips:

  • Use high-quality kielbasa: The quality of the kielbasa will greatly impact the flavor of the casserole. Look for a kielbasa that is made with fresh, high-quality meat and has a good smoky flavor.
  • Slice the kielbasa thinly: This will help it to cook evenly and prevent it from becoming dry.
  • Cook the kielbasa before adding it to the casserole: This will help to render some of the fat and add flavor to the dish.
  • Use a variety of cheeses: This will give the casserole a more complex flavor. A good combination is cheddar, mozzarella, and Parmesan.
  • Don't overcook the casserole: The noodles should be cooked through but still have a little bit of a bite to them. Overcooked noodles will become mushy.

Conclusion:

Kielbasa cheesy noodle casserole is a hearty and delicious dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a kielbasa cheesy noodle casserole that is sure to be a hit with your family and friends.
