Be sure to use a baking dish that is deep enough to cover with aluminum foil.

Time 20m

Yield 4

Number Of Ingredients 8

2 teaspoons vegetable oil
1/2 lb fully cooked kielbasa sausage, cut lengthwise in half, then cut crosswise into slices
1 large onion, sliced
1 medium green bell pepper, thinly sliced
8 large eggs
1/2 cup milk
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper

Steps:

  • In 10-inch skillet, heat oil over medium heat. Cook kielbasa, onion and bell pepper in oil about 5 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until blended.
  • Pour egg mixture over kielbasa mixture. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 4 to 5 minutes or until eggs are thickened throughout but still moist.

Tips:

  • Use a non-stick skillet to prevent the hash browns from sticking.
  • If you don't have a non-stick skillet, grease the skillet with cooking spray.
  • Use a large skillet to cook the hash browns in a single layer. This will help them cook evenly.
  • Don't overcrowd the skillet. If you do, the hash browns will steam instead of fry.
  • Cook the hash browns over medium heat. This will help them cook through without burning.
  • Stir the hash browns occasionally to ensure they cook evenly.
  • Once the hash browns are cooked, remove them from the skillet and set them aside.
  • In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  • Add the cooked hash browns, kielbasa, and cheese to the egg mixture.
  • Pour the egg mixture into a greased 9x13 inch baking dish.
  • Bake the casserole in a preheated 350 degree Fahrenheit oven for 30-35 minutes, or until the eggs are set and the casserole is golden brown.
