KIELBASA WITH BAKED APPLES
This is one of my recipes from New Years Day 2006. It was easy to make and the flavor was amazing. I should have made more.

Steps:
- Slice your Kielbasa into bite size pieces. I prefer Beef Kielbasa, but other flavors will also work. Be sure it is cold when you slice it so the juices do not run.
- Lightly coat a 9x14 glass baking dish with unflavored cooking spray.
- Pour one can of your apple pie filling into your baking dish. Spread it around evenly without crushing the apples.
- Arrange your Kielbasa pieces in your dish, then pour your remaining can of apple pie filling over them.
- Cover your baking dish with tinfoil. Insert into your oven and bake at 350 degrees for about 20 minutes.
- After 20 minutes, turn your Kielbasa slices over, arrange your Maraschino cherries among the apples in your baking dish, re-cover with your tinfoil and continue baking another 20 minutes.
- Remove from your oven and serve your Kielbasa in your baking dish. Your guests will bombard you with compliments as they gobble up every single piece of juicy Kilebasa. They'll eat all the apples and cherries too.

KIELBASA WITH GOLDEN ONIONS AND APPLE
Steps:
- Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean. Add remaining tablespoon oil to skillet and brown remaining sausage in same manner, transferring to bowl as cooked.
- Wipe skillet clean again, then cook onions with salt and pepper in butter over moderate heat, stirring occasionally, until golden brown, 15 to 20 minutes. Meanwhile, peel, core, and finely chop apple. Stir apple and broth into onion mixture and simmer briskly, uncovered, stirring occasionally, until apple is tender, 6 to 7 minutes. Add sausage and simmer, stirring, until heated through, about 1 minute.
ROASTED KIELBASA WITH APPLES AND CABBAGE

- Preheat oven to 400 degrees. Toss together cabbage, onions, oil, 3 tablespoons vinegar, and caraway seeds on a rimmed baking sheet; generously season with salt and pepper. Spread into a single layer and roast 25 minutes.
- Gently turn vegetables. Add apples, cut side down, and kielbasa to baking sheet, keeping everything in a single layer. Roast until cabbage is crisp-tender and apples are tender and slightly collapsed, 20 to 25 minutes. Sprinkle with remaining 2 tablespoons vinegar. Slice kielbasa and divide equally among 4 plates with vegetables and apples. Serve with mustard.

- Preheat oven to 350 degrees Fahrenheit.
- Coat a 10-cup baking dish with non-stick cooking spray.
- In large pot of lightly salted boiling water, cook rigatoni until al dente, firm but tender, following package instructions. Drain.
- In large heavy-bottom saucepan, heat olive oil over medium-high heat.
- Add onion and cook until softened, 5 to 7 minutes.
- Stir in flour, cook 1 minute.
- Gradually whisk in milk.
- Bring to boil, stirring continuously; boil until thickened, about 1 minute.
- Remove from heat.
- Set aside 1 cup of cheese for topping casserole.
- Whisk remaining 2 cups cheese, hot-pepper sauce, and salt into mixture.
- In pasta pot, combine rigatoni, cheese sauce, kielbasa and apples into baking dish.
- Cover.
- Bake covered for 30 minutes.
- Uncover and stir.
- Sprinkle with 1 cup remaining cheese and scallions.

- Bring a large pot of lightly salted water to a boil for pasta.
