PASTA WITH RED KIDNEY BEANS

Pasta With Red Kidney Beans image

This recipe is a favorite! Very quick for those days when you get out of work late. I got this years ago from the back of a Ronzoni pasta box. Now I use Barilla Plus multi grain pasta. Taste the pasta from time to time, the Barilla seems to take a bit longer than the regular elbow noodles. So good! Tastes fantastic with corn bread on the side.

Tips:

  • To ensure the best flavor and texture, select fresh, plump kidneys from a reputable butcher or grocery store.
  • Properly clean the kidneys by removing any fat, membrane, or connective tissue. Slice them thinly against the grain for optimal tenderness.
  • Soaking the kidneys in cold water or milk for several hours before cooking helps remove impurities and reduce the strong flavor. Alternatively, you can blanch them in boiling water for a few minutes.
  • Use a heavy-bottomed pot or Dutch oven to prevent the sauce from scorching. Cook over medium heat and stir frequently to ensure even cooking and prevent sticking.
  • Enhance the flavor of the sauce by using a combination of fresh herbs, such as oregano, basil, thyme, and rosemary. Adjust the amount of garlic and chili flakes to suit your taste preferences.
  • Serve the kidneys in Italian sauce over your favorite pasta, such as spaghetti, linguine, or penne. Garnish with freshly chopped parsley or basil for an extra touch of freshness.
