1 tablespoon chili powder
1 cup orange juice
1 tablespoon honey

2 large sweet potatoes, peeled and cut into 1 inch chunks (about 2 pounds)
2 teaspoons butter, softened
2 teaspoons flour
1 (15 ounce) can black beans, drained and rinsed
1/4 cup toasted slivered almonds (optional)

Steps:

  • Put onions, chili powder, orange juice, honey, salt and sweet potatoes in a large, microwave-safe bowl.

1 pound cooked chicken breast, cubed
1 (28 ounce) can diced tomatoes
2 cups water
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon cocoa powder
¼ teaspoon ground cinnamon
¼ teaspoon red pepper flakes
1 ½ tablespoons all-purpose flour
2 tablespoons water
1 cup frozen corn
1 (16 ounce) can kidney beans, rinsed and drained
½ cup chopped fresh cilantro

Steps:

  • Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. 1 leek, thinly sliced
4 cloves garlic, minced
2 tablespoons all-purpose flour
1/2 cup dry white wine
1 1/2 lbs sweet potatoes, peeled and cut into 1 1/2 inch chunks
1 (28 ounce) can tomatoes
2 cups chicken broth or 2 cups vegetable broth
1 teaspoon dried thyme
2 bay leaves
1/4-1/2 teaspoon fresh ground black pepper
1 1/2 cups cooked kidney beans

  • In a large pot, heat the oil over medium heat.
