1 orange bell pepper, seeded and cubed
1 pound cooked chicken breast, cubed
1 (28 ounce) can diced tomatoes
2 cups water
1 teaspoon salt
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon cocoa powder
¼ teaspoon ground cinnamon

1 ½ tablespoons all-purpose flour
2 tablespoons water
1 cup frozen corn

Tips:

  • Choose the right beans: Dried kidney beans are best for this stew because they hold their shape well and have a slightly nutty flavor. If you're using canned beans, be sure to rinse and drain them well before adding them to the stew.
  • Soak the beans overnight: Soaking the beans overnight will help to reduce the cooking time and make them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of vegetables: This recipe calls for sweet potatoes, carrots, celery, and onions, but you can use any vegetables that you like. Other good options include parsnips, turnips, rutabagas, and bell peppers.
  • Don't overcook the vegetables: The vegetables should be tender but still have a little bit of crunch. If you overcook them, they will become mushy and lose their flavor.
  • Add some citrus: The oranges in this recipe add a bright, citrusy flavor that helps to balance out the sweetness of the sweet potatoes and the heartiness of the beans. You can also use lemons or limes.
  • Serve with a side of bread or rice: This stew is hearty and filling, but it can also be served with a side of bread or rice to make it even more satisfying.

Conclusion:

This kidney bean stew with sweet potatoes and oranges is a delicious and nutritious meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a hearty and satisfying stew, give this recipe a try. You won't be disappointed!
