Time 45m

Yield 12-16 serving(s)

Number Of Ingredients 9

1 cup cooked kidney bean, pureed
1 1/2 cups granulated sugar
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon salt
1/2 cup canola oil (can sub unsweetened applesauce)
4 eggs (or equivalent egg whites)
1 teaspoon vanilla
1/2 cup chopped walnuts (optional)

Steps:

  • Spray bottom only of 13x9 inch baking dish with non-stick cooking spray.
  • In mixing bowl, combine all ingredients except nuts.
  • Beat on low speed or by hand, scraping down sides of bowl, until smooth. Stir in walnuts.
  • Bake in 350-degree oven for 25 minutes or until tester inserted in center comes out clean.
  • Cool in pan on wire rack. Cut into squares.

Tips:

  • Use canned kidney beans that have been rinsed and drained well. This will help prevent the brownies from becoming too dense.
  • Mash the kidney beans until they are very smooth. This will help them blend in with the other ingredients and create a more uniform texture.
  • If you don't have a food processor, you can mash the kidney beans by hand using a fork or potato masher. Just be sure to mash them until they are very smooth.
  • Use a dark chocolate cocoa powder for a richer flavor. You can also use a combination of cocoa powder and melted chocolate.
  • Be careful not to overmix the batter. Overmixing can make the brownies tough.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Let the brownies cool completely before cutting them into squares. This will help prevent them from crumbling.

Conclusion:

Kidney bean brownies are a delicious and healthy way to satisfy your chocolate cravings. They are made with simple ingredients and are easy to make. Plus, they are a good source of protein and fiber. So next time you're looking for a sweet treat, give kidney bean brownies a try.
