1 cup half-and-half cream

8 slices center cut or apple wood smoked bacon
4 large eggs, beaten
Warm 1/4 cup half-and-half
1/4 teaspoon grated nutmeg or ground -- eyeball it
1/2 teaspoon coarse ground black pepper -- eyeball it
2 tablespoons butter
8 thick cut sliced whole-grain soft bread, white, or challah
1/2 cup brown mustard
1/2 cup whole berry cranberry sauce
1/2 pound sliced havarti cheese
1 pound sliced ham
1 pound sliced turkey breast
1 1/2 cups medium to dark amber maple syrup

Steps:

  • Heat a griddle pan or large skillet over medium high heat. Cook bacon and remove to paper towels to drain, 5 minutes. Drain off fat. Reheat griddle over medium heat. Make sandwiches in 2 batches.
  • Beat eggs with half-and-half, nutmeg and pepper. Add 1 tablespoon butter to the griddle or pan and melt. Turn 4 slices bread in batter, then add to griddle or pan. Turn bread after it browns, 2 to 3 minutes. Top 2 bread slices with mustard, the other 2 with cranberry sauce. Add 2 slices of cheese and bacon on the cranberry covered bread. Add ham, then turkey to the mustard covered bread. Use a spatula to assemble 2 sandwiches and turn and press gently to set sandwiches in place. Repeat to make 2 more sandwiches. Cut sandwiches from corner to corner.
  • Heat syrup in microwave safe container for 30 seconds. Drizzle syrup over sandwiches at the table.

8 slices bread (thick sliced, white or wheat)
4 slices deli turkey
4 slices deli ham
2 eggs
1/2 cup milk

1/4 teaspoon nutmeg

8 ounces smoked ham, such as black forest, sliced into 9 1/16 inch thick slices
8 ounces roast turkey meat, sliced into 9 1/16 inch thick slices
5 tablespoons strawberry jam, plus
extra strawberry jam, to serve on the side
vegetable oil, for deep-frying

  • To make the Batter: In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, cayenne, and salt.

Always looking for that "one new dish" to add to the Christmas Brunch repertoire, but really, it's good any old time. This may be just a little rich for every day, but whenever you absolutely need to make a party out of breakfast, this'll do it! A basic strata dressed up a little .... easy on the cook, and most of the prep can be farmed out to the kids the night before. Prep time does not include time spent in the refrigerator.

12 slices firm sandwich bread
6 slices deli ham
6 slices alpine lace swiss cheese (Baby Swiss Cheese is a good substitute)
1 tablespoon Dijon mustard
3 tablespoons butter, softened
1/8 cup grated onion
6 eggs
1 cup milk
1/8 cup packed brown sugar
1 dash paprika

Steps:

  • Butter a 9x12 casserole dish and set aside.
  • Mix Dijon mustard, softened butter, and grated onion to blend.
  • Spread mixture thinly on each slice of bread, and place one slice of ham and one slice of cheese within the crusts of two prepared slices to make a sandwich.
  • Cut each sandwich into fourths, and then cut each fourth into triangular halves.
  • Place the little triangles marching in rows lengthwise in the prepared casserole, with points up.
  • In a separate mixing or batter bowl, beat the eggs just until lemony-looking; add milk and brown sugar, and whisk firmly until no lumps from the brown sugar show.
  • Pour egg mix over the prepared sandwiches and cover the casserole with plastic wrap, sealing firmly, and place in refrigerator overnight, or for at least two hours.
  • Preheat oven to 375 degrees F.
  • While oven in preheating, remove casserole from refrigerator, take off plastic wrap and let rest on the counter to lose the "fridge chill".
  • You may want to place the casserole on a rimmed cookie sheet to prevent spills during baking.
  • Just before placing in oven, sprinkle lightly with paprika, more for effect than taste, really.
  • Bake for 60 minutes, or until the center is set and the sandwich points are a nice golden brown.
  • Let rest for ten minutes and then cut into individual serving portions.

Use as much or as little of each ingredient to suit your tastes. The important thing is to make sure that you place cheese on the tortilla first, and then last before you top it with another tortilla. The cheese acts as glue, and it will keep the whole thing from falling apart. Only flip it when the cheese has melted!
