This is a delicious egg salad recipe that I have been preparing for a number of years and it always gets rave reviews and requests for the recipe. Serve on toast with tomato and lettuce.

3 eggs
¼ cup fat-free mayonnaise
¼ cup light sour cream
1 ½ teaspoons Chinese hot prepared mustard
1 stalk celery, finely chopped
5 pimento-stuffed green olives, chopped
1 tablespoon sweet pickle relish
¼ teaspoon paprika
1 pinch red pepper flakes
salt and pepper to taste

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 15minutes. Drain hot water, and run eggs under cold water to chill. Crack shells by rolling on the counter, and peel.
  • Place eggs in the container of a food processor, and briefly pulse to chop. Transfer the eggs to a medium bowl, and stir in the mayonnaise, sour cream, Chinese mustard, celery, olives, and relish. Season with paprika, red pepper flakes, salt and pepper. Taste, and adjust seasoning to your liking.

2 large eggs, hard cooked
3 Tbsp duke's mayonnaise
1/2 tsp yellow mustard
1 Tbsp chopped dill pickle
1 Tbsp chopped bell pepper
1 large spanish olive, chopped
1-2 Tbsp hormel bacon bits with jalapeños
cracked black pepper

Steps:

  • 1. Cook eggs covered in simmering water for 10-12 minutes, remove from heat for 5 minutes, then place eggs in cold water for 10 minutes before peeling. Remove shells and mash eggs with a fork in a mixing bowl.
  • 2. Stir in mayonnaise, mustard, finely chopped vegetables, and jalapeño bacon bits. Season with cracked pepper as desired. Refrigerate if not eating immediately.

2 can(s) 11 oz. each corn, drained
1 can(s) 16 oz black beans rinsed and drained
1/2 cup(s) thinly sliced green onions
2 - medium ripe avocados peeled and diced
1 tablespoon(s) lime juice
CILANTRO DRESSING
1 1/2 cup(s) mayo
2/3 cup(s) salsa (whatever is your fave)
2 tablespoon(s) lime juice
1/2 teaspoon(s) cumin
1/2 teaspoon(s) chili powder
1 1/4 cup(s) minced fresh cilantro

Steps:

  • Place the romaine in a large salad bowl. Arrange the egg slices on top. Top with tomatoes. mix the corn, beans and onions and spoon on top of the tomatoes. Toss the avocados with lime juice and spoon over the corn layer.
  • For dressing, in a bowl, mix the mayo, salsa, lime juice, cumin and chili powder. Stir in cilantro. Spoon over avocados spreading to sides of bowl. You can garnish with olives and cheese if you want.

2 tablespoons heavy cream
2 teaspoons Dijon mustard
1/4 cup plus 2 tablespoons olive oil
1 head Bibb lettuce, leaves separated, washed and spun dry
3 cups baby red leaf or oak leaf lettuces, washed and spun dry
2 Roma plum tomatoes, peeled, seeded, and finely diced
1 Belgian endive, cut into chiffonade
1/3 pound Gruyere cheese, cut into thin strips
1/3 pound cooked ham, cut into thin strips (about 3/4 cup)
1/4 pound smoked chicken breast or turkey breast, cut into thin strips
2 large eggs, hard boiled, peeled and cut crosswise into thin slices
Chopped chives, for garnish, optional
Chopped parsley leaves, for garnish, optional

Steps:

  • In a small bowl, combine the shallots and vinegar. Let sit for 10 minutes. Add the cream and mustard, and whisk to combine. Add the oil in a steady stream and whisk until emulsified. Season to taste with salt and pepper.
