1 large flour tortilla
4 ounces Cheddar, shredded
2 ounces grilled white onion
1 ounce grilled sliced jalapeno
1 ounce diced cooked bacon
One 4-ounce all-beef hot dog
4 ounces cooked seasoned thin french fries
4 ounces Red Chili, recipe follows
1 ounce sour cream
10 pounds ground beef
One 100-ounce can spiced chili beans
One 100-ounce can diced tomatoes
One 100-ounce can tomato sauce
6 ounces chili powder
6 ounces granulated garlic
6 ounces diced onion
4 ounces ground cumin
2 ounces beef bouillon
1 ounce red pepper flakes
2 ounces seasoned salt
1 ounce ground black pepper

Steps:

  • Lay tortilla out and place cheese, onion, jalapeno and bacon in center of tortilla evenly, leaving room at each end to tuck in and roll into a burrito. Cut hot dog in half lengthwise, not cutting all the way through, then butterfly the hot dog open and add to burrito. Top with the french fries, Red Chili and sour cream and roll it up burrito style!
  • Brown meat in a very large pot, then add the chili beans, tomatoes, tomato sauce, chili powder, granulated garlic, onion, cumin, bouillon, red pepper flakes, salt and pepper. Stir together and let simmer for 30 minutes.

Our family loves chili dogs... and of course chili... being diabetic myself, I wanted to cut the carbs but still have the flavor of a chili dog... so my daughter Noel, her children and I came up with this recipe.... we have had it many times and we all enjoy it each and every time we have it! It is a healthier chili than most......

Number Of Ingredients 20

CHILI
1 large each: red and white or yellow onion (chopped)
1 large green bell pepper (chopped)
8 large tomatoes (chopped large) or use two large cans of tomatoes
1/2 c fresh cilantro (chopped) (also include finely chopped stems)
2 large yellow and green zucchini (chopped to desired sizes)
6 clove garlic (chopped to desired size)
3 lb favorite ground beef (pork or turkey works too) browned
8-10 hot dogs of choice (cut into round coins and browned)
2-3 qt pasta sauce of your choice
1 can(s) (12 ounces) tomato paste (added to pasta sauce)
1 tsp each: garlic powder, ground black pepper, cayenne pepper
3 Tbsp ground cumin powder
1-2 Tbsp ground chili powder
1-2 can(s) each: pinto beans, black beans and butter beans (use one or two cans of each kind according to your liking of beans) (you can also use kidney beans)
OPTIONAL INGREDIENTS
1 tsp sea salt (or to taste for the chili)
yellow mustard (for garnish and to taste)
raw onion (for garnish and to taste)
hot dog coins (for garnish)

Steps:

  • 1. Chop the Onions. (Set aside some of this onion for garnish/serving.... optional)
  • 2. Chop the green peppers.
  • 3. chop the cilantro and tomatoes. Mix them together with onions and spices. Set aside until needed.
  • 4. Chop the Zucchinis.
  • 5. Chop the garlic.
  • 6. Saute the zucchini and garlic in skillet.
  • 7. Brown the ground beef in skillet.
  • 8. Brown the hot dog coins.
  • 9. In a large pot cook together the veggies that are not cooked yet... when they are cooked. Add the tomato sauce. Simmer about 15 minutes on medium - low stirring occassionally.
  • 10. Mix together all of the cooked ingredients.
  • 11. Add the canned beans.
  • 12. Simmer together about 15 minutes stirring occassionally on medium low heat.
  • 13. While this is simmering we sometimes make grilled cheese sandwiches.... but not really needed... I don't eat bread very often myself.
  • 14. Scoop some chili into bowls. Garnish with a swirl of mustard, some chopped onion and a few slices of the hot dog!!! Enjoy!

8 slices center cut or other lean, thick-cut, smoky bacon
1 pound ground lean beef
2 hot dogs, beef or pork, diced
2 tablespoons chili powder
1 tablespoon grill seasoning (recommended: Montreal Seasoning by McCormick)
2 teaspoons Worcestershire, eyeball it
1 teaspoon plus 1 tablespoon hot sauce, eyeball it, divided
2 tablespoons ketchup
Vegetable oil, for drizzling
4 slices deli sliced Cheddar
1 sack (16 to18 ounces) crispy style frozen potato fries
2 tablespoons butter
3 cloves garlic, finely chopped
3 tablespoons chives, a handful
Salt
1/2 cup chili sauce
4 kaiser rolls, split
1/4 head iceberg lettuce, shredded
1/4 cup chopped cilantro leaves
1/2 lime, juiced

Steps:

  • Preheat broiler to high.
  • Place bacon on slotted broiler pan. Cook bacon 10 inches from the heat and cook 3 to 4 minutes on each side until crisp then adjust oven to bake setting for temperature recommended on fries packaging.
  • While bacon cooks, make the burgers. Preheat a large nonstick skillet over medium high heat. Mix beef with diced dogs, chili powder, grill seasoning, Worcestershire, 1 teaspoon of hot sauce and ketchup. Form 4 large patties. Add a drizzle of oil, 1 turn of the pan and add the patties. Cook burgers 6 minutes on each side, then top with 2 slices bacon and 1 slice of cheddar, each. Turn pan off, cover with loose foil tent and let cheese melt, 1 to 2 minutes.
  • While the burgers cook, add fries to oven and cook until extra-crisp. Remove from oven. Place butter, 1 tablespoon hot sauce and garlic in a small dish and microwave on high 20 seconds then transfer fries to a large bowl. Toss fries with garlic-hot sauce butter and chives and season with salt, to taste.
  • Slather chili sauce on the tops of split keiser rolls. Place bacon chili-cheese burgers on bun bottoms and top each burger with lettuce, cilantro, and lime juice. Set bun tops in place. Pile fries alongside and serve.

1 large onion, finely chopped
