1 pound boneless skinless chicken breasts, cubed
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) chili beans, undrained
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 package (13-1/2 ounces) tortilla chips
1-1/2 cups shredded Mexican cheese blend

Steps:

  • In a large skillet coated with cooking spray, saute chicken until no longer pink. Add tomatoes; cook over medium-high heat for 3 minutes or until tomato juice is reduced. Stir in the beans, paprika, cumin and cayenne; cook for 5 minutes or until heated through., Arrange the tortilla chips on 2 large microwave-safe plates; sprinkle each with 1/4 cup cheese. Top with chicken mixture and remaining cheese. Microwave, uncovered, on high for 25-30 seconds or until cheese is melted.

Number Of Ingredients 15

4 to 6 ounces good-quality tortilla chips
8 ounces grated Cheddar Jack cheese (about 1 1/2 cups)
2 cups chili, recipe follows, heated
4 pounds ground beef
6 cloves garlic, minced
Two 8-ounce cans tomato sauce
One 6-ounce can tomato paste
1/4 cup chili powder, or more as desired
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper, or more as desired
Two 15-ounce cans kidney beans, drained and rinsed
Two 15-ounce cans pinto beans, drained and rinsed
1/2 cup masa harina (corn flour) or regular cornmeal

Steps:

  • Preheat the oven to 325 degrees F.
  • On an ovensafe plate, arrange some of the chips in a single layer, overlapping them slightly. Sprinkle on a good layer of cheese, then add a layer of the chili, then another round of chips, cheese and chili. Keep going until you feel you've successfully built Mount St. Nacho!
  • Put the plate in the oven and heat the nachos until the cheese is totally melted, 4 to 5 minutes. Then dive right in and devour them.
  • In a large, heavy pot, brown the ground beef with the garlic over medium heat until the beef is totally cooked, 8 to 10 minutes. Drain off most of the excess fat, leaving a little behind for moisture and flavor. Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally; if the liquid level seems low, add up to 1 cup water to keep it from burning.
  • After an hour, stir in the kidney and pinto beans. In a small bowl, combine the masa harina with 1/2 cup water and stir together with a fork until it's smooth. Pour the masa mixture into the chili. Stir together well, then taste the chili and adjust the seasonings. Simmer the chili for another 10 minutes to thicken, then turn off the heat and let it cool.
  • Fill freezer bags with 2-cup portions and freeze them flat for easy stacking (or freeze in other freezer-safe containers).

If you like your chili with a kick, this meaty, spicy one has it. The recipe calls for "chili-grind" meat, a cut you can ask your butcher to grind. The restaurant uses Bass ale but feel free to use any ale you like. This is the chili that I make for pot-lucks, in part because it is requested, but also I can be pretty sure it will be consumed before the party is over. The recipe was developed by chef Leonard Schwartz at the 72 Market Street Restaurant in the Venice community of Los Angeles, California. The restaurant is no longer there but many of their recipes live on in print. For example, you can find the restaurant's meat loaf recipe in the New Basics Cookbook by Rosso and Lukins. This chili recipe was published in the Los Angeles Times.

1/4 lb bacon, diced
3 lbs beef stew meat, chili grind
1 1/2 lbs pork butt, chili grind
2 tablespoons peanut oil
1 2/3 cups white onions, chopped
2 jalapenos, diced
1 3/4 teaspoons oregano
1 teaspoon cumin
2 1/2 tablespoons fresh chili peppers, minced, such as New Mexico serranos or 2 1/2 tablespoons california green chilies
2 1/2 tablespoons ground pastilla chilies
1 1/4 tablespoons cayenne
1 1/2 tablespoons garlic, chopped
salt (to taste)
1 (16 ounce) can tomato paste
1 lb plum tomato, diced
6 tablespoons water
1 1/4 cups ale
3/4 tablespoon lemon juice

Steps:

  • Cook bacon in a skillet until crisp; strain and reserve drippings for another use, set bacon aside.
  • Saute beef and pork in a hot skillet with peanut oil until brown; add onions and jalapenos, cook until onions are tender.
  • Add oregano, cumin, New Mexico and pastilla chiles, cayenne, garlic and salt to taste; stir then add tomato puree, tomatoes, water and ale.
  • Bring to a boil, then reduce heat to a simmer, simmer until the meat is tender, about one hour.
  • Add bacon and sprinkle with lemon juice just before serving.

2 tbsp olive oil
1 onion, sliced
2 mixed peppers, sliced (use red, yellow or orange peppers)
2 large garlic cloves, crushed
1 small bunch of coriander, stalks finely chopped and leaves roughly chopped
½ tbsp ground coriander
1 tbsp ground cumin
1-2 tsp chipotle paste
400g can chopped tomatoes
1 tbsp tomato purée
300ml chicken stock
1 small cinnamon stick
4 chicken thighs, bone-in
400g can black beans
400g can kidney beans, drained
1 tbsp red wine vinegar
20g dark chocolate (at least 70% cocoa solids)
cooked rice or tortilla chips
guacamole and soured cream (optional)

Steps:

  • Heat the oil in a casserole dish over a medium heat, and fry the onion and peppers for 10-12 mins, or until softened. Add the garlic, coriander stalks, ground coriander, cumin and chipotle paste, and fry for 2 mins more. Tip in the tomatoes, tomato pureé and stock, then add the cinnamon stick. Nestle the chicken thighs into the mixture, then reduce the heat to low and simmer, covered, for 45 mins or until the chicken is tender. Remove the chicken from the casserole and transfer to a chopping board, then shred the meat off the bone using two forks.
  • Return the shredded chicken to the pan, then tip in the black beans along with the liquid from the can, the drained kidney beans, vinegar and chocolate. Stir well to combine all of the ingredients and melt the chocolate, then turn the heat up to medium and simmer, uncovered, for 10-15 mins, or until the mixture has thickened slightly.
  • Remove the cinnamon stick, season to taste and stir though most, or all of the coriander leaves (you can reserve a few leaves to scatter over at the end, if you like). Serve the chilli with rice or tortilla chips, topped with guacamole and soured cream, if using, and scatter over any remaining coriander.

1 cup diced chorizo sausage
1 cup chopped white onion
1 teaspoon minced garlic
1/4 teaspoon salt

2 tablespoons all-purpose flour
1 (14 ounce) can diced tomatoes, drained
1 cup canned chopped mild green chili
1 cup heavy cream
2 cups grated medium cheddar
1 1/2 cups grated monterey jack cheese
18 ounces tortilla chips
pickled jalapeno pepper (optional)
1 Hass avocado, peeled, seeded, and diced
chopped grilled green onion, for garnish
chopped fresh cilantro leaves, for garnish
sour cream, for garnish

Steps:

  • For queso: In a large pot, heat the oil over medium heat. Add the chorizo and cook until fat starts to render, about 4 minutes. Add the onions and cook, stirring, until very soft, about 6 minutes. Add the garlic, salt, and cayenne and cook, stirring, for 30 seconds. Add the flour and stir for 2 minutes.
  • Add the tomatoes and chopped chiles, and cook, stirring, for 1 minute. Slowly add the cream and stir until thick, 3 to 4 minutes.
  • Add the cheeses and cook, stirring, until melted and well incorporated. Remove from the heat and adjust the seasoning, to taste.
  • Spread the corn chips in a thick layer across a large heat-proof tray or decorative platter.
  • Ladle the chili con queso over the chips in an even layer. If desired, top with jalapeno slices. Evenly arrange the chopped avocados, green onions, and cilantro over the cheese layer and top with dollops of sour cream. Serve immediately.
