1 cup water
1/2 cup quinoa, rinsed
2 teaspoons grated lime zest
4 containers (6 ounces each) Key lime pie flavored yogurt
2-2/3 cups sliced fresh strawberries
1/2 cup flaked coconut

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed. Remove from heat; fluff with a fork. Stir in lime zest; refrigerate 30 minutes., Layer 1/3 cup yogurt, 1/3 cup strawberries, 1/4 cup quinoa mixture and 1 tablespoon coconut into four parfait glasses. Repeat layers.

3 tablespoons unsalted butter
3 tablespoons sugar
1/2 cup graham cracker crumbs
1 14-ounce can sweetened condensed milk
1/2 cup fresh lime juice

1 cup chilled whipping cream

2 cups (480 ml) plain Greek yogurt (I use 2%, but you can use any kind you like)
1 tablespoon honey
Finely grated zest of 1/2 lime
1 cup (185 g) cooked quinoa, cooled
8 large strawberries, diced
2 kiwi fruit, peeled and diced

Steps:

  • In a small bowl, whisk together the yogurt, honey, and lime zest.
  • Place 4 small (6-ounce/180-ml) juice glasses on a work surface and put 2 tablespoons of the quinoa in the bottom of each glass. Add 1/4 cup (60 ml) of the yogurt to each glass, followed by about 2 tablespoons of the diced strawberries and kiwi.
