My favorite dessert to make has to be cheesecakes. This is just one of many that gets a lot of requests. It is sweet and tangy just like its more familiar cousin, the pie. I usually serve it with whipped cream and lime slices. Enjoy!

1 ½ cups graham cracker crumbs
6 tablespoons butter, melted
24 ounces cream cheese, softened
1 cup white sugar
1 tablespoon cornstarch
3 eggs
1 tablespoon grated lime zest
⅔ cup key lime juice

Steps:

  • Combine cookie or graham cracker crumbs with butter or margarine. Press into bottom and partially up sides of 9 inch springform pan. Refrigerate.
  • In a large bowl, beat with an electric mixer the cream cheese, sugar, lime peel, and cornstarch until smooth and fluffy. Beat in eggs one at a time, blending just until smooth. Add key lime juice with mixer on low. Finish mixing by hand. Do not over beat, or cake will crack during baking. Pour batter into prepared crust.
  • Bake at 300 degrees F (150 degrees C) for 55 to 65 minutes, or until set. To minimize cracking, place a shallow pan half full of hot water on lower rack during baking.
  • Turn oven off, and let cheesecake stand in oven 30 minutes with the door open at least 4 inches. Remove from oven. Refrigerate cake overnight, and up to three days.

Steps:

  • Whisk together cracker crumbs, sugar, and salt. Stir in butter until mixture resembles wet sand and holds together when squeezed. Press evenly into the bottom of a 9-inch springform pan. Freeze until firm, 15 minutes.

4 (8 ounce) packages cream cheese, softened

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease the bottom of a 9-inch springform pan.
  • Sprinkle graham cracker crumbs into the bottom of the prepared pan.
  • Beat cream cheese and sugar with an electric mixer in a large bowl until smooth. Add eggs one at a time, allowing each egg to blend into the cream cheese mixture before adding the next.

2 tablespoons sugar, plus 1 1/4 cups, plus 1/4 cup
1 cup graham cracker crumbs
1 envelope unflavored gelatin
3/4 cup key lime juice
4 eggs, at room temperature
2 egg yolks, at room temperature
2 tablespoons grated key lime zest
1 pound cream cheese, at room temperature
2 egg whites, at room temperature
Pinch of salt
2 cups sweetened whipped cream
1 cup simple syrup, (1 cup sugar, 1 cup water heated until sugar dissolves)
Rind of 2 limes, julienned
12 sprigs fresh mint

Steps:

  • In a mixing bowl, combine the melted butter, 2 tablespoons of the sugar and graham cracker crumbs. Mix well. Press the crust firmly over the bottom of a 9-inch spring form pan. Set aside.
  • In a saucepan dissolve the gelatin the key lime juice, about 5 minutes. Add 1 1/4 cups of the sugar, eggs, egg yolks, and lime zest. Mix well. Over medium heat, cook until the mixture thickens and is pudding like, about 10 minutes. Remove from the heat.
  • In the bowl of an electric mixer, fitted with a paddle attachment, beat the cream cheese until smooth. With the mixer running, add the lime mixture slowly and beat until smooth. Remove the mixture and turn into a bowl and cool completely. Cover with plastic wrap and refrigerate until chilled, stirring every 10 minutes.
  • In a bowl of an electric mixer with a whip attachment, place the egg whites, pinch of salt and remaining 1/4 cup of the sugar. Whip on medium high until stiff peaks form. Remove the lime and cheese mixture from the refrigerator. Fold the egg whites into the lime mixture and blend thoroughly. Pour the mixture into the prepared crust. Cover with plastic wrap and refrigerate until set, about 4 hours.
  • Remove from the refrigerator. Run a sharp knife along the sides of the pan and remove the spring-form. Spread the whipped cream evenly over the top of the cake.
  • For the candied zest: In a saucepan over medium heat, combine the simple syrup and the lime zest. Bring the liquid to a simmer and cook for 3 to 4 minutes. Remove the zest from the liquid and cool on parchment paper.
  • Cut the cake into individual servings. Garnish with candied lime zest and mint sprigs.

2 teaspoons unflavored gelatin powder (from one 1/4-ounce packet)
1/4 cup sugar
2 8-ounce packages cream cheese, at room temperature
1 14-ounce can sweetened condensed milk
1/2 teaspoon vanilla extract
2 ounces semisweet chocolate, chopped

Steps:

  • Make the crust: Line a 9-by-13-inch baking dish with foil, leaving an overhang. Put the butter and chocolate in a microwave-safe bowl; microwave in 30-second intervals, stirring, until melted and smooth. Pulse the cookies with the sugar in a food processor until finely ground. With the motor running, pour in the warm melted chocolate mixture and process until combined. Press the crumb mixture into the bottom of the prepared pan and refrigerate while you make the filling.

2 c graham crackers
1/4 c sugar
1/2 c butter
FILLING
6 Tbsp key lime juice
1 pkg 1 packet unflavored gelatin
2 1/2 c heavy cream divided
10 oz white chocolate chopped
3 pkg (8 ounces) cream cheese
1 c sugar
1 1/2 Tbsp lima zest
1 1/2 oz white chocolate grated or shaved for garnish
- candied lime or peel fr garnished
CANDIED LIME
4 limes
2 c sugar
2 c water

Steps:

  • 1. Crust Mix together the cracker, sugar, and butter. Press the mixture into bottom and 1-inche up the sides of a 10-inch spring form pan. Set aside
  • 2. Filling In a medium saucepan over medium heat, add the lime juice. Whisk in the gelatin and 1/2 cup of the heavy cream and bring to a simmer. Remove the pan from the hear. Add 10 ounces of chopped white chocolate, stir until smooth. Allow to cool.
  • 3. Using a electric mixer, blend together the cream chess, sugar and lime zest in a medium bowl until smooth. Slowly beat into the cooled white chocolate mixture into cream cheese mixture.
  • 4. Using clean, dry beaters, beat the reaming 2-cups heavy cram in a small bowl until it forms soft peaks. Fold it into the white chocolate mixture and pout into the pie crust. Cover and freeze overnight.
  • 5. Remove from freezer and run a sharp knife around inside of springform pan to help loosen the pie. Release springform from the bottom of the pan and transfer the pie to serving plate. Grate or curl the white chocolate over the top and garnished with candied limes. Cut into wedges with a knife that has been dipped into hot water and serve.
  • 6. Candied Limes Bring a medium-sized saucepan of water to boil over medium heat. Add the lime glance for a couple of minuets. Set aside Put the limes in another medium saucepan and cover with equal parts of sugar and water. Simmer, covered over low heat for 1 hour. Remove the limes and drain until almost dry. Roll into sugar and set aside to dry.
  • 7. You can also garnished with fresh limes, squeezing the lime over the sliced cheesecake give it a little zing...

1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
Filling
2 (8-ounce) packages cream cheese, room temperature
2/3 cup plus 3 tablespoons sugar
2 large eggs
3 tablespoons fresh Key lime juice or regular lime juice

  • For lime custard:
  • Whisk all ingredients in heavy small saucepan over medium heat until custard thickens and boils for 30 seconds, about 8 minutes. Cool to room temperature, stirring occasionally (mixture will thicken).

1 1/4 cup graham cracker crumbs (about 7 graham crackers)
1 tablespoon sugar
1/2 cup toasted coconut flakes*
5 tablespoons butter, melted
For the Cream Cheese mixture:
2 (8 ounce) packages cream cheese mixture, room temperature
1/2 cup sugar
1/4 cup + 2 tablespoons key lime juice
2 tablespoons heavy whipping cream
2 eggs, room temperature
For the garnish:
Lime Zest
Sliced Key limes
Shredded coconut
Whipped cream

Steps:

  • Preheat oven to 350 degrees F. Line a 9x9 inch pan with foil and lightly spray with oil. Mix the graham cracker crumbs, sugar, and coconut together with melted butter. Press firmly into the bottom of the pan. In the bowl of a standing mixer with the paddle attachment, whip the cream cheese and sugar together until smooth. Mix in the lime juice and whipping cream. Mix in the eggs one at a time until combined. Pour over crust and bake for 22-24 minutes until center is set. Let cool in pan on a cooling rack for 1 hour and then refrigerate at least 3 hours before cutting. Serve garnished with whipped cream, coconut, lime zest, and lime slices. NOTES *You can toast coconut on a baking sheet in a 350 degrees F for 5-8 minutes.

1/2 cup butter or margarine, softened
1 cup Gold Medal™ all-purpose flour
1 tablespoon grated lime peel
1 teaspoon vanilla
4 packages (8 oz each) cream cheese, softened
3/4 cup powdered sugar
1/2 cup granulated sugar
2 eggs
2 tablespoons grated lime peel
2 tablespoons Key lime juice
2 tablespoons cornstarch
1 cup sour cream
1 cup granulated sugar
2 teaspoons finely shredded lime peel
2/3 cup Key lime juice
2 tablespoons firm butter or margarine, cut up
2 eggs, slightly beaten

Steps:

  • Heat oven to 400°F. Grease bottom and side of 10-inch springform pan. In medium bowl, beat 1/2 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed until smooth. Beat in remaining crust ingredients on low speed just until crumbly. Press evenly in bottom of pan.
  • Bake 12 to 14 minutes or until light golden brown. Cool 10 minutes. Wrap outside of pan, bottom and side, with heavy-duty foil. Reduce oven temperature to 325°F.
  • In large bowl, beat cream cheese, powdered sugar and 1/2 cup granulated sugar with electric mixer on medium speed until smooth. Beat in 2 eggs, one at a time, on low speed just until well blended. Beat in 2 tablespoons lime peel, 2 tablespoons lime juice and the cornstarch. Fold in sour cream until blended. Pour over crust.
  • Bake 1 hour 10 minutes to 1 hour 20 minutes or until side of cheesecake is set and slightly puffed but center still moves slightly when pan is tapped. Cool in pan on cooling rack 15 minutes.
  • Run knife along side of pan to loosen cheesecake. Refrigerate uncovered about 3 hours or until chilled. Cover and refrigerate at least 9 hours but no longer than 48 hours.
  • In heavy 1-quart saucepan, mix 1 cup sugar, 2 teaspoons lime peel and 2/3 cup lime juice with wire whisk. Stir in 2 tablespoons butter and 2 eggs. Cook over medium heat about 8 minutes, stirring constantly, until mixture thickens and coats back of spoon (do not boil). Run knife along side of pan to loosen cheesecake; remove side of pan. Spread curd over top of cheesecake. Store in refrigerator.

2 teaspoons vanilla
1 cup Gold Medal™ all-purpose flour
1 package (8 oz) cream cheese, softened

1 whole egg
3 teaspoons grated lime peel
3 oz white chocolate baking bars or squares, melted
4 egg yolks
3/4 cup granulated sugar
1 tablespoon cornstarch
3/4 cup water
1/4 cup Key lime juice
2 tablespoons butter
Lime slices, if desired

Steps:

  • Heat oven to 325°F. Lightly grease 8-inch square pan with shortening or cooking spray.
  • In medium bowl, beat 1/2 cup butter and the brown sugar with electric mixer on medium speed until creamy. Add 1 teaspoon of the vanilla; beat until blended. On low speed, beat in flour until blended. Press dough into pan. Bake 25 minutes or until golden brown. Cool on cooling rack.
  • Meanwhile, in large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until creamy. Add whole egg, 1 teaspoon of the lime peel and remaining 1 teaspoon vanilla; beat well. Add melted white chocolate; beat until combined. Cover; refrigerate.
  • In 2-quart saucepan, mix egg yolks, granulated sugar and cornstarch; gradually stir in water and lime juice. Cook over medium-low heat, stirring constantly, until mixture thickens and coats the back of a metal spoon. Remove from heat; stir in 2 tablespoons butter and remaining 2 teaspoons lime peel. Cool 10 minutes.
  • Spread cream cheese filling over baked crust. Pour lime curd over filling.
  • Bake 40 minutes or until edges are lightly browned. Cool completely on cooling rack. Chill 2 hours. Cut into 4 rows by 4 rows. Garnish with lime slices. Store in refrigerator.

1/2 teaspoon finely grated fresh key lime zest
1 cup freshly squeezed key lime juice
1 tablespoon pure vanilla extract
1 cup real sour cream
1 (5 1/8 ounce) package instant vanilla pudding (Jell-O)
4 eggs
fresh whipped cream
cookie crumbs
finely grated fresh key lime zest
key lime slice (or twist)

Steps:

  • NOTE: A HAND-HELD MIXER WORKS BEST FOR BLENDING THE FILLING, PAUSING AT INTERVALS TO SCRAPE SIDES OF MIXING BOWL. ALLOW A MINIMUM OF 4 HOURS FOR BAKED CHEESECAKE TO REFRIGERATE AND SET BEFORE SERVING. (STEP ONE): TEMPER 32 ounces Philadelphia cream cheese (four 8 ounce bricks) until room temperature is reached (about 1 1/2 hours); GRATE the outer green peel from enough key limes to yield 1/2 teaspoon plus desired amount for final garnish, using the finest shred grate of a cheese grater to produce fine zest flakes; SQUEEZE enough key limes to yield 1 cup juice.

  • POUR in 1 cup freshly squeezed Key lime juice and 1 tablespoon pure vanilla extract while mixing on lowest speed; MIX in 1 cup real sour cream; ADD 1 (5.1 ounce) package Jell-0 Vanilla Instant Pudding mix gradually while mixing on highest speed until well blended and lump-free; BEAT 4 eggs in a separate bowl, then add to mixture, beating on lowest speed until blended, without over-mixing or creating air bubbles (pause to scrape sides of bowl if necessary).
  • POUR the cheesecake batter carefully into the springform pan containing crust mixture; SMOOTH mixture in swirls from edges of pan to center until level, using a flexible spatula.
  • BAKE cheesecake at 375°F for 15 minutes; REDUCE oven temperature to 260 F.; CONTINUE baking cheescake for 1 hour for a 10-inch pan, or 1 hour and 7 minutes, for a 9-inch pan.
  • REMOVE cheesecake carefully from oven; GENTLY run a sharp knife around edges of cheesecake in springform pan to loosen; LEAVE cheesecake in springform pan and allow to cool completely on a wire rack; REFRIGERATE cheesecake in the springform pan for at least 4 hours to set; REMOVE side pan carefully.
  • SPRINKLE a light border of cookie crumbs on cheesecake; TOP with a dollop of fresh whipped cream (use a pastry bag with decorator tip); GARNISH each serving with a pinch of finely grated fresh key lime zest and/or a fresh key lime twist if desired.

CRUST LAYER
1 1/2 c graham cracker crumbs
3 Tbsp granulated sugar
1 c ground pecans
8 Tbsp melted butter
FIRST LAYER
1 can(s) 14 ounce sweetened condensed milk
8 oz pkg. softened cream cheese
1 Tbsp wondra flour( or all purpose)
1/2 c fresh squeezed key lime juice
1 Tbsp grated lime zest
1 Tbsp granulated sugar
3 large egg yolks, room temperature
SECOND LAYER
16 oz cream cheese, room temperature, softened
2 can(s) 14 ounce sweetened condensed milk
1 c key lime juice, freshly squeezed
1/2 c granulated sugar

Steps:

  • 1. TO MAKE THE CRUST: Mix all crust ingredients together, and pour into a 9 inch springform pan. Press crust mixture firmly into pan and at least 1 inch up the sides of pan. Freeze for at least 20 minutes. Or you can bake in pre-heated 350 degree oven for 8 minutes, and let cool before filling with pie mixture.
  • 2. FIRST LAYER: In a medium size bowl combine all ingredients listed in first layer and beat until smooth and creamy. Pour mixture into prepared crust.
  • 3. Bake in a preheated 350 degree oven for about 25 minutes, or until filling is set. Let cool to room temperature. Then prepare second layer.
  • 4. SECOND LAYER: In a medium size bowl, beat the cream cheese until light and fluffy, then add remaining ingredients and beat until smooth and creamy. Pour mixture over the baked and already cooled layer, and smooth out the top with a spatula.
  • 5. Cover with plastic wrap or foil, and allow to chill for at least 4 hours, or over night. If you can wait that long. Then release the sides of pan, and place on a serving platter, and cover top with cool whip if desired, add extra grated lime zest for garnish if desired.
  • 6. FYI: If fresh key limes are not available, you can use bottled KEY LIME JUICE, but fresh is much better. Key Lime juice has that extra kick that is missing in the regular limes.IT IS EASIER TO ZEST LIMES FIRST BEFORE EXTRACTING THE JUICE. TO EXTRACT MORE JUICE FROM THE LIMES PLACE THEM IN THE MICROWAVE FOR ABOUT 30 SECONDS then cut in half and extract juice. This is what the inside of the cheesecake looks like and the key limes really adds a tart flavor.

  • Pour the filling over the crust. Bake the cheesecake in the preheated oven for 15 minutes, reduce the temperature to 250 degrees F (120 degrees C) and bake for 50 to 55 minutes longer, or until center is barely set. Let the cheesecake cool on a rack, then chill it, covered, overnight. Remove the cheesecake from the pan and transfer it to a cake stand.

4 oz florida key west key lime juice
1-8oz pkg philadelphia cream cheese (room temperature)
1-8oz pkg frozen cool whip extra creamy-thawed
1/3 c sugar (i use splenda)
8 or 9" graham cracker crust or 12 individual cupcakes

Steps:

  • 1. First of all you can buy the pre-made pie crust or pre-made individual crusts. The individuals come in a six pack so if you are making a single recipe you will need two of the six packs. If you would like to make your own crusts for individual servings, you will need one pack of graham crackers (crushed) 1/4 cup butter/margarine 1/4 cup sugar/splenda. Melt butter and mix with crushed graham crackers and sugar/splemda. Put about one tablespoon of the mixture in each cupcake liner and use the end of a measuring cup to press into the cupcake paper.
  • 2. Beat cream cheese until smooth. Gradually beat in sugar. Gradually beat in Key Lime juice until smooth. FOLD in whipped topping, blending well.
  • 3. Spoon into crust(s) (can pipe if doing individuals for that personal touch) Chill until set (approx 4 hours) Again, these freeze well and can be eaten frozen. DOT'T FORGET TO TOP WITH REDI WHIP OR COOL WHIP. Hope you all enjoy them as much as I do. Awesome on a hot summer night or anytime.
