I first tried this deliciously different bread at a friend's house, and she graciously shared the recipe with me. It's so easy to make and it tastes absolutely yummy! -Joan Hallford, North Richland Hills, Texas

Yield 2 loaves (16 slices each).

Number Of Ingredients 14

2/3 cup butter, softened
2 cups sugar
4 large eggs, room temperature
2 tablespoons grated lime zest
2 tablespoons Key lime juice
1 teaspoon vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 cup 2% milk
1 cup chopped walnuts
GLAZE:
2/3 cup confectioners' sugar
1 to 2 tablespoons Key lime juice

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Beat in lime zest, juice and vanilla. Combine flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Fold in walnuts. , Transfer to 2 greased 9x5-in. loaf pans. Bake 50-55 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans to wire racks. , Combine confectioners' sugar and enough lime juice to reach desired consistency; drizzle over warm bread. Cool completely., Freeze option: Do not make glaze. Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature. Prepare glaze as directed.

This bread is AWESOME! I use fresh limes but you can use the bottled juice if you prefer, it does not have to be "key Lime". Wonderful with a nice cup of hot tea or coffee.

2/3 c butter ( softened)
2 c granulated sugar
4 large eggs
2 Tbsp key lime juice
2 Tbsp lime zest
1 tsp vanilla extract
3 c all-purpose flour
2 1/2 tsp baking powder
1 tsp salt
1 c milk
1 c chopped walnuts
GLAZE
2 Tbsp key lime juice
2/3 c granulated sugar

Steps:

  • 1. preheat oven to 350 degrees
  • 2. Cream butter and sugar, add the eggs and beat well. pour in the juice, zest and vanilla, combine well and set aside
  • 3. In another bowl, combine flour, baking powder and salt. add alternating with the milk to the creamed mixture until all are combined. add walnuts and mix until well combined,
  • 4. Divide batter into 2 bread pans that have been sprayed with non stick spray ( I use Pam baking spray) Bake in preheated oven for 50-60 minutes or until golden brown and a tooth pick comes clean. I let mine cool for about 10 minutes in the pans then invert on to my cooling rack.
  • 5. For the glaze mix the juice and the sugar and spoon over warm bread.

Tips:

  • Use fresh key limes for the best flavor. If you can't find key limes, you can substitute regular limes, but the flavor will be slightly different.
  • Zest the key limes before juicing them. This will help release the essential oils and give the bread a more intense lime flavor.
