SHER-A-PUNJAB ONION CHUTNEY

Sher-a-Punjab Onion Chutney image

I begged for this recipe at my favorite Indian restaurant. It is quite unlike any other onion chutney recipe that I've tried. It is surprisingly simple and full of taste. The ketchup and vinegar produce an orange hue and preserve the crunch of the onion. Serve as a garnish with toast. Try it!

CHUNKY KETCHUP

I created this chunky homemade ketchup to jazz up chopped steak sandwiches and hot sausage sandwiches for my family. It's so delicious and fresh-tasting. I gave some to our friends, too, and they enjoyed it on hamburgers and even stuffed peppers. -Susan Stahr, Driftwood, Pennsylvania

Yield Makes about 2 3/4 cups

Number Of Ingredients 9

2 tablespoons (1/4 stick) butter
1 medium onion, finely chopped
2 garlic cloves, minced
1 12-ounce bottle chili sauce
1 9- to 10-ounce jar mango chutney
1/3 cup apple cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 1/2 teaspoons hot pepper sauce (preferably habañero pepper)

Steps:

  • Melt butter in heavy medium saucepan over medium heat. Add onion; sauté until golden, about 5 minutes. Add garlic and stir 1 minute. Stir in chili sauce, chutney, vinegar, Worcestershire sauce, and mustard; bring to boil. Reduce heat to medium-low and simmer until mixture is reduced to 2 3/4 cups, stirring frequently, about 10 minutes. Stir in hot pepper sauce. Transfer sauce to bowl; cool to room temperature, about 1 hour. (Can be made 3 days ahead. Cover; chill. Bring to room temperature before serving.)

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your ketchup chutney will be.
  • Choose the right spices: The spices you use will greatly affect the flavor of your chutney. Experiment with different combinations to find one that you like.
  • Don't overcook the chutney: Overcooking can make the chutney too thick and syrupy. Cook it just until the tomatoes are soft and the chutney has reached the desired consistency.
  • Let the chutney cool completely before storing it: This will help the flavors to meld and develop.
  • Store the chutney in a cool, dark place: This will help it to keep its flavor and quality for up to 6 months.

Conclusion:

Ketchup chutney is a delicious and versatile condiment that can be used on a variety of dishes. It's easy to make and can be customized to your own taste preferences. So next time you're looking for a new way to add flavor to your meals, give ketchup chutney a try. You won't be disappointed!
