Yield 1 pot, 4-5 serving(s)

Number Of Ingredients 4

2 cups corn, cut fresh off the cob or 2 cups frozen corn
2 cups beans, any type (cooked)
water, to cover
salt and pepper

Steps:

  • Add the corn and beans to a large pot with enough water just to cover. Season with salt and pepper and bring to a boil over medium heat.

  • Variations: substitute hominy for the corn. Cook the beans and corn with some chopped potatoes and chopped greens; mash together well. Use any kind of beans; pinto,kidney,black-eyed peas, green peas or pigeon peas. To give the dish more flavor and texture, add some chopped greens, sauteed onions, cubed potatoes or cassava, stew meat or a little curry powder.

Tips:

- Ensure the maize and beans are cleaned and sorted to remove any dirt or debris. This will ensure the final dish is of high quality and free from unwanted particles. - For a more flavorful githeri, use a combination of fresh and dried beans. The dried beans will add a depth of flavor that complements the sweetness of the maize. - If you don't have access to fresh maize, you can use frozen or canned maize. Just be sure to drain and rinse the maize well before cooking. - To make the githeri more nutritious, you can add other vegetables such as carrots, peas, or bell peppers. - If you want a thicker githeri, add less water. For a thinner githeri, add more water. - Serve the githeri with your favorite accompaniments such as kachumbari, avocado slices, or chapati.
