8-10 chicken thighs and/or drumsticks (bone-in, skin on)
2 cups of your favorite bbq sauce
2 tablespoons extra-virgin olive oil (or canola oil)

Steps:

  • Preheat oven to 400 degrees F.
  • Coat the chicken on all sides with olive oil and season with salt and pepper.
  • Place the chicken skin side down on a rimmed baking sheet. Bake for 25 minutes.
  • Remove chicken from oven and turn the temperature of the oven up to 425 degrees.
  • Coat the top of the chicken with barbecue sauce using a basting brush. Use a spatula to flip the chicken over, being careful not to tear the skin. Baste the other side of the chicken, and place back in the oven for 7 minutes.
  • Remove from oven, baste top with barbecue sauce, and place back in oven for 7 more minutes.

8 pieces chicken of your choice (I used bone-in with skin on legs and thighs)
1/2 cup tomato ketchup
2 teaspoons apple cider vinegar
2 tablespoons brown sugar
1 teaspoon minced garlic
2 teaspoons Cajun seasoning (check out our recipe to make your own)
1/4 to 1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Season chicken pieces with the salt and pepper. Whisk together the Ketchup, apple cider vinegar, brown sugar, minced garlic and Cajun seasoning in a bowl. Brush the sauce on all the chicken pieces.
  • Bake in a sprayed 10 inch iron skillet or a regular baking dish in a preheated 400 degree oven for 35 to 40 minutes testing meat with a thermometer to make sure it is cooked before removing from the oven. Internal temperature should reach 165 degrees Fahrenheit for oven baked chicken.

3 cloves garlic, minced
1 medium onion, finely chopped
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 1/2 cups ketchup
1/4 cup apple cider vinegar
2 tablespoons unsalted butter
1 tablespoon Worcestershire sauce
3 1/2 pounds chicken legs and thighs
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.

2 tablespoons vegetable oil, like soy, corn or peanut
1/2 medium Spanish onion, chopped
6 cloves garlic, minced
Pinch of crushed red pepper
1 tablespoon tomato paste
1 (28-ounce) can whole, peeled tomatoes (with puree), pureed
1 cup plus 2 tablespoons red wine vinegar
1 cup firmly packed light brown sugar
1 1/2 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • In a large bowl, mix together the oil, chili powder, paprika, sage, mustard, ginger, and cayenne until a paste is formed.
  • Add the chicken pieces and rub the spice paste all over, including under the skin. Cover with plastic wrap and refrigerate for 2 hours.

  • Add the tomatoes, vinegar, sugar, and salt and bring to a boil.
