"AS CLOSE TO KFC AS I CAN GET IT" FRIED CHICKEN

I've been told by actual KFC chefs that their chicken is actually cooked in a pressure cooker. Time 50m

Number Of Ingredients 11

3 lb whole chicken pieces
24 oz vegetable oil (or 6 cups shortening if using pressure cooking method)
2 c buttermilk
1 large egg
2 2/3 c flour
1 pkg top ramen chicken flavor seasoning (set noodles aside for another use)
2 Tbsp salt
2 tsp msg
1/2 tsp pepper
1/4 tsp sweet paprika
1/8 tsp garlic powder

Steps:

  • 1. Place chicken pieces into a large glass or plastic bowl. Pour enough cold water to cover chicken and add 1/2 cup salt and 2 teaspoons granulated sugar to make a brine. Cover and chill overnight in refrigerator. Remove chicken and discard brine. Rinse chicken thoroughly. Allow chicken to drain, about 20 mins, then pat dry with paper towels.
  • 2. Whisk egg until whites are bubbly and a little frothy while gradually incorporating buttermilk until thoroughly mixed. Combine flour, MSG, Top Ramen seasoning, and other seasonings into a separate mixing bowl, and mix until well blended.
  • 3. Heat oil in fryer or large frying pot to 400 degrees. Meanwhile, dip chicken in buttermilk mixture, then roll in flour mixture, a few pieces at a time. Let pieces rest about 15 - 20 mins to allow breading to set.
  • 4. Carefully lower chicken pieces into hot oil using fry basket or heavy slotted spoon, a few pieces at a time so not to crowd the chicken together. Fry until chicken is a nice golden brown and internal temperature is 160 degrees. Drain pieces on paper towels, and let rest for 15 minutes to allow juices to redistribute through meat. Serve
  • 5. SUGGESTED PRESSURE COOKER METHOD: Melt shortening in pressure cooker over medium heat until temperature reaches 400 degrees. Drop chicken, a few pieces at a time, and close and lock the lid. Cook for 10 minutes after pressure builds. Release lid, remove chicken, and drain. Let rest for 15 minutes. Serve.

Time 1h10m

Yield 12 pieces

Number Of Ingredients 8

1 egg, beaten
2 cups milk
2 cups all-purpose flour
4 teaspoons salt
2 teaspoons black pepper
1 teaspoon msg (monosodium glutamate-you can use Accent Flavor Enhancer)
6 cups Crisco cooking oil
2 frying chickens, with skin, each cut into 6 pieces

Steps:

  • In a small bowl combine the egg and milk.
  • In a separate bowl, combine the remaining four dry ingredients.
  • Dip each piece of chicken into the milk mixture until fully moistened. Roll the moistened chicken into the flour mixture until completely coated.
  • Pour the oil into the pressure fryer and heat over medium heat to about 400.
  • In groups of 4 or 5, drop the chicken pieces into the oil and lock the lid into place. When the steam begins shooting through the pressure release, set the timer for 10 minutes.
  • After 10 minutes, release the pressure according to manufacturer's instruct ions, and remove the chicken to paper towels or a metal rack to drain.
  • Repeat with remaining chicken.
  • TIDBIT: If you prefer not to use MSG, you may substitute an additional 1/2 TBS. of salt. Be aware however that using MSG produces the best clone of KFC's fried chicken.

Time 1h

Number Of Ingredients 17

2 cups all-purpose flour
⅔ tablespoon salt
½ tablespoon ground thyme
½ tablespoon basil
⅓ tablespoon oregano
1 tablespoon celery salt
1 tablespoon black pepper
1 tablespoon dry mustard powder
4 tablespoon paprika
2 tablespoons garlic salt
1 tablespoon ground ginger
3 tablespoons ground white pepper
½ teaspoon Accent flavor enhancer (MSG) (optional)
1 whole chicken
1 egg (beaten)
1 cup full-fat buttermilk
vegetable oil (for frying)

Steps:

  • Cut the chicken into breast, thigh, leg, and wing pieces.
  • In a shallow bowl, mix together the flour and all of the seasonings.
  • In a large bowl, add buttermilk and beaten egg. Stir or whisk to combine.
  • Add the chicken pieces to the buttermilk mixture.
  • Soak the chicken for about 30 minutes.
  • Place a wire rack on top of a baking sheet.
  • To bread the chicken, remove the chicken from the buttermilk and shake off excess.
  • Place each piece into the flour mixture.
  • Coat the chicken fully and then shake off all of the excess flour.
  • Place the chicken onto the wire rack.
  • Bread all of the chicken. The breaded chicken should rest for about 15 minutes before frying.
  • Heat oil to 350 degrees in a deep fryer. If you do not have a deep fryer you should use a Dutch oven and fill it half full of vegetable shortening. If you are using a Dutch oven, use a thermometer to make sure the temperature is maintained at 350 degrees. If the temperature drops too low, the breading will become greasy.
  • Cook the chicken in 2 or 3 batches. The breasts and thighs will take about 15 to 18 minutes to cook. The wings and legs will take about 12 to 13 minutes to cook.
  • Drain the fried chicken on a clean wire rack on top of a baking sheet.

Tips:

  • Use a good quality chicken. For the best results, use a fresh, free-range chicken. If you're using frozen chicken, thaw it completely before cooking.
  • Season the chicken well. Use a generous amount of salt, pepper, and your favorite seasonings. This will help to flavor the chicken throughout.
  • Dredge the chicken in flour. This will help to create a crispy coating on the chicken.
  • Use enough oil. Make sure there is enough oil in the pressure cooker to cover the chicken. This will help to prevent the chicken from sticking to the pot.
  • Cook the chicken on high pressure for 8-10 minutes. This will depend on the size of the chicken pieces. Cook for longer if necessary, but be careful not to overcook the chicken.
  • Let the chicken rest before serving. This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

This pressure cooker Kentucky fried chicken recipe is a quick and easy way to make delicious, crispy chicken. The chicken is cooked in a fraction of the time it takes to fry it in a traditional fryer, and it comes out just as flavorful and juicy. This recipe is perfect for busy weeknights or when you're craving some fried chicken without all the hassle.
