Time 1h10m

Yield 12 pieces

Number Of Ingredients 8

1 egg, beaten
2 cups milk
2 cups all-purpose flour
4 teaspoons salt
2 teaspoons black pepper
1 teaspoon msg (monosodium glutamate-you can use Accent Flavor Enhancer)
6 cups Crisco cooking oil
2 frying chickens, with skin, each cut into 6 pieces

Steps:

  • In a small bowl combine the egg and milk.
  • In a separate bowl, combine the remaining four dry ingredients.
  • Dip each piece of chicken into the milk mixture until fully moistened. Roll the moistened chicken into the flour mixture until completely coated.
  • Pour the oil into the pressure fryer and heat over medium heat to about 400.
  • In groups of 4 or 5, drop the chicken pieces into the oil and lock the lid into place. When the steam begins shooting through the pressure release, set the timer for 10 minutes.
  • After 10 minutes, release the pressure according to manufacturer's instruct ions, and remove the chicken to paper towels or a metal rack to drain.
  • Repeat with remaining chicken.
  • TIDBIT: If you prefer not to use MSG, you may substitute an additional 1/2 TBS. of salt. Be aware however that using MSG produces the best clone of KFC's fried chicken.

KENTUCKY-STYLE FRIED CHICKEN

Kentucky-Style Fried Chicken image

When fast-food restaurants first started, their goal was to serve good, old-fashioned, country-style home-cooking. These days, it's the reverse...home cooks try to reproduce fast-food. A recipe such as this is what Colonel Sanders wanted to mass market as good as home-cooking when he established KFC, but this old timey recipe is *nothing* like take-out food. This is NOT a copycat recipe for Colonel Harland Sanders' world-famous Kentucky Fried Chicken. If you are in the mood for take-out chicken, please pass this recipe on by. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947 Lovely served with griddlecakes, waffles, mashed potatoes or hominy grits. Don't forget the cream gravy! Cooking time approximate

  • Just before frying, make a batter of the remaining ingredients.
  • Preheat fat or oil to 380°F.
  • Dip each piece of steamed chicken in batter and fry until a beautiful golden brown.

KFC KENTUCKY FRIED CHICKEN WITH 11 SPECIAL SEASONINGS

KFC KENTUCKY FRIED CHICKEN WITH 11 SPECIAL SEASONINGS image

A relative of Colonel Harland Sanders inherited a family photo album and found well hidden the recipe for the secret 11 spices. KFC denies it is correct, although relative says it is. It's been taste tested and compared to the KFC restaurant's chicken and it is spot on. Prep time includes soaking and sitting time of chicken.

Categories     Chicken

Time 1h25m

Yield 6 serving(s)

Number Of Ingredients 16

2 cups all-purpose flour
2/3 tablespoon salt
1/2 tablespoon dried thyme leaves
1/2 tablespoon dried basil leaves
1/3 tablespoon dried oregano leaves
1 tablespoon celery salt
1 tablespoon ground black pepper
1 tablespoon dried mustard
4 tablespoons paprika
2 tablespoons garlic salt
1 tablespoon ground ginger
3 tablespoons white pepper
1 cup buttermilk
1 egg, beaten
1 chicken, cut up, the breast pieces cut in half for more even frying
expeller-pressed canola oil

Steps:

  • Mix the flour in a bowl with all the herbs and spices; set aside.
  • Mix the buttermilk and egg together in a separate bowl until combined. Soak the chicken in the buttermilk mixture at room temperature, 20-30 minutes.
  • Remove chicken from the buttermilk, allowing excess to drip off. Dip the chicken pieces in the herb-spice-flour mixture to coat all sides, shaking off excess. Allow to sit on a rack over a baking sheet, 20 minutes.
  • Meanwhile, heat about 3 inches of the oil in a large Dutch oven (or similar heavy pot with high sides) over medium-high heat to 350 degrees. (Use a deep-frying thermometer to check the temperature.) When temperature is reached, LOWER the heat to medium to maintain it at 350.
  • Fry 3 or 4 pieces at a time, being careful not to crowd the pot. Fry until medium golden brown, turning once, 15-18 minutes. Transfer chicken pieces to a baking sheet covered with paper towels.
  • Allow the oil to return to temperature before adding more chicken. Repeat with remaining chicken.

FRIED CHICKEN.....GOOSE CREEK, KENTUCKY SOUTHERN FRIED CHICKEN

Fried Chicken.....goose Creek, Kentucky Southern Fried Chicken image

This is another one of my Grandmother's recipes from Goose Creek Kentucky, which is where my mother lived until she was 28 then moved to Sandusky, Ohio, my mother is now 84. So, that tells you how old this recipe is! Follow as described and you will not go wrong!

Provided by Timothy H.

Categories     Whole Chicken

Time 55m

Yield 4-5 serving(s)

Number Of Ingredients 10

1/2 cup milk
1 beaten egg
1 cup flour
2 teaspoons salt
1 teaspoon paprika
2 teaspoons black pepper
1/2 teaspoon sage
1/2 teaspoon tarragon
1 frying chicken, cut up
1/4 teaspoon oil or 1/4 teaspoon shortening

Steps:

  • Combine milk and egg and set aside. Combine flour, salt, paprika, pepper, sage and tarragon in a plastic bag. Add a few pieces of chicken to the dry mixture and shake to coat.
  • Dip the chicken in the egg and milk mixture. Shake the wet chicken and then coat a second time in the flour mixture. This can be baked in the oven at 375 to 400 for 45 minutes, made on the stove top, or in an electric frying pan on medium high heat.
  • Brown chicken on all sides then reduce heat to medium low. Continue cooking until chicken is tender (app. 35 - 45) minutes. Do not cover. Turn chicken several times during cooking and drain on a paper towel when done.
  • To deep fry heat three inches of oil to 365 in a deep fryer or deep saucepan and fry the chicken for 15 - 18 minutes. Drain on paper towels. Cooking uncovered reduces the moisture in the pan and keeps the chicken coating crispy. A splatter screen for the top of the pan is helpful in keeping down the mess.

1/4 cup carrots, finely diced
2 tablespoons onions, minced
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

Tips:

  • Use a heavy-bottomed pot or Dutch oven to fry the chicken. This will help maintain an even temperature and prevent the chicken from burning.

  • Season the chicken thoroughly before frying. This will help to flavor the chicken and create a crispy crust.
  • Fry the chicken in small batches to prevent the oil from becoming crowded and the chicken from becoming soggy.
