Yield 1 batch

Number Of Ingredients 6

20 ounces extra-sharp cheddar cheese, grated
2 garlic cloves, grated
7 ounces bottled dark beer, flat
1/8 teaspoon salt
Tabasco sauce
mustard powder (optional)

Steps:

  • 1. Open beer and bring to room temperature It is desirable to get most of the gas out of the beer, but don't let it get stale. You can heat it in the microwave a bit if you are in a hurry, but don't boil it. 2. Grate cheese and garlic in a food processor. 3. Switch to the mixing blade and add remaining ingredients, mixing until thoroughly blended. 4. Refridgerate overnight. This really helps the flavors develop and meld properly.

Tips:

  • Use fresh ingredients: The quality of your ingredients will greatly impact the taste of your Kentucky beer cheese. Use fresh, high-quality beer, cheese, and spices.
  • Choose the right beer: The type of beer you use will also affect the flavor of your dip. For a classic Kentucky beer cheese, use a light lager or ale. If you want a more flavorful dip, try using a darker beer, such as a stout or porter.
  • Shred your own cheese: Pre-shredded cheese contains additives that can prevent it from melting smoothly. For the best results, shred your own cheese using a box grater.
  • Don't overcook the cheese: Once you've added the cheese to the beer mixture, stir it constantly until it is melted and smooth. Do not let it boil, or the cheese will become tough and rubbery.
  • Serve immediately: Kentucky beer cheese is best served warm, so make it just before you're ready to eat it. You can keep it warm in a slow cooker or fondue pot.

Conclusion:

Kentucky beer cheese is a delicious and versatile dip that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste. Whether you like it mild or spicy, thick or thin, Kentucky beer cheese is sure to be a hit at your next party or gathering.
