VALENCIA ORANGE SUNSET PIE
I thought this up last week while feeding the baby in the middle of the night and had to try it out. It's an original recipe inspired by Key lime pie. Instead of Key lime it has Valencia orange and the crust is made with Nilla® wafers instead of graham crackers. It turned out very well. Next time I'll remember the whipped cream.

This is my Mom's famous Chess Pie. It was always one of the first to sell out at the Church bake sales. Rich and creamy and easy as can be. A dieter's nightmare - but quite the tasty treat.

Tips:
- To ensure a flaky crust, use cold butter and ice water when making the pie dough. Grating the butter also helps to create a more tender crust.
- For a smooth and creamy filling, make sure the cream cheese is at room temperature before mixing it with the other ingredients.
- If you don't have any orange zest, you can use 1 teaspoon of orange extract instead.
- Be careful not to overmix the filling, as this can cause it to become curdled.
- To prevent the pie from cracking, let it cool completely before slicing it.
- For a more intense orange flavor, use a combination of orange juice and orange zest in the filling.
- If you don't have any fresh oranges, you can use canned mandarin oranges instead.
- To make a gluten-free pie, use a gluten-free pie crust mix or make your own gluten-free pie crust.
- This pie can be made ahead of time and stored in the refrigerator for up to 3 days.
