Steps:
- Brown meat in a heavy bottomed stock pot until no longer pink. Drain.
- Return meat to pot with onion, green and jalapeno peppers and garlic. Sweat until onions are translucent.
- Add black beans, all 3 kinds of tomato and beer (I pour the beer into the tomato cans to get any "leftovers"). Add seasonings, stir.
- Bring to a boil, reduce heat and simmer for 30 minutes (or longer if you like).
- I serve mine over elbow noodles with cheese and sour cream.
Tips:
- Soak the dried beans overnight before cooking to reduce cooking time.
- Use a variety of beans to add different flavors and textures to the chili.
- Brown the beef and sausage before adding it to the chili to develop more flavor.
- Add a variety of vegetables to the chili, such as onions, peppers, carrots, and corn.
- Season the chili with chili powder, cumin, oregano, and salt and pepper to taste.
- Simmer the chili for at least 30 minutes to allow the flavors to meld.
