Time 2h15m

Yield 8 to 10 servings

Number Of Ingredients 8

2 tablespoons unsalted butter
1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Steps:

  • For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
  • Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
  • In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
  • Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.
  • For the ganache: Pour the chocolate chips into a medium bowl. In a small pot on medium heat, add the heavy cream, rum and a pinch of salt and whisk until warm. Pour over the bowl of chips and allow to sit and soak in for 2 minutes. Whisk to melt the chocolate completely.
  • Place the cake on a serving platter, pour the ganache in the center and spread gently outward over the edges. Sprinkle with the pecans and serve.

Tips:

  • Prep your Ingredients: Before you start, measure and gather all your ingredients. It will streamline the baking process and ensure you have everything you need.
  • Use Room Temperature Butter: This will help your cake batter come together more smoothly and evenly. If you forget to soften your butter, you can microwave it for a few seconds, just be careful not to melt it.
  • Cream Together Butter and Sugar: This step is crucial for creating a light and fluffy cake. Creaming the butter and sugar together until light and fluffy will incorporate air into the mixture, resulting in a tender and moist cake.
  • Add Eggs One at a Time: This will help prevent the batter from curdling. Beat each egg in until it is fully incorporated before adding the next one.
  • Use Fresh Apples: Fresh apples will give your cake the best flavor and texture. If you don't have fresh apples, you can use frozen or canned apples, but the flavor and texture may be slightly different.
  • Don't Overmix the Batter: Overmixing the batter can result in a tough and dense cake. Mix just until the ingredients are combined.
  • Bake the Cake Until a Toothpick Inserted in the Center Comes Out Clean: This is the best way to ensure that your cake is fully cooked. If the toothpick comes out with batter or crumbs attached, the cake needs to bake longer.

Conclusion:

Kelly's Apple Cocoa Cake is a delicious and moist cake that is perfect for any occasion. With its sweet apples, rich chocolate flavor, and fluffy texture, it is sure to be a hit with everyone who tries it. The combination of apples and chocolate is a classic pairing that works perfectly in this cake. The apples add a touch of sweetness and moisture, while the chocolate provides a rich and decadent flavor. The cake is also easy to make, so it is a great option for beginner bakers. Whether you are looking for a dessert to serve at a party or a sweet treat to enjoy at home, Kelly's Apple Cocoa Cake is the perfect choice.
