1 pound ground beef
1 small onion, chopped
2 garlic cloves, minced
1 cup ketchup
1 can (4 ounces) chopped green chiles
1/2 cup beef broth
1/4 cup chili sauce
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
6 hamburger buns, split
2 tablespoons butter, softened

Steps:

  • In a large skillet, cook beef and onion over medium heat for 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add garlic; cook 1-2 minutes longer. Stir in the ketchup, chiles, broth, chili sauce and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally., Meanwhile, spread cut sides of buns with butter. Place on baking sheets, buttered side up. 1 pound fresh tomatoes or one 16 ounce can of tomatoes in juice
2 tablespoons unsalted butter
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, finely chopped
1 1/2 pounds fresh Mexican chorizo, casings removed
1/2 cup Mexican beer
3 to 4 tablespoons chopped pickled jalapenos
2 tablespoons Worcestershire sauce
1 tablespoon light brown sugar
4 sandwich rolls
Sour cream and chopped fresh cilantro for serving

Steps:

  • Puree the tomatoes in a blender until smooth.
  • Heat the butter in a medium saucepan over medium high heat until melted and bubbling then stir in the onion, pepper, garlic, 1/4 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring occasionally, until onion is golden brown, 6 to 8 minutes. Add chorizo, stirring to break up lumps, and cook until browned, about 6 minutes.
