Tips:

  • Use fresh raspberries. Fresh raspberries will give your bars the best flavor. If you can't find fresh raspberries, you can use frozen raspberries that have been thawed and drained.
  • Don't overmix the batter. Overmixing the batter will make your bars tough. Mix just until the ingredients are combined.
  • Bake the bars until they are just set. The bars should be slightly soft in the center when you take them out of the oven. They will continue to set as they cool.
  • Let the bars cool completely before cutting them. This will help to prevent them from falling apart.
  • Store the bars in an airtight container at room temperature for up to 3 days. You can also freeze the bars for up to 2 months.
