I was taught how to make this recipe during a vacation in Morocco, where I was lucky enough to spend some time with the chef of a restaurant, Naima. In Morocco, people eat it straight out of the tagine with lots of bread to soak up the sauce but it also makes the best spaghetti and meatballs I've ever tasted! The key is to use the freshest, juciest tomatoes you can find. If you aren't lucky enough to have a tagine, you should be able to make this dish in a deep frying pan, as long as it has a cover. I think a non-stick pan would be best. One other thing, be careful of adding onions to this dish as they are very watery and will make the sauce runny. If you do add onions, you will probably have to let it simmer uncovered for a few minutes to reduce the sauce.

6 -8 medium tomatoes, cored and roughly chopped
1 tablespoon paprika
1 teaspoon cumin

Steps:

  • Mix all the ingredients for the sauce together in the tagine, cover and let simmer gently over a medium heat for 15 minutes, stirring occasionally.
  • Meanwhile, use your hands to mix the ingredients for the meatballs together and then roll the meat into small balls, about 1 inch round.
  • After the tomatoes have simmered for about 15 minutes, stir the sauce and add a little water if you feel it is needed.
  • Place the meatballs in the sauce.
  • Do not stir but just let them sit on top of the sauce.
  • Lower the heat, cover and cook for another 8-10 minutes. Uncover and let simmer another couple minutes if you feel the sauce needs thickening.
  • Serve with lots of crusty bread for dipping in the sauce or over spaghetti with parmesan cheese on top.
  • If you want to make these ahead of time and freeze them, leave the parsley out and place the meatballs in a rigid container like a tupperware dish before freezing.
  • To reheat, thaw in the fridge (you can do this overnight) and reheat on the stovetop over medium-low until bubbly. Add chopped parsley before serving.

2 teaspoons ground allspice
1 ½ teaspoons grated lemon zest

  • Preheat the oven to 350 degrees F (175 degrees C).

1/2 onion, grated
1/2 teaspoon salt

2 sprigs fresh coriander, finely chopped
2 sprigs flat leaf parsley, finely chopped
2 tablespoons olive oil
1/2 onion, grated

  • Add meatballs, squash, and peas to the sauce and simmer, covered, over medium-low heat for 15 minutes.
  • Pour the eggs in in a stream over everything.
  • Cover and cook just long enough to cook the egg (about 3 minutes, depending on how well done you like your eggs).
  • Serve warm over couscous, sprinkled with cumin or black pepper if desired.

ALGERIAN KEFTA (MEATBALLS)

The tomato sauce can be used for anything and the amounts of flavors can be adjusted. I like a lot of garlic and pepper. I have also found halal hamburger to be much leaner and lighter than regular. You can find it at international food stores and halal butcher shops in bigger cities. Serve this dish with a French baguette.

4 cloves garlic, minced, divided
¼ cup finely chopped onion, divided

1/2 cup grated onion
2 cloves garlic, finely minced
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh coriander
3 teaspoons finely chopped fresh mint or 1 teaspoon dried mint
2 teaspoons finely chopped fresh marjoram or 1/2 teaspoon dried marjoram
Salt and freshly ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
1 seedless cucumber, peeled and finely diced
1 large tomato, seeded and finely diced
1 green bell pepper, seeded and finely diced
1 hot Italian-style pepper, seeded and finely diced
2 cloves garlic, finely minced
3 tablespoons finely chopped fresh mint
2 tablespoons red wine vinegar
2 to 3 tablespoons olive oil

Steps:

  • In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, marjoram, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour. Soak 12 wooden skewers in water for one hour.
  • In a separate bowl combine cucumber, tomato, bell pepper, hot pepper, garlic, mint, red wine vinegar, olive oil, salt and pepper tossing to combine. Cover and let marinate at room temperature until ready to serve.
  • Preheat grill or broiler.
  • Dip hands into a bowl of water. Shape and pack about a 1/3 cup of the meat mixture into 2 sausage-shapes on a soaked wooden skewer. Repeat procedure for remaining meat and skewers.

1 small onion, grated
2 Tbsp chopped parsley
1 Tbsp chopped cilantro
1/2 tsp cumin
2 pinch cayenne

2 medium onions, chopped
2 lb tomatoes, chopped (or one 2-lb can organic chopped tomatoes)
2 garlic cloves, chopped
1 bunch parsley, chopped

1 tsp finely ground black pepper
6 medium eggs

Steps:

  • 1. Combine the ground meat, grated onion, parsley, cilantro, cumin, cayenne, and salt and pepper. Wet your hands and form the mixture into 1-inch balls.
  • 2. Heat the olive oil in a tagine, cazuela, or black iron skillet set over a flame tamer over medium heat. Sauté the meatballs in the oil until well browned on all sides. Remove the meatballs from the pan to a dish.
  • 3. To the same pan add the chopped onions, tomatoes, garlic, parsley, cumin, cinnamon, cayenne, and pepper. Cook uncovered for 30 minutes, or until the sauce has reduced to a thick gravy.
  • 4. Add the meatballs back to sauce and simmer for 10 minutes. Carefully, break the eggs into the sauce and poach them for 5 minutes, or until set. Serve at once, directly from the pan with chunks of dense, crusty bread.

MOHAMMED'S TAGINE KEFTA

Morocco is one of my favourite countries and after several trips there we now have good friends in the southern city of Zagora. It was there that I first learned how to make a tagine kefta, or in other words a Moroccan version of a meatball stew. Now I know there are almost as many versions of a tagine kefta as there are chefs. This one was taught to me by Mohammed in his kitchen in Zagora. For the oil, he used mostly olive oil but with a couple spoonfuls of vegetable oil mixed in. Also, the spices in Morocco are very fresh. Buy the best you can and add more if needed.

1/4 cup oil
1 onion, diced
4 garlic cloves, crushed
2 tablespoons fresh parsley, roughly chopped
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 teaspoons paprika

4 tomatoes, peeled and diced
500 g ground beef
4 eggs
1 jalapeno pepper

Steps:

  • Heat the oil in a tagine. If you do not have a tagine you can also use a large covered frying pan or casserole pot.
  • Put in the onion, garlic and parsley as well as the paprika, salt and pepper. Stir and cover, leaving to saute over a low heat while you prepare the meatballs.
  • Add the cumin to the meat, which helps it stay together. Mix well and form into either meatballs or flat patties.
  • After about five minutes you can add the tomatoes to the pot and continue to simmer.
  • Stir and add a bit of cold water if necessary as the tomatoes cook down and develop into a nice sauce. This should take at least 10 minutes, don't rush it.
  • When you have a good sauce, put the meat patties on top of the sauce and cover.
  • If you want to add the hot pepper you can lay it on top at this point as well.
  • Cover and let bubble away for another 10 minutes or until the beef is cooked, adding a bit of water if necessary.
  • Once the meat is cooked crack the eggs on top and let cook for another couple minutes, covered, until the eggs are done.
  • Serve hot with lots of bread to soak up the sauce.

1/4 cup walnuts
2 medium red onions; 1 grated, 1 halved and thinly sliced

1½ tbsp. paprika

4 tbsp. unsalted butter
2 tbsp. olive oil
4 cloves garlic, minced
1 large yellow onion, minced
1 tsp. crushed red chile flakes
½ tsp. ground ginger
½ tsp. crushed saffron threads
1 bay leaf
1 (28-oz.) can whole peeled tomatoes in juice, drained, crushed by hand
4 eggs
½ cup unpitted kalamata olives
¼ cup finely chopped parsley

Steps:

  • INSTRUCTIONS 1. Place lamb, 1 tbsp. cumin, 1 tbsp. paprika, and salt and pepper in a bowl, and mix until evenly combined. Form mixture into 12 balls, about 1 oz. each, and place on a plate; chill kefta until ready to use. 2. Heat butter and oil in a 6-qt. Dutch oven over medium-high heat. Add garlic and onion, and cook, stirring, until soft, about 5 minutes. Add remaining cumin and paprika, chile flakes, ginger, saffron, and bay leaf, and cook, stirring, until fragrant, about 2 minutes. Add tomatoes, and cook, stirring, until broken down and sauce is slightly reduced, about 10 minutes. Add kefta, and cook, covered, until cooked through, about 10 minutes. Crack eggs over the top, and arrange olives around eggs; cover, and continue cooking until whites are cooked and yolks are slightly runny, about 8 minutes. Uncover and sprinkle with parsley before serving.

Sauce:
2 Tb. parsley or coriander or a combination
2 onions, chopped
2 cloves garlic, minced
2 tsp paprika
1 tsp pepper
1/2 tsp. cinnamon
1/4 tsp. cayenne
1 tsp. cumin
table salt, to taste
1 kg tomatoes, peeled, seeded & chopped
To Finish:
6 eggs
For Serving:
Fresh Moroccan or French bread

Steps:

  • Form kefta mixture into 1" balls and sauté in oil in a large skillet until well browned. Set aside. Add all other ingredients except eggs and simmer, uncovered, 30 minutes, or until the sauce has reduced to a thick gravy. Add the meatballs to the sauce and continue to cook 10 to 15 minutes until heated through. Note: at this point you can load it all into a tajine and finish in the oven at 350 degrees, or over low heat on top of the stove. Break eggs into the sauce one by one. Cover and cook until eggs are poached. In the oven this will take about 10 minutes. Serve, using wedges of bread as your only utensils, and stay in your zone!

  • Add some chopped vegetables to the kefta mixture. This will help to keep the kefta moist and flavorful.
  • Be sure to season the kefta well. Use a variety of spices, such as cumin, coriander, and paprika.

  • Cook the kefta over medium heat. This will help to prevent them from burning.
