Number Of Ingredients 12

1/4 teaspoon garlic powder
2 pounds chuck roast, cut into 1-inch cubes
1/3 cup plus 3 tablespoons flour
2 tablespoons canola oil
1 large yellow onion, sliced
1/4 cup cognac or dry sherry
3 cups low-sodium beef stock
1/2 tablespoon butter
1 8 ounce package cremini mushrooms, sliced
1/2 cup sour cream
1 pound freshly cooked egg noodles, buttered and seasoned
3 tablespoons fresh chives, chopped

Steps:

  • In a large bowl, mix the garlic powder with 1 1/2 teaspoon salt and 1/4 teaspoon pepper. Pat the beef dry with paper towels and toss to coat in the garlic powder mixture. Add 1/3 cup flour and toss again. In a Dutch oven, heat the oil over medium- high. Working in batches, add the beef in a single layer, spacing 1/2 inch apart, and cook, turning, until browned on all sides, about 5 minutes per batch. Transfer to a plate. Reduce the heat to medium and add the onion. Cook, stirring often, until the onion starts to soften, about 2 minutes. Add the cognac and cook, scraping up any browned bits on the bottom of the pot, about 1 minute. Return the meat to the pot and add the stock. Bring to a simmer and reduce the heat to low. Cover and simmer, stirring occasionally, until the beef is almost tender, about 1 1/2 hours. Transfer 1 cup stock from the pot to a small bowl. Add the remaining 3 tablespoons flour and whisk until smooth. Add the mixture back to the pot. In a large skillet, melt the butter over medium heat. Add the mushrooms and cook, stirring often, until golden brown, 5 to 7 minutes. Add the mushrooms to the beef mixture. Simmer until the meat is tender, about 30 minutes longer. Stir in the sour cream; season. Place the egg noodles in a serving dish; top with the beef mixture. Garnish with the chives.

Yield 4 servings

Number Of Ingredients 18

1 pound ribeye steak, trimmed of excess fat and cut into 2-by-1/2-inch strips
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

30-MINUTE BEEF STROGANOFF RECIPE - (4.3/5)

30-Minute Beef Stroganoff Recipe - (4.3/5) image

Provided by á-52757

Number Of Ingredients 13

1 pound wide egg noodles
4 tablespoons (1/4 cup) butter, divided
1 1/2 pounds thinly-sliced steak, such as top sirloin
Salt and pepper, to taste
1 white or yellow onion, thinly sliced
4 cloves garlic, minced
1 pound mushrooms, sliced
1/2 cup dry white wine
1 1/2 cups beef broth
1 tablespoon Worcestershire sauce
3 tablespoons flour
1/2 cup plain Greek yogurt or light sour cream
Fresh parsley, chopped for garnish

Steps:

  • Cook egg noodles al dente in boiling salted water according to package instructions. (For optimal timing, I recommend actually adding the egg noodles to the boiling water at the same time that the beef broth is added to the stroganoff.) Meanwhile, as your pasta water is coming to a boil, melt the butter in a large sauté pan over medium-high heat. Add the steak in a single layer, seasoned with a few generous pinches of salt and pepper, and let it cook undisturbed for about 3 minutes to get a good sear. Flip the steak, and cook on the other side until browned, about another 3 minutes. Then remove steak from pan with a slotted spoon, and transfer to a separate plate. Set aside. If your pan is not big enough to fit all of the steak in a single layer, then add just 1 tablespoon of butter to the pan and cook half of the steak. Then repeat with a second batch. Return pan to heat and add the remaining 2 tablespoons butter. Once it has melted, add the onions and sauté for about 3 minutes. Add garlic and mushrooms, and stir to combine. Continue sautéing for an additional 5 to 7 minutes, or until the mushrooms are cooked and the onions are soft. Add the white wine, and deglaze the pan by using your cooking spoon to scrape the brown bits off the bottom of the pan. Let the mixture cook down for an additional 3 minutes. Meanwhile, in a separate bowl, whisk together the beef broth, Worcestershire sauce and flour until smooth. Pour the beef broth mixture into the pan, and stir to combine. Let the mixture simmer for 5 minutes, stirring occasionally. Then stir in the Greek yogurt (or sour cream) until combined, and then stir the cooked steak back in. Season with additional salt and pepper if needed.

Tips:

  • Use high-quality beef: Choose a lean cut of beef, such as sirloin or tenderloin, for the best flavor and texture.
  • Slice the beef thinly: This will help it cook quickly and evenly.
  • Don't overcrowd the pan: Cook the beef in batches if necessary to avoid overcrowding the pan, which can cause the beef to steam instead of sear.
  • Use a good quality broth: The broth is an important part of the flavor of beef stroganoff, so use a good quality broth, such as homemade beef broth or a low-sodium store-bought broth.
  • Don't overcook the beef: Beef stroganoff is best when the beef is cooked through but still slightly pink in the center.
  • Use fresh mushrooms: Fresh mushrooms will give the best flavor and texture to the dish.
  • Serve over egg noodles or rice: Beef stroganoff is traditionally served over egg noodles or rice.
