4 cups vegetable stock
1 can (14 ounces) Italian diced tomatoes
1 can (6 ounces) tomato paste
1 small head cabbage (about 1-1/2 pounds), shredded
4 celery ribs, chopped
2 large carrots, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons Italian seasoning
1/2 teaspoon salt
Fresh basil, optional

Steps:

  • In a 5- or 6-qt. slow cooker, whisk together stock, diced tomatoes and tomato paste. Stir in vegetables, garlic, Italian seasoning and salt. Cook, covered, on low until vegetables are tender, 6-8 hours. If desired, top with fresh basil.

Mom originally got this soup recipe from Weight Watcher's. But she added a lot of vegatables and everyone loved it. Here is her written version. Everytime she made it she varied it a little. So don't be afraid to change it to suit your tastes.

4 c beef or vegetable broth
4 c tomato juice
2 clove minced garlic
4 c chopped fresh cabbage
1 onion chopped
1 c sliced carrots
1 c green beans
1 c cauliflower florets
1/2 c sliced bell pepper
1 tsp freshly ground black pepper
red pepper flakes to taste
salt to taste
1 c zucchini

Steps:

  • 1. In a large pot bring broth and tomato juice to a boil. Reduce heat to a simmer and add all ingredients, except zucchini. Simmer until all are done. Add zucchini and cook about 4-5 minutes longer. Serve hot.
  • 2. Note: You can add broccoli, mushrooms, corn, potatoes, peas, use your imagination. This soup keeps well in the frig for several days. It can be frozen.

1 medium yellow onion, chopped

1 tsp. salt

1/2 tsp. ground fennel seeds (optional)
1 small (2-lb.) head green cabbage, chopped
4 garlic cloves, chopped
4 c. vegetable broth
2 15-oz. cans diced tomatoes, undrained
2 bay leaves
2 15-oz. cans white beans, drained and rinsed
Chopped parsley, for garnish

Steps:

  • In a large Dutch oven, heat the olive oil over medium heat. Add the onion, carrot, salt, pepper, and fennel seeds, if using. Cook, stirring occasionally, until the vegetables are slightly softened, 5 to 7 minutes. Add the cabbage and the garlic to the pan and stir to combine. Cook, stirring occasionally, until the cabbage is slightly softened, about 5 minutes.
  • Add the broth, tomatoes, and bay leaves. Bring to a simmer; cover, and cook until the cabbage is tender, about 15 minutes. Stir in the white beans and simmer, uncovered, for 5 minutes. Remove the bay leaves.
  • Serve in soup bowls topped with parsley.
