KAREN'S TORTELLINI SOUP

Karen's Tortellini Soup image

I originally found this on AllRecipes.com and modified it to meet with my family's preferences. My daughter, who is one of the fussiest people I know, even likes this (although she does manage to avoid getting any chunks of vegetables in her bowl). We like it hot, but you can cool the heat by using sweet sausage and not adding the dried chilis. If you can find them use the mini tortellini.

  • Use a variety of vegetables: This will add flavor and texture to the soup. Some good choices include carrots, celery, onions, leeks, and garlic.
  • Don't overcook the tortellini: They should be cooked through but still slightly al dente.
  • Add some herbs and spices: This will help to enhance the flavor of the soup. Some good choices include basil, oregano, thyme, rosemary, and red pepper flakes.
  • Use a good quality broth: This will make a big difference in the flavor of the soup. If you can, use homemade broth, but store-bought broth is also fine.
