1 tablespoon olive oil

Steps:

  • Soak kale leaves in a large bowl of water until dirt and sand begin to fall to the bottom, about 2 minutes. Lift kale from the bowl without drying the leaves and immediately remove and discard stems. Chop the kale leaves into 1-inch pieces.

½ cup water
½ cup dried cranberries
1 tablespoon honey
16 ounces kale, stems removed and discarded, leaves torn into bite-sized pieces
1 red onion, chopped
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1 teaspoon minced garlic
¾ teaspoon salt
½ teaspoon ground black pepper
5 ounces feta cheese, crumbled
½ cup toasted walnuts, chopped

Steps:

  • Combine water and cranberries in a small saucepan and bring to a boil. Reduce heat and simmer until cranberries are soft and liquid is syrupy, 5 to 10 minutes. Stir in honey, remove from the heat, and allow to cool.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1/2 pound hot bulk Italian sausage
1/2 pound sweet bulk Italian sausage
3 cloves garlic, chopped
1 medium red onion, thinly sliced
3/4 cup whole berry cranberry sauce
3/4 cup dry red wine, eyeball it
1 1/4 pounds kale, stems removed and chopped
Black pepper
1/8 to 1/4 teaspoon nutmeg, to your taste
3/4 cup Romano cheese, 3 generous handfuls, plus some to pass at the table

  • Boil a large pot of water for the pasta. Add rigatoni and salt and cook to al dente or with a bite to it. Drain and reserve 2 ladles of pasta water.
