Time 15m

Yield 4 servings

Number Of Ingredients 11

6 slices bacon
1 1/2 pounds kale, patted dry
1/3 cup toasted nuts, such as walnuts, pecans or almonds
1/3 cup store-bought roasted chickpeas
1/3 cup freshly grated Parmesan cheese
Olive oil, if needed

Add the shallots and cook for 1 minute, stirring constantly. Whisk in the vinegar, brown sugar and mustard, scraping up any brown bits from the bottom of the skillet. Remove the vinaigrette from the heat and season with salt and pepper.
