Number Of Ingredients 2

1 bunch kale, washed
Vegetable or bean soup

Steps:

  • Cut kale into 2-by-3-inch pieces.
  • Stir into simmering vegetable or bean soup. Cook until tender, 5 to 6 minutes.

Tips:

  • Choose the right kale: Curly kale and Lacinato kale (also known as dinosaur kale or Tuscan kale) are the best choices for kale soup. They have a hearty texture and hold up well to cooking.
  • Wash the kale thoroughly: Kale can be gritty, so be sure to wash it thoroughly before using it. Rinse the leaves under cold water and shake them dry.
  • Remove the kale stems: The kale stems are tough and fibrous, so it's best to remove them before cooking. Simply hold the kale leaf at the base of the stem and pull the stem down and away from the leaf.
  • Chop the kale: Once the kale is washed and stemmed, chop it into bite-sized pieces.
  • Use a variety of vegetables: In addition to kale, you can add a variety of other vegetables to your soup, such as carrots, celery, onions, potatoes, and tomatoes. This will give your soup more flavor and nutrition.
  • Don't overcook the kale: Kale cooks quickly, so be careful not to overcook it. Overcooked kale will become mushy and lose its flavor.
  • Season the soup to taste: Once the soup is cooked, season it to taste with salt, pepper, and other spices. You can also add a squeeze of lemon juice or a dollop of yogurt for extra flavor.

Conclusion:

Kale soup is a healthy and delicious way to get your daily dose of greens. It's also a great way to use up leftover vegetables. With a few simple tips, you can make a kale soup that the whole family will love. So next time you're looking for a healthy and filling meal, give kale soup a try!
