CREAMY KALE AND PASTA WITH SWEET SAUSAGE

Creamy Kale and Pasta with Sweet Sausage image

I came up with this pasta recipe to incorporate kale into our diet. My husband had thirds the first night I made it and he is not a fan of kale (or anything green). Even the kids loved it! Enjoy.

Yield 6

Number Of Ingredients 13

10 ounces gemelli pasta
1 tablespoon olive oil
3 (3.5 ounce) links sweet Italian sausage, casings removed
1 tomato, diced
½ onion, diced
2 cloves garlic, minced
½ cup low-sodium chicken broth
½ bunch kale, thick stems removed, leaves finely chopped
salt and freshly ground black pepper to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 ¾ cups milk
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gemelli at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add sausage and cook, stirring occasionally, until golden brown and cooked through, about 5 minutes. Add tomato, onion, and garlic; saute for 3 minutes. Pour in chicken broth and scrape the bottom of the pan to deglaze browned bits. Add kale and cook, tossing occasionally, until wilted and tender, about 5 minutes. Season with salt and pepper.
  • While kale is cooking, reserve 1/2 cup pasta water, and drain pasta. Melt butter in a medium saucepan over medium heat. Add flour and cook, stirring constantly with a whisk, for 1 minute. Pour in milk slowly while whisking vigorously to smooth lumps. Season with salt and pepper and continue to cook until mixture begins to bubble and thicken, 7 to 10 minutes. Add reserved pasta water to reach desired consistency as needed. Remove sauce from heat.
  • Pour sauce into sausage mixture, add drained pasta, and toss to evenly coat. Serve warm topped with Parmesan cheese.

Categories     Penne

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

3 tablespoons olive oil
1/2 lb hot Italian turkey sausage, casings discarded and sausage crumbled
1 garlic clove, minced
1 small onion, diced
1 lb kale, tough stems and center ribs discarded and leaves coarsely chopped
1/2 lb penne
2/3 cup reduced-sodium chicken broth
1/2 cup parmesan cheese, grated

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Add garlic, onion and sausage, breaking up any lumps with a spoon, until browned, 5 to 7 minutes.
  • Meanwhile, blanch kale in a 6-quart pot of boiling salted water, uncovered, 5 minutes. Remove kale with a large sieve and drain. Return cooking water in pot to a boil, then cook pasta in boiling water, uncovered, until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • While pasta cooks, add kale to sausage in skillet and sauté, stirring frequently, until just tender, about 5 minutes. Add broth, stirring and scraping up any brown bits from bottom of skillet, then add pasta and 1/2 cup reserved cooking water to skillet, tossing until combined. Stir in cheese and thin with additional cooking water if desired.
  • Serve immediately, with additional cheese on the side.

Tips:

  • Prep Ingredients: Before starting, measure and chop all ingredients to save time and ensure even cooking.
  • Cook Sausage Thoroughly: Cook the sausage over medium heat until browned and cooked through. This helps release its flavor and prevents undercooked meat.
  • Use Fresh Kale: Fresh kale provides the best flavor and texture for this dish. If using curly kale, remove the tough stems before chopping.
  • Don't Overcook the Kale: Add the kale to the pan and cook just until wilted, about 2-3 minutes. Overcooking can make the kale tough and bitter.
  • Make a Smooth Sauce: Use a whisk or immersion blender to create a smooth and creamy sauce. This will help incorporate all the ingredients and prevent lumps.
  • Season to Taste: Always taste the sauce and adjust seasonings as needed. Add more salt, pepper, or lemon juice to your preference.
  • Serve Immediately: Serve the kale and sausage penne with lemon cream sauce while it's hot. This ensures the pasta is al dente and the flavors are at their best.

Conclusion:

This kale and sausage penne with lemon cream sauce is a delightful pasta dish that combines the savory flavors of sausage, the freshness of kale, and the tangy creaminess of the lemon sauce. It's a quick and easy meal that's perfect for busy weeknights or casual gatherings. With its vibrant colors and delicious taste, this dish is sure to be a hit among family and friends. So gather your ingredients, put on your apron, and let's cook up a storm!
