Time 10m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 tablespoons butter, cut into small pieces
4 cloves garlic, chopped
24 small crimini mushrooms, wiped clean, halved
1 bunch kale, trimmed, stems removed and chopped
1/4 cup Marsala or other sherry
Salt and pepper

Steps:

  • Heat a medium skillet with extra-virgin olive oil and butter over medium to medium-high heat. When fat is hot, add garlic and mushrooms and place a lid which is too small for the skillet down into the pan, pressing and smothering the mushrooms. Cook 7 to 8 minutes, stirring once, then wilt the kale into the pan, turning it with tongs to combine with mushrooms. Smother the greens for 1 to 2 minutes, then deglaze the pan with Marsala and season the mixture with salt and pepper, to taste.

Categories     dinner, side dish

Time 1h20m

Yield 6 servings.

Number Of Ingredients 12

1 bunch kale, any type, stemmed and washed thoroughly in 2 changes of water (more if necessary)
1 tablespoon extra virgin olive oil
1/2 pound mushrooms, sliced
1 teaspoon fresh thyme leaves, coarsely chopped
1 to 2 garlic cloves (optional)
Salt and freshly ground pepper
1/2 pound stale bread, preferably whole-grain, sliced about 1 inch thick
2 ounces Gruyère cheese, grated (1/2 cup)
1 ounce Parmesan cheese, grated (1/4 cup)
Salt and freshly ground pepper
4 eggs
2 cups low-fat milk

Steps:

  • Bring a medium or large pot of water to a boil, salt generously and add the kale. Cook 2 to 3 minutes, until tender but still colorful. Transfer to a bowl of cold water, then drain and squeeze out excess water. Chop coarsely and set aside.
  • If using garlic, cut one of the garlic cloves in half and rub the slices of bread with the cut side. Then mince all of the garlic. Cut the bread into 1-inch squares.
  • Heat the oil over medium-high heat in a heavy, wide skillet and add the mushrooms. Cook, stirring often, until they begin to soften, and add the thyme, garlic and salt and pepper to taste. Continue to cook for another minute or two, until the mushrooms are tender and fragrant. Stir in the kale, toss together and remove from the heat.
  • Preheat the oven to 350 degrees. Oil or butter a 2-quart baking dish, soufflé dish or gratin. In a large bowl, combine the bread cubes, the mushrooms and kale, and the two cheeses and toss together. Transfer to the prepared baking dish.
  • Beat together the eggs and milk. Add salt to taste and a few twists of the pepper mill, and pour over the bread mixture. Let sit for 5 to 10 minutes before baking so that the bread can absorb some of the liquid.
  • Place in the oven and bake 40 to 50 minutes, until puffed and browned. Remove from the oven and serve hot or warm.

Yield 8 servings

Number Of Ingredients 12

1/4 cup extra-virgin olive oil
1 tsp. cumin seeds
1/2 tsp. coriander seeds
1/4 tsp. crushed red pepper flakes
2 medium onions, halved, sliced lengthwise into 1/4"-thick strips
1 lb. mixed wild or crimini mushrooms, sliced 1/4" thick
1 pint cherry or grape tomatoes
2 Tbsp. red or white wine vinegar
1 1/2 tsp. kosher salt
1 bunch curly kale, stems removed, torn into small pieces
8 large eggs
Flaky sea salt, chopped parsley and/or cilantro, Aleppo-style pepper (optional), and lemon wedges (for serving)

Steps:

  • Heat oil in a 12" skillet over medium-high. Crush cumin, coriander, and red pepper with a mortar and pestle or heavy skillet. Add to hot oil in skillet and stir to coat. Add onions and mushrooms and cook, stirring often, until softened and lightly browned, 6-8 minutes. Add tomatoes, vinegar, and 1 tsp. kosher salt and stir to combine. Add kale, cover skillet, and cook, uncovering and tossing occasionally, until kale is wilted, 4-6 minutes. Season with remaining 1/2 tsp. kosher salt.
  • Make 8 indentations in vegetable mixture. Carefully crack an egg into each. Cover skillet and cook over medium-low heat, rotating skillet on burner halfway through to ensure even cooking, until egg whites are opaque and just set, 8-10 minutes. Top with sea salt, herbs, and Aleppo-style pepper (if using). Squeeze lemon juice over.

Tips:

  • Select Hearty Kale: Choose fresh, dark green kale with sturdy leaves for the best flavor and texture.
  • Prep the Kale Properly: Remove the tough stems from the kale leaves before cooking to ensure a more tender result.
  • Use a Variety of Mushrooms: Feel free to mix and match different types of mushrooms, such as shiitake, cremini, or oyster mushrooms, for a more complex flavor.
  • Don't Overcook the Vegetables: Cook the kale and mushrooms just until tender to retain their vibrant color and nutrients.
  • Add Some Crunch: Incorporate toasted nuts or seeds, such as almonds, walnuts, or sunflower seeds, for an extra layer of texture and flavor.
  • Season Generously: Don't be afraid to season the dish well with salt, pepper, and other herbs and spices to enhance the flavors.

Conclusion:

Kale and mushroom side dish is a delicious, nutritious, and versatile dish that can complement a wide range of main courses. With its simple yet flavorful ingredients, this recipe provides a healthy and satisfying addition to any meal. Whether you're following a vegan, vegetarian, or flexitarian diet, this dish offers a satisfying and flavorful option that can easily be customized to your preferences.
