MIXED NUT BRITTLE RECIPE

Mixed Nut Brittle Recipe image

Nut brittle is easy to make, travels well, and actually improves in flavor with age, making it the ideal treat to give as a gift or to fill your own candy dish at home. Some trace the history of peanut brittle to a resourceful Southern housewife who, in the late 1800s, added roasted peanuts and baking soda to a failed batch of taffy, creating brittle instead. Whatever its origins are, nut brittle became a much-loved holiday tradition, not only for its tempting flavor but also for how easy it is to prepare, even for a novice candymaker. Brittle that's made with peanuts grew even more popular in the 1900s as farmers in Virginia and Georgia increased their production of the nut. We added that other Southern powerhouse-pecans-to this version, as well as a handful or two of cashews and whole almonds for a tasty change of pace.

Time 1h30m

Yield 2 pounds

Number Of Ingredients 10

2 1/4 cups granulated sugar
1/2 cup water
1/2 cup light corn syrup
1/2 teaspoon fine sea salt
6 tablespoons butter, cut into pieces, plus more for baking sheet
2 cups mixed nuts (such as toasted pecan halves; lightly salted, toasted pistachios; lightly salted, toasted almonds; cashews; or pumpkin seeds)
1 cup salted, dry-roasted peanuts
2 teaspoons baking soda
1 1/2 teaspoons vanilla extract
2 teaspoons flaky finishing salt (such as fleur de sel)

Steps:

  • Rub an 18- x 13-inch baking sheet lightly with butter, or coat with cooking spray. Set aside.
  • Stir together sugar, water, corn syrup, and fine sea salt in a heavy, 2-quart saucepan; attach a candy thermometer to side of pan. Place pan over medium-high, and cook, occasionally stirring gently with a wooden spoon, until sugar dissolves and mixture boils. Once sugar syrup is clear and thickened, cook, undisturbed, until the thermometer reaches 230˚F to 235˚F (soft-ball stage), 5 to 7 minutes.
  • Stir in butter, and continue cooking over medium-high, stirring occasionally, until butter melts, syrup starts to caramelize, and the thermometer reaches 300˚F to 305˚F (hard-crack stage), 6 to 8 minutes. Immediately remove pan from heat; working very quickly, vigorously stir in the mixed nuts and peanuts just until completely coated in caramelized syrup.
  • Immediately stir in baking soda and vanilla. Once the baking soda hits the hot, caramelized syrup, it will lighten and start to get foamy. As soon as ingredients are combined, pour hot candy onto prepared baking sheet. Using the back of a wooden spoon, quickly and gently spread mixture, pushing into a fairly thin layer that covers most of baking sheet. (A few holes are fine. It doesn't need to be a solid sheet of candy.) Quickly sprinkle entire surface with flaky finishing salt. Let stand until brittle hardens, about 1 hour. Break into pieces. Store brittle in an airtight container or a ziplock plastic bag for up to 2 weeks.

KAHLUA CRYSTALLIZED NUT BRITTLE

Kahlua Crystallized Nut Brittle image

Mixed nut, coffee flavored brittle. I got a Kahlua Recipe Booklet with a purchase of Kahlua over 15 years ago. I give this as a gift to friends at Christmas. This is not a recipe to make around small children (candy is boiling hot) and you must follow the directions exactly. Be prepared to spend time stirring the candy to hard crack stage. (20-30 minutes non-stop)

Categories     Candy

Time 50m

Yield 4 cups

Number Of Ingredients 5

3 cups whole mixed nuts (cashews, almonds, walnuts, pecans and macadamias)
3/4 cup granulated sugar
1/2 cup Kahlua
1 tablespoon corn syrup
2 teaspoons butter

Steps:

  • Heat oven 275 degrees, place nuts in shallow pan and heat 20 minutes, mixing after 10. (If using macadamia nuts and walnuts add them only for the last 10 minutes they are oily and can burn).
  • In a large saucepan (you will be mixing the nuts in this at the end) combine sugar, Kahlua, corn syrup and butter using a wooden spoon stirring constantly and scraping sides to get all sugar crystals melted. Sugar mixture will need to boil at least 15 minutes before you need to insert candy thermometer, keep stirring until (300 degrees F- hard-crack stage) It is very important to get all the way to 300 or the candy will be gritty and soft.
  • Take off heat, pour in nuts, stirring quickly then pour mixture out onto large cookie sheet lightly sprayed with 'pam'. Scraping all candy out and gently spreading out candy with wooden spoon. Let cool until you can handle and break into smaller chunks. Store in airtight tin.

KAHLUA PECANS

I originally made these pecans for a salad and everyone wanted the recipe for just the nuts! I now make them as Christmas gifts in small cellophane bags with a pretty bow in a gift basket. It also makes a nice hostess gift!

Time 55m

Number Of Ingredients 6

1 egg white
3 Tbsp kahlua
1 c sugar
1/2 tsp salt
1/4 tsp cinnamon
4 c pecans

Steps:

  • 1. 1. Preheat oven to 325 degrees. 2. Prepare a large jelly roll pan by lining it with foil and spraying with no-stick spray. 3. Combine the sugar, salt and cinnamon in a bowl, set aside. Combine the egg white and the liqueur in a large bowl, stir well with a whisk. Add the pecans, and stir well. Add sugar mixture to bowl, and stir well to coat. 4. Spread onto prepared jelly roll pan in a single layer. 5. Bake for 20-25 minutes or until pecans are lightly toasted and browned, stirring every 10 minutes. It will look like the coating is coming off (it's not). Stir from the outside in to keep pecans on the edges from burning, and watch closely since sugar burns easily. 6. Remove from oven, transfer immediately to wax paper to cool. Pecans keep for two weeks in an airtight container. 7. Makes 4 cups.

  • Be careful when adding the nuts and chocolate: The sugar mixture will be very hot, so be careful not to burn yourself. Add the nuts and chocolate a little bit at a time, stirring constantly.
