This is an easy cake to make, and yet, it looks and tastes elegant! I plan to try this with the Amaretto and the new dark chocolate/raspberry swirled chocolate chips, for Valentine's Day.

- Coat Bundt pan with cooking spray.
- Mix all other ingredients; spoon into pan.

- Sprinkle gelatin over Marsala in medium metal bowl. Let stand 5 minutes to soften. Whisk in egg yolks and 1/2 cup sugar. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until candy thermometer registers 165°F, about 5 minutes. Remove bowl from over water. Gradually add mascarpone, whisking vigorously until well blended. Beat whipping cream with remaining 1/4 cup sugar in large bowl to peaks. Fold into mascarpone mixture.
- Whisk 1 cup hot water, Kahlúa, and espresso powder in another medium bowl to blend. Dip half of Champagne biscuits, 1 at a time, into coffee mixture. Place enough dipped biscuits over bottom of 9-inch-diameter springform pan to cover, cutting biscuits to fit if necessary. Pour half of mascarpone mousse over ladyfingers. Dip remaining biscuits into coffee mixture, 1 at a time, and arrange atop mousse. Spoon remaining mascarpone mixture over. Sift 2 tablespoons cocoa powder over. Cover with plastic wrap and refrigerate overnight. Release pan sides. Cut into wedges and serve with Amaretto Ice Cream.

I switched out some ingredients and added Kahlua and other liquors to make these cookies. The result is delicious. These will add a festive touch to any meal ending. Enjoy!

- 1. melt the 1/4 c butter and the chocolate chips in a double boiler, or stainless steel bowl over boiling water. Stir until just melted.
- 2. whisk the eggs Liquors and the 3 TB of sugar together. Add the nuts to egg mixture.blend well.
- 3. In another bowl sift the baking powder,salt,and flour together. Set aside.
- 4. whisk the melted chocolate in to the egg mixture. Stir in flour a little at a time in to the mixture, and blend well. Dough will be like brownie batter. Refrigerate dough until it stiffens up enough to make cookie balls. The larger the bowl the better. It will cool quicker.
- 5. make balls out of cookie dough about an inch wide. Roll in powdered sugar,and place on greased cookie sheet. Bake at 350 degree's until centers crack (about 10 minutes ) while baking I put dough back in fridge to keep iit cold. Remove cookies from oven and cool. Leave on pan to cool. Do not over bake. Centers should still be soft and a bit gooey.
- 6. Remove cookies to a plate or wire rack. You may dust with additional sifted powdered sugar if desired. . Serve and enjoy!
