¾ cup pecans
2 ripe peaches
4 cups baby spinach, rinsed and dried
¼ cup poppyseed salad dressing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken. Remove from oven and set aside.
  • Peel peaches (if desired) and slice into bite-sized segments. Combine peaches, spinach and pecans in a large bowl. Toss with dressing until evenly coated, adding a little additional dressing, if necessary.

4 -6 cups spinach, washed, stems removed and roughly chopped
2 peaches (sliced or cut into smaller chunks)
1 small red onion
1/2 cup toasted pine nuts
2 tablespoons grainy mustard
1/4 cup balsamic vinegar
6 tablespoons extra virgin olive oil
1 1/2 teaspoons minced garlic
1 tablespoon sugar
cracked black pepper, to taste

Steps:

  • Make the vinaigrette: Using a whisk, combine mustard, vinegar, olive oil, garlic and sugar in a small bowl, and set aside.
  • Either in a large serving bowl or in 4 individual serving bowls, arrange spinach, onion, peaches and pine nuts.
  • Drizzle with vinaigrette just before serving and sprinkle with cracked black pepper.

Since "Peach Season" is here, I was Inspired to Used up the Fresh fruits of the Season, and the greens from my garden. Note: any Combination of Salad greens, works well Hope You'll enjoy, the taste test. Tip: Nectarines, and Apricots work well in this salad, even a few Strawberries delight the eyes, or the combination of.

JUST A PEACHY DRESSING, PLACE IN BLENDER, BLEND WELL
1/4 C - peach necter
2 Tbs - cider vinegar
2 Tbs - plain yogurt
2 tsp - sugar or splenda
1/2 tsp - garlic pdr
1/2 tsp - salt
- pepper to taste
2 - peaches, fresh peeled, pitted, and chopped
1/2-3/4 C - crisco, olive oil. . . . . while processing, pour oil slowly in a steady stream process til blended and creamy looking.
SALAD
8 C - baby spinach
8 C - torn romain. bibb or head lettuce, or any mix of salad greens or combination of .
top - with sprinkled or crumbled bacon or bacon bits
4 - large peaches, peeled, 2 sliced and 2 chopped (more if you prefer)
- optional: blueberries sprinkled over the top

Steps:

  • MIx dressing above, Blending the first 9 ingredients for the Dressing, as Directed above. Chill at least 1 hr.
  • Mix Washed and chilled salad greens adding peaches, chopped and slices, Toss well Drizzle Dressing Over Greens. Sprinkle with Bacon, and Top with Blueberries, Optional. . . . ENJOY!!!! Refreshing to your taste Buds.
